2cupsfresh peachesabout 3 large peaches, peeled and cubed
¼cupred onionfinely chopped
¼cupcilantroleaves and tender stems, finely chopped
2tbspjalapeñosminced—and de-seeded and de-veined if you don't want it very spicy
2ozpimientosdiced and drained if from a jar
2tsplime zest
1limejuiced, to taste
salt and freshly ground pepperto taste
Instructions
In a medium bowl, combine the peaches, onions, cilantro, jalapeños, pimientos, and lime zest.
Add the lime juice and season with salt and pepper.
Let the salsa sit at room temperature for 10 minutes before serving to allow the flavors to blend, or cover and chill for up to 24 hours until ready to use.
