Squash, corn, and sweet potato combine to make a hearty chowder that’s especially perfect for fall. Though this admittedly involves a bit of preparation, none of it is difficult. It’s a great soup to make on a quiet Sunday — you’ll be happy to come home to it during the week! It’s delicious with fresh cornbread. It’s also the kind of soup you won’t mind making an extra effort to make for holiday meals like Thanksgiving. more→

Delicata squash is delicious any way you slice it. Delicata, acorn, and butternut are three of my favorite varieties of squash. For delicata, wash it, cut it in half from top to bottom, then scoop out the seeds from each half with a spoon and slice into half-inch pieces. This squash is delicious simply steamed in a little water. Contributed by Meg Wolff, from A Life in Balance,* ©2010, Down East Books.
Squash and pecans make for a memorable duo when combined in this Creole-inspired recipe. The savory nut, bread, and rice stuffing, contrasted with the smooth sweetness of the butternut squash, makes a perfect holiday main or side dish.
A dairy- and tomato-free lasagna, this one featuring butternut squash and mixed mushrooms is offbeat, for sure, but really delicious. Featuring a creamy tofu sauce, it’s a luscious dish great for special occasion fall meals. It also makes a terrific vegan main dish for Thanksgiving dinner. more→
