Raw Organic Lotus Forbidden Black Rice Recipe

Contributed by Raw Chef Bryan Au: This is the most amazing, delicious, and super nutritious raw organic vegan recipe to come out in a long time. In the raw food world there hasn’t really been a “raw rice” available, so this one is very special and unique while being affordable, at only $3.89-$3.99 for a bag at your local Whole Foods Market, health food store or online . So far this is the ONLY rice I can soak overnight and the next day is sprouted, soft, tastes cooked and is out of this world delicious!
The story goes, in ancient times the Emperor of China discovered this special black rice and found out it had super nutrients and effects. Not wanting any competition and all the special powers to himself he made it “forbidden” for anyone else to eat it but him. But now, thanks to Lotus Foods we can all enjoy it and in the most organic, all natural, fair trade and sustainable ways possible because they are Award Winning and they care about our health and planet! It truly is a super food and has as many antioxidants as blueberries and is regarded as a longevity super food in China that can prevent cancer and other diseases.
Serves: 3 to 4
In a large glass or ceramic mixing bowl pour in entire package of Lotus Foods Organic Forbidden Rice. Or you can use 1/2 of the package but it is so good you will want to make the entire bag—trust me on this! After pouring the rice into the bowl fill with pure water until it covers the rice, plus about 1 inch. Then cover with a plate or to keep it clean and protected as it soaks. You can do this during the day but I like to do it right before I go to sleep at night then when I wake up it is finished and done and ready to eat!
After soaking it in a clean dry place covered and soaking in pure water for 10 to 12 hours you want to drain the water and can use it to water your plants or reuse the water in some way but do not use the water in food or drinks. You can also rinse the rice a little with new clean water then drain it fully so it is drier and not so wet. Then simply drizzle olive oil, sprinkle with your favorite herbs, spices and seasonings. I like to keep it simple with chopped cilantro, some kelp and cayenne pepper with a squeeze of organic lime, celtic sea salt is optional. Mix with wooden spoon and serve!
Variations: Some of my friends like to add chopped organic jalapeno or raw organic peas, or mango and avocado which is really gourmet and delicious too like a Mexican or Spanish Rice! Use your imagination and get creative food is very fun that way. But this is the ONLY rice I have found that you can do this and it tastes cooked, it is really amazing you will love this!
