No-Bake Apple Tart

ApplesHere is a nice no-bake apple dessert treat to serve your family or guests. Recipe contributed by Rich Heiser.

Serves: 6

  • 3 cups chopped pecans
  • 3 1/2 cups raisins
  • 2 large sweet apples (we suggest Gala)
  • 3 teaspoons agave nectar
  • 3 teaspoons ground cinnamon
  • 1 teaspoon allspice
  • 1/4 teaspoon ground cloves
  • 2 teaspoons lemon juice

Place 3 cups of chopped pecans in a blender or food processor and process until finely ground. Remove and set aside.

Add 2 1/2 cups of the raisins to the blender, and process until raisins are ground.

Reintroduce the pecans to the blender and process until raisin and pecan mixture combines thoroughly. It may even ball up into a dough like mixture, depending on your equipment.

Press the mixture into a 9 inch glass pie dish or any other pie pan of your choosing.

Peel, core and slice the 2 apples into thin slices. Combine the apples, remaining cup of raisins, agave, cinnamon, cloves, lemon juice, and allspice in a microwave-safe container and microwave for 1.5 minutes on High.

Transfer the apple mixture into the tart crust. Distribute evenly. Place tart in the freezer for at least 30 minutes and remove about 20 or 30 minutes prior to serving.

* The reason for placing the apple mixture in the microwave is not to cook the apples but rather to soften them a little. If you have a dehydrator that will work even better as long as you plan ahead.
