Juicy Pineapple-Cucumber Smoothie
A cleansing fruit and veggie duo combine in a light, ultra-refreshing cross between a smoothie and a juice. This goes down easy, so I’ve devised this recipe to yield about a quart. Share it, or sip it down slowly when you need a day to have more liquid and less food.
Makes: 1 quart plus
- 1 medium pineapple, peel removed, cored, and cut into chunks
- 1 medium cucumber, peeled or not, as desired (leave peel only if unwaxed)
- 8 ounces coconut water (or just use water)
- 1/4 cup lemon juice
- Agave nectar, as needed
Combine all the ingredients in a high-speed blender and process until completely smooth. Add a little agave nectar for extra sweetness as desired. Serve at room temperature or over ice.

I’ve made this one a couple of times and I love the cucumber and pineapple flavor combo but I’m not a huge smoothie fan. Instead of blending the fruit, I use the Raaw Foods cucumber/pineapple juice available at Whole Foods (www.raawfoods.com) It’s additive free and though it’s not raw, it is only “lightly” processed. Anyway, the recipe tastes great with it and clean up is a bit faster.
I just made this smoothie minus the sweetner. It was fabulous.
