^[1]Nachos are a great addition to any party, but with all of the other chip and dip options that are usually on the same table, you might find yourself looking to have a little bit more variety. Irish nachos are just as easy to make as traditional nachos, just replace the tortilla chips with fries, sliced potatoes, or in this recipe, sweet potato fries. If you love nachos as much as I do, but have never seen a vegan nacho option at your parties and get-togethers, this recipe is what you’ve been waiting for.
Serves: 12 or more

• 1 package Smart Ground® Original
• 1 1/2 teaspoons chili powder
• 1 teaspoon onion powder
• 1 can fat-free refried beans
• 1 4-ounce can diced green chilies (optional)
• 3/4 cup taco sauce
• 2 cups vegan shredded cheese blend
• 1 cup vegan sour cream
• 1/3 cup sliced green onions (scallions)
• 1 tablespoon olive oil
• 1 20- to 24-ounce bag sweet potato fries

Cook sweet potato fries until almost crispy according to directions on the bag. Remember the fries will cook more with the toppings so do not overcook them.

Crumble Smart Ground® Original into a large bowl. Add chili powder and onion powder. Set aside. 

In a 13 x 9 x 2 baking dish* coated with olive oil, layer the fries on the very bottom, then beans, Smart Ground Original mixture, optional green chilies, taco sauce, and 1 1/2 c cheese.

Cover and bake at 350° for 10-20 minutes or until cheese melts and bubbles around the edges. 

Cool for five minutes. Spread sour cream on top; sprinkle with green onions and remaining cheese. Enjoy!

*Using a baking dish will make a more casserole-like nachos. Try something with lower sides for more traditional nachos.
