Thai Red Curry with Winter Squash, Mushrooms, and Broccoli

Pressure-Cooked Thai Red Curry

This is a perfect winter dish. You’ll be wowed by the flavor of this fusion-style dish, where winter squash pairs very well with Thai curry. The mushrooms add earthiness and a lot of texture, while the broccoli (or greens) adds freshness. Pear and Toasted Walnut Salad with Cranberry Vinaigrette

Pear, Walnut, and Cranberry Salad

This salad has flavors that speak eloquently of autumn —pears, walnuts, bitter greens and cranberries. You can substitute other dried fruit if you like. It’s a simple enough salad to serve for every day, yet dressed up enough to serve as a first course for company meals. It’s a welcome addition to Thanksgiving and Christmas menus, as well. Double the recipe for a larger crowd. Contributed by Jill Nussinow, MS, RD, adapted from The Veggie Queen™: Vegetables Get the Royal Treatment.* more→

Curried Pear and Squash Soup

Juicy pears on table

Even though squash is sweet, it still tastes great paired with pear. If you like, you can add a pinch of cayenne for contrast, in addition to the lemon juice in the recipe.
