Vegan-ease by Laura Theodore — a review
There are lots of great vegan cookbooks out there these days, most beautiful, well-written, and sumptuously photographed. But very often, the recipes are complex — not necessarily difficult, but certainly taking more time than most people have on weeknights, and with ingredient lists that can be intimidating to would-be vegans — or even very busy vegans. In her latest book, Laura Theodore (aka The Jazzy Vegetarian) has created an antidote to this trend. Vegan-Ease: An Easy Guide to Enjoying a Plant-Based Diet is all about simplicity in the kitchen, while maintaining that sense of fun and elegance that defines Laura’s edible creations.
Yet, the recipes and photos in Vegan-ease are every bit as luscious as those in any more complicated, chef-produced volumes. There’s no austerity here, just gentle encouragement, colorful meals, and delectable (and healthy) desserts. “Vegan-ease” almost sounds like a new language, and indeed, Laura takes time to define it:
- EASE-Y to find ingredients that can be purchased at your local supermarket or health food store.
- EASE-Y to prepare dishes that save time in the kitchen and provide tasty and nutritious meals for you and your family.
- EASE-Y on the wallet menus that often incorporate local and seasonal produce along with cost-saving vegan protein sources.

- EASE-Y to eat foods tat will please your palate and satisfy deliciously!
Most of the recipes in this book can be made in less than 30 minutes and have less than 10 (often less than 7 ingredients. What could be better for the health-conscious, time-crunched cook? If you have shelves full of cookbooks but not one that’s your favorite go-to, Vegan-ease can change that. It abounds with fun appetizers, hearty breakfasts, mouthwatering quick breads and muffins, simple soups, fast pastas, pizzas, and other main dishes, and to finish, what Laura calls “Easiest. Desserts. Ever.”
I tried several recipes from the book, and they didn’t disappoint. Maple-Banana Oat Muffins are flourless and make a great grab-and-go snack. My book group went crazy for the Giant Cookie-Coffee Cake. Mac ’n Peas with Creamy Butternut Squash Sauce made a classic comfort food much healthier. And being a potato and ketchup fan, Spicy Baked Home Fries were right up my alley, and so, so good.
Anyone familiar with my own cookbooks knows that I’m much more inclined to simpler recipes. That makes them more foolproof, and it gives readers the freedom to add their own personal tweaks and touches. In that regard, Laura is a cook after my own heart. Much as she and I love to be in the kitchen, we also love to be out of it, working on our other creative endeavors. We also share a love for the earth and compassion for all animals. Her work comes from a truly genuine place. If you’re already familiar with The Jazzy Vegetarian books, you’ll find lots new to explore in Vegan-ease.
