Seitan Recipes

Spicy Homemade Vegan Sausage

Greens with seitan and vegan sausage

Everyone who tries this homemade vegan sausage recipe prefer these links to commercial brands—and they’re a lot less expensive, too. Preparing the mixture in the food processor and baking the sausages in the oven are both time-savers. Once baked, they’re ready to brown up in a skillet to enjoy as is or in other recipes. Seitan Peppersteak

Seitan Pepperstea

Here’s the Chinese restaurant classic, peppersteak, in a hearty, “beefy” vegan version using seitan in place of the real thing. It’s better this way! I enjoy this served with noodles, but serve with brown rice, or even just on its own, if you prefer. To complete the meal, serve with steamed broccoli, and a simple slaw or a platter of raw veggies. BBQ-Flavored Seitan and Avocado Wraps

BBQ-flavored seitan and avocado wraps

These easy BBQ-flavored seitan and avocado wraps are a longtime family favorite. Barbecue-flavored seitan contrasts deliciously with cool avocado and leafy greens. Like most wraps, it’s a salad disguised as a sandwich. They go well with just about anything — soups, potatoes, fresh corn, pasta salad, salsa and chips — any way you serve it, it’s a great meal. Need only one wrap? Cut the recipe in half. Or to serve four, double the recipe. You can substitute tempeh or tofu for the seitan. Photos by Hannah Kaminsky. more→

Seitan, Mushroom, and Onion Stir-Fry

Seitan Mushroom Onion stir-fry

This simple seitan stir-fry is great choice for hearty appetites, and a warming dish for nippy evenings. Lots of red onion adds great flavor, and the mushrooms bolster the “meaty” quality of the seitan. Photos by Evan Atlas. more→

Seitan Gyros

Seitan gyros

Here is a kinder, gentler version of gyros, the Greek meat-on-a-pita classic. Seitan makes a superb stand-in, and the shortcut creamy cucumber dressing gives the entire enterprise a refreshing zip. For heartier appetites, a serving would be 2 gyros; one is filling enough for moderate appetites or when other dishes are to be served. Seitan “Meat and Potatoes” Stew

Seitan and Potato Stew

Seitan gives this stew a “meaty” texture, and combined with potatoes and carrots becomes a comforting, hearty dish. Prepared seitan is readily available in most natural foods stores as well as a growing number of well-stocked supermarkets, but you can make your own as well (see the link in the ingredient list). “Buddhist’s Delight” (Chinese-Style Vegetable Stew)

Buddhist's Delight recipe

Inspired by a favorite vegetarian Chinese restaurant dish, Buddhist’s Delight stew is enhanced with protein-packed seitan. Gluten-free? Substitute an equivalent amount of tofu for the seitan. For an everyday meal, serve with Tri-Color Coleslaw. To make it a feast, add Scallion Pancakes or simply serve veggie spring rolls from your natural food store’s frozen food section. Cornmeal-Crusted Seitan

Cornmeal-Crusted Seitan

If you want to dress seitan up just a bit, sautéing it until crisp in a golden cornmeal crust does the job nicely. Serve with Easy Mushroom Gravy or Quick Vegan Barbecue Sauce (or your favorite natural brand), green veggies, and a simple salad or slaw.

Seitan and Mushrooms in Paprika Cream

Seitan and mushrooms

Who says it’s not easy to be a vegan in Paris? I beg to differ. There are a number of fantastic vegetarian and vegan eateries all over the city of lights. Tender seitan, far better than any I’ve had in the U.S., is a common offering. This simple dish of seitan and mushrooms in a sweet paprika “cream” sauce is an amalgam of seitan dishes I enjoyed at Le Potager du Marais and Les Cinq Saveurs D’Ananda. Photos by Evan Atlas.
