This tofu aloo gobi is a quick, one-pan cauliflower and potato curry with cubes of firm tofu standing in for paneer. Garam masala, cumin, turmeric, and fresh ginger give it plenty of warm flavor. Serves 4 to 6.
Heat the oil in a wide skillet or stir-fry pan over medium-low heat. Add the garlic and ginger and sauté for 1 to 2 minutes, until the garlic is fragrant and just turning golden.
Add the potatoes and the water. Cover, bring to a simmer, then cook over medium heat for 5 minutes.
Add the cauliflower, then sprinkle in the garam masala, cumin, turmeric, and dry mustard. Stir well to coat the vegetables, cover, and simmer gently for 5 minutes, until the cauliflower starts to soften.
Stir in the tofu, tomatoes, and peas. Cook uncovered over medium-low heat for about 10 minutes, stirring occasionally, until the potatoes and cauliflower are tender and most of the liquid has cooked off. If the pan gets dry before the vegetables are done, add a splash of water.
Stir in the cilantro, if using, season with salt to taste, and serve.
Notes
No tofu? Simply leave it out, or stir in a cup or so of cooked chickpeas instead. For firmer, golden tofu: press the tofu for 15 minutes, then brown the cubes in a little oil before you start and add them in step 4.Storage: Leftovers keep in a covered container in the refrigerator for up to 4 days.
