    Blackberry Watermelon Popsicles (Vegan!)

    Juicy watermelon meets tart blackberries in these bold, berry-bright popsicles that are basically summer on a stick. Just three ingredients, no added sugar, and all the refreshing vibes.

    These Blackberry Watermelon Popsicles are the summer refresher you didn't know you needed-juicy, berry-bright, and laced with a splash of lime that makes the whole thing pop (pun intended). They're as pretty as they are cooling, and yes, they'll disappear faster than you can say "did someone say popsicles?"

    These Blackberry Watermelon Popsicles are:

    • A little fancy-looking but so easy to make.
    • A creative way to use up summer fruit before it turns on you!

    Key Ingredients & Substitutions

    Watermelon: Go for seedless and ripe. This is your sweet, juicy base that makes up most of the volume and flavor.

    Blackberries: Fresh is best, but frozen works if you thaw them first. They add a tangy contrast and deep color that gives the popsicles their wow factor. Use raspberries instead of blackberries for a slightly sweeter, softer flavor.

    Lime Juice: This adds brightness and a little edge. If you're out of lime, lemon will do-but the zing from lime really ties it all together.

    Helpful Tips

    Swirl it like you mean it: For that pretty marbled effect, pour a bit of blackberry puree into the molds first, then swirl it around before adding the watermelon mixture.

    Want it sweeter? A teaspoon or two of maple syrup or agave can help tame extra-tart berries.

    Don't overfill: Leave a little space at the top of each mold for expansion as they freeze.

    Freeze time matters: These need at least 6 hours in the freezer-overnight is even better for a clean release.

    Unmolding made easy: Run the molds under warm water for 10-15 seconds to loosen, then pull gently to release the popsicles.

    Variations

    Creamy twist: Add a bit of full-fat coconut milk to the watermelon puree for a creamy, tropical vibe.

    Berry blend: Mix in strawberries or blueberries with the blackberries for a layered fruit flavor.

    Herbal hint: Blend in a few mint or basil leaves with the watermelon for a refreshing herbal note.

    Citrus upgrade: Add zest from the lime (or lemon) for extra zing and a little texture.

    Equipment

    • popsicle molds

    Ingredients

    • 4 cups watermelon diced, seedless or deseeded
    • 2 tablespoons lime juice
    • 1 cup blackberries rinsed and stemmed
    US Customary - Metric

    Instructions

    • Process watermelon with 1 tablespoons of lime juice in the food processor. Pulse until smooth. Set aside in a bowl.
    • Process blackberries with 1 tablespoon lime juice. Process until smooth & set aside in separate bowl.
    • Pour a few tablespoons of the blackberry mixture into the molds, swirling around the liquid on all sides of the mold so that the blackberry mixes with the watermelon.
    • Pour in watermelon mixture & fill to the top. Set the handle in the popsicle & repeat for the other 5 molds.
    • Set in the freezer overnight.

    Notes

    The number of popsicles made with this recipe will vary depending on the size of your popsicle molds. I made 6 popsicles.
