It all started with a leftover baked sweet potato that I put in the food processor with some other ingredients including nut butter, pumpkin pie spice, applesauce, coconut flour, almond milk, and dried currants. The consistency definitely ended up being more like a pudding. I served the final product with chopped pecans and a splash of almond milk for a wonderful dessert. Healthy? Chocolate? Yes, please! This smoothie uses homemade walnut milk and even adds two cups of frozen broccoli whose flavor or color cannot be detected at all. I tried a few different variations until I realized that, unless the melon is frozen, the texture is more of a slushy than a smoothie. But, to be sure, it is a very delicious slushy! The cool thing is that the pineapple and the watermelon combined are sweet enough so no extra sweetness is needed. The watermelon flavor is so pronounced and pure that it fuels my determination to never stoop to eating any “watermelon-flavored” creations again!
