Watermelon “Pizza”

Watermelon "Pizza"

This is the best (and healthiest) “pizza” ever! Kids love making this fun recipe, and you may just find that you do too. Although the recipe calls for specific amounts and ingredients that go nicely together, the truth is it’s highly flexible, and you can easily omit, swap, or add your kids’ favorite fruits and ingredients. Or just put all the ingredients on the table to create a “pizza factory,” and let the kids assemble their own pizza—a wonderful way to get children excited about vibrantly healthy food. Reprinted with permission from Superfood Snacks © 2015 by Julie Morris, Sterling Publishing Co., Inc. Avocado Nori Crostini

Avocado Nori Crostini by Julie Morris

There is only one thing that is better than creamy avocado on toast, and that’s creamy avocado on toast with just a teeny touch of buttery coconut oil. And there’s only one thing better than THAT . . . which, my friend, is this recipe. While it is pretty epic fare for entertaining, you can also prepare it family-style if you slather the whole piece of toast with avocado goodness (transforming it into the best-ever half-sandwich), instead of quartering it into bite-size pieces. This makes 16 crostini. Reprinted with permission from Superfood Snacks © 2015 by Julie Morris, Sterling Publishing Co., Inc. Photos by Oliver Barth. more→

Spinach Pear Juice

Spinach Pear Living Juice from Julie Morris

Spinach is always such a wallflower at the juice flavor party. And while it’s quite obvious from its appearance that this juice contains greens, I’d challenge anyone to a blindfold taste test—pear is very clearly the dominant flavor here. The riper the pear, the better the flavor. Reprinted with permission from Superfood Juices: 100 Delicious, Energizing & Nutrient-Dense Recipes* © 2014 by Julie Morris, Sterling Publishing Co., Inc. Believe it or not, basil actually enhances the natural flavor of watermelon. You can choose to either blend the soaked and plumped goji berries into the final drink, or leave them whole as juicy little morsels. Reprinted with permission from Superfood Juices: 100 Delicious, Energizing & Nutrient-Dense Recipes* © 2014 by Julie Morris, Sterling Publishing Co., Inc. Cookie Dough Smoothie

cookie dough smoothie by Julie Morris from Superfood SmoothiesEven though there’s no real cookie dough in this smoothie, it sure tastes like it! Caramel-like dates, rich and nutty pecans, and cacoa nibs with their hint of chocolate blend perfectly with lucuma powder — which has a natural “cookie-like” flavor — making this smoothie all kinds of fabulous. Reprinted with permission from Superfood Smoothies * © 2013 by Julie Morris, Sterling Publishing Co. Mint Chip Smoothie

mintchipsmoothieTucked beneath a very convincing ice cream-like flavor, a wealth of beneficial spinach awaits you in this smoothie. It’s so good it almost makes a person wonder why spinach isn’t used in all minty treats. I love how the cacao nibs provide a bit of dark-chocolate crunch without being overpowering. Reprinted with permission from Superfood Smoothies© 2013 by Julie Morris, Sterling Publishing Co., Inc. Acai (With Beet) Smoothie

acai beet smoothie by julie morris from superfood smoothiesThe benefits of beets are huge: They help to purify the blood, enhance circulation, and support the kidneys . . . and that’s just the beginning. Unfortunately, not everyone likes beets. This recipe leans on the inherent sweetness and creaminess of roasted beets, but is balanced with citrus and acai flavors. A delicious and unique healthy treat. Reprinted with permission from Superfood Smoothies© 2013 by Julie Morris, Sterling Publishing Co., Inc. Photography by Julie Morris. more→
