BBQ Tofu Tacos and Mexicali Slaw

BBQ Tofu Tacos by Ashlee Piper from The Little Foxes

Easy and tasty are the names of the game here, and these tacos are both (even if using bottled BBQ sauce and dressing and pre-made corn tortillas) and incredibly versatile. You can dress them up fancy or just take them as is and dig in. Oh, and did I mention they’re mad economical? If you have some of these ingredients on hand, this whole meal will cost you around $12 bucks, which is about the going rate for a top-shelf margarita in Chicago. Jamocha Silk Pie

Vegan chocolate, coconut, tofu mousse pie detail

This concept is not original – you can’t throw a stone in vegan blogland and not find a tofu and cocoa-type pie. But the ingredients are what give it a uniquely rich flavor profile and texture. With the blend of chocolate and a hint of coffee, one slice will sate you for the day. And it’s easy and pretty enough to throw together for last-minute company. This takes only about 10 minutes to make, plus about 30 minutes to firm up in the freezer — if you can wait that long. Sweet Vegan Ricotta

sweet vegan ricotta

Here’s something a little creamy, a little sweet, and easy to pair with nearly anything. Behold, shockingly simple, pretty, sumptuous sweet vegan ricotta. This spread pairs beautifully when slathered on crackers or toast, crowns fruit in a gorgeous way, adds oomph to baking recipes, and is a creamy, dreamy topping for oatmeal and granola. I like mine nestled between french toast and marmalade. more→
