Potatoes, Easy and Elegant
Here’s a quick and clever way to make potato fries without a lot of peeling and cutting. Fingerling potatoes, if you are not familiar with them, are small potatoes with a long, narrow shape—hence their name. They come in several varieties; I like to use organic golden fingerlings like Russian Banana. These are ready, from start to finish, in about 20 minutes. more→
Mashed potatoes, the classic comforting side dish, is made even better with the addition of sweet potato. It adds extra flavor, color, nutrition. This is great on its own, but for an even cozier dish, consider making Easy Mushroom Gravy for topping individual portions.
Here’s a casserole of potatoes and tofu, laced with green chilies —hot or mild, as you prefer. Both comforting and invigorating, this is good served with refried beans or other simple bean dish, and a colorful salad. more→
Here’s a simple way to bring out great flavor in roasted potatoes. Roasted potatoes are always a treat no matter what; the olives add little bursts of flavor in every bite, and rosemary adds a distinctive flavor. more→
This terrific alternative to the classic mashed potatoes with peas on the side eliminates chasing peas around the plate. Leftovers, if there are any, are good in other recipes such as Potato Balls, Dave’s Stuffed Mushrooms, or they can be fried for breakfast. Potatoes, green beans, and quinoa make a refreshing trio in a cold summer soup. Serve with fresh corn on the cob and a colorful salad or grilled veggies. Though I think this soup tastes best chilled, if you can’t wait, it’s good warm, too!
