Summer produce season is in full swing, so let’s take full advantage of it in this week’s plant-based menus. Case in point — good, fresh green beans are still one of the veggies that have a short season (at other times, they can be tough and stringy). Crispy Polenta Fries

Making these addictive fries using polenta (cooked cornmeal) is super easy. You need to plan ahead to allow the cooked polenta to completely solidify in the fridge — a few hours or overnight. Use as an appetizer or side dish. Polenta is completely gluten-free, and though it’s a traditional Italian food, it goes with any kind of meal. Polenta with a Variety of Toppings

Polenta with Spinach and Tomatoes

Polenta is the Italian name for a basic cornmeal mush that can be served on its own or with a variety of toppings (see variations after recipe box). It’s a comforting, naturally gluten-free grain dish that kids and picky eaters will love!
