Ingredients

black beans
from a can, drained and rinsed

cup
lightly cooked fresh organic corn kernels
use organic frozen corn kernels when fresh are unavailable

cup
ripe tomatoes
finely diced

red onion
or yellow onion; minced
½
cup
red bell pepper
or green bell pepper, or a combination; finely chopped

lime
juiced; to taste

small hot fresh chili pepper
seeded and minced; to taste

cup
fresh cilantro
or basil for a summery flavor; finely chopped

ground cumin
¼
tsp
dried oregano
Instructions
Combine all the ingredients in a serving container and mix well.
Cover and refrigerate for at least an hour to allow the flavors to blend.
Serve and enjoy!
