I tried a few different variations until I realized that, unless the melon is frozen, the texture is more of a slushy than a smoothie. But, to be sure, it is a very delicious slushy! The cool thing is that the pineapple and the watermelon combined are sweet enough so no extra sweetness is needed. This smoothie brings back happy memories of eating gobs of pistachio ice cream with my cousins at Jones Beach. Pistachio was always one of my favorite flavors. The texture is smooth and thick like an old-fashioned milk shake. Pistachios contain large amounts of antioxidants, beta-carotene, vitamin E and lutein compared to other nuts.
