Baked Delicate Delicata

By · On Nov 22, 2011 · Comments (0)

Delicata squash is delicious any way you slice it. Delicata, acorn, and butternut are three of my favorite varieties of squash. For delicata, wash it, cut it in half from top to bottom, then scoop out the seeds from each half with a spoon and slice into half-inch pieces. This squash is delicious simply steamed in a little water. Contributed by Meg Wolff, from A Life in Balance, ©2010, Down East Books.

Smoky Cheddar Cheez

By · On Nov 11, 2011 · Comments (4)

You can make this vegan cheese-y appetizer as a spread in no time, or let it set up into slices. I like it both ways and hope that you will, too. This is good with sliced fresh baguette, or serve it with whole-grain or gluten-free crackers or crispbreads. It’s also quite nice served with chunks of red bell pepper and peeled celery cut into short sections. Grapes served in small bunches on the side add a nice flavor balance. Recipe adapted from Vegan Holiday Kitchen by Nava Atlas. Read More→

Italian Eggplant Casserole - Slow CookerThis is my healthy, gluten-free substitute for eggplant parmigiana. Not frying the eggplant saves time and calories, and both of those can be at a premium. Its very saucy and perfect over pasta. Recipe from The Vegan Slow Cooker by Kathy Hester, reprinted by permission of the author. Photo by Cara Lyons of Cara’s Cravings. Read More→

Miso-Butternut Squash Soup from Vegan ExpressOnce you’ve got the squash baked, this Japanese-style soup comes together quickly, and is as pleasing to the eye as it is to the palate.
