Asian-Flavored Quinoa Wraps
Once you have the cooked quinoa on hand, these delectable Asian-flavored wraps come together very quickly. Recipe and photo contributed by Wendy Polisi, reprinted from Cooking Quinoa.
- 2 cups cooked quinoa
- 3 tablespoons Vegenaise
- 2 tablespoons rice vinegar
- 1 tablespoon hot sauce of your choice,
more or less to taste - 1 scallion, thinly sliced
- 4 large wraps (10 inch)
- 3 cups arugula
- 1 avocado, diced
- 1 carrot, grated
- Reduced sodium soy sauce (optional)
Combine quinoa, veganaise, rice vinegar, hot sauce and scallions. Place in a whole grain wrap and top with 3/4 cup arugula and a quarter of the carrots. Drizzle with soy sauce if desired.
Roll and cut in half. Repeat with remaining wraps. Serve with additional soy sauce if desired.
