A cozy dairy-free pumpkin spice latte made on the stovetop with real pumpkin, warm spices and a touch of vegan white chocolate. No espresso machine needed.
¾cupalmond milkor oat milk, up to 1½ cups for a creamier latte
2barsvegan white chocolateabout 3.5 oz each, optional
dairy-free whipped creamfor topping
cinnamon sticksfor garnish (optional)
Instructions
Optional mug rims: melt 1½ of the white chocolate bars in a microwave-safe bowl in 10-second bursts, stirring between each, until smooth. Dip the rim of each mug about an inch into the chocolate and set aside to harden.
Pour the brewed coffee into a heavy saucepan. Add the pumpkin puree, cinnamon, pumpkin pie spice, sugar and the remaining ½ white chocolate bar.
Whisk over medium heat until the coffee begins to bubble around the edges and the chocolate has melted, about 5 minutes. Reduce the heat to low to keep warm.
Warm the almond milk and froth it if you like.
Fill each mug about three-quarters full with the spiced coffee, then top up with the milk.
Finish with dairy-free whipped cream, a sprinkle of cinnamon and a cinnamon stick. Serve right away.
