Pecans, almonds and walnuts baked in a maple-cinnamon glaze with chili powder and cayenne until glossy and crisp. An easy vegan, gluten-free snack for parties, gifting or everyday munching.
Preheat the oven to 325°F (165°C). Line a rimmed baking sheet with parchment paper or lightly oiled foil.
In a medium bowl, whisk together the maple syrup, coconut sugar, cinnamon, chili powder, cayenne, ginger, nutmeg and salt until smooth.
Add the pecans, almonds and walnuts and stir until every nut is evenly coated.
Spread the nuts in a single layer on the prepared baking sheet and scrape any glaze left in the bowl over the top.
Bake for 15 to 18 minutes, stirring once halfway through, until the glaze is bubbling all over and the nuts are fragrant and a shade darker. Watch closely toward the end, since the maple glaze can scorch quickly.
Let the nuts cool completely on the pan, about 20 minutes; the glaze firms up and turns crisp as it cools. Break apart any clusters.
Toss with the dried cranberries, if using, and transfer to a serving bowl or an airtight container.
Notes

Add the cranberries just before serving if storing for more than a few days.
