Cedar’s Foods: Mediterranean Salads and Hummus
A few weeks ago, during that gloomy period just after Thanksgiving but before the unofficial start of the holiday season, when night falls at 4:30 pm, I was the recipient of a box of sunshine. Well, a bit of culinary sunshine, to be more precise. A box filled with various prepared salads and hummus varieties from Cedar’s Foods was delivered to my door.
The arrival of this array of treats couldn’t have been more timely. In the middle of a very hectic weekday afternoon, I got a call from my brothers and their wives; having cut short a trip due to inclement weather, they wanted to stop by on their way back home. I opened the box I’d just received from Cedar’s and thought, “Instant dinner!” I did have the wherewithal to make a pot of soup for this bone-chilling day, and the salads and spreads I’d just received seemed like just the thing to round out this spontaneous meal.
I set out the four Mediterranean salads I’d been sent: Cedar’s Black Bean Salad; Lentil Mediterranean Salad; Aegean Edamame Salad; Tabouleh Salad, plus two varieties of their Hummus,and some fresh pita, along with a pot of Potage Polenta from my book, Vegan Soups and Hearty Stews for All Seasons. Then I proceeded to neglect my guests, as I had a grueling deadline to meet. They didn’t seem to notice, as they were too busy devouring the food. Everyone was impressed with the salads, which taste quite fresh, and the unusual hummus varieties. And let me tell you, this is a group that knows a thing or two about Mediterranean food.
Cedar’s salads, dips, wraps, and snacks are the kinds of heathy, convenient foods that would be just as welcome as part of an emergency dinner as they would at a relaxed and leisurely party. Just tried Cedar Hummus for the first time and it was awful. It tasted like paste with some garlic in it. Do you realize they put guar gum in it as a thickener? The “thickener” is supposed to be chick peas, not guar gum. Ick!
