Mocha Banana Frozen Soft Serve
When you taste this, you won’t believe that this frozen treat is made almost purely of banana. The velvety texture and mild chocolate-coffee flavor will have you hooked. Best of all, you don’t need an ice cream machine to make it, though a food processor or blender is a must! Freezing bananas that are getting almost too ripe is a great thing to do, for treats like this, or for using in smoothies.
- 4 medium very ripe bananas
- 1/2 cup vegan semi-sweet chocolate chips
- 2 teaspoons instant coffee granules (preferably organic;
use decaf if you plan on eating this in the evening!)
- 2 tablespoons nondairy milk (like almond) or coconut creamer
- Sliced or slivered almonds for topping, optional
Break the bananas into small chunks and freeze for at least 24 hours.
Combine the chocolate chips, coffee, and nondairy milk in a heatproof bowl and microwave for 45 seconds, or until melted. Whisk until smooth. Or, you can heat these three ingredients in the top of a double boiler over low heat until the chocolate melts, then whisk together.
Combine the chocolate sauce with the bananas in a food processor or blender (if you’d like, save a little of the sauce to use as a topping. Transfer to a small, sturdy plastic food storage bag). Blend or process until smooth.
Transfer the mixture to a container and freeze for an hour or two. Scoop into bowls to serve. If you’ve reserved part of the chocolate sauce, snip a tiny piece off one of the bottom corners. Garnish with the sauce, and add a sprinkling of almonds, if you’d like.
