Here’s a deceptively rich-tasting version of scalloped potatoes. It’s made with a creamy sauce of silken tofu or white beans (canellini or Great Northern), minus the bother of making a flour-thickened white sauce. Simple and comforting, it’s a great everyday dish, especially if you have your potatoes prepared beforehand. Serve with a green veggie and colorful salad. more→

Here’s a quick and clever way to make potato fries without a lot of peeling and cutting. Fingerling potatoes, if you are not familiar with them, are small potatoes with a long, narrow shape—hence their name. They come in several varieties; I like to use organic golden fingerlings like Russian Banana. These are ready, from start to finish, in about 20 minutes. more→
