    Vegan Cinnamon Roll in a Mug

    Craving a warm cinnamon roll, but don't have hours to spend in the kitchen? Enter this Vegan Cinnamon Roll in a Mug. You can whip up a warm, gooey cinnamon bun in just minutes. It's the ultimate vegan dessert for one!

    You may have seen these cinnamon bun mug cakes making the rounds on TikTok over the last few months. So of course I had to try my hand at creating a vegan version of this tasty little treat. And I am totally in love with the results! 

    This Vegan Cinnamon Roll in a Mug is: 

    • Quick and easy to make in just minutes!

    • Perfect for just one or two people.
    • 100% Vegan and Vegetarian friendly.

    Tips & Variations

    Make it gluten free. 

    For this recipe I utilized regular all-purpose flour, however, for individuals following a gluten-free diet, almond or coconut flour can be an excellent substitute. Alternatively, you can also replace it with your preferred 1:1 gluten-free baking flour.

    Add mix-ins. 

    Add new flavors or mix-ins for a completely new spin on the cinnamon roll. Some ideas include:

    • Dark chocolate chips for a chocolate-chip cinnamon roll.
    • Add a dash of cocoa powder for a chocolate cinnamon roll.
    • Chopped pecans or walnuts for extra crunch.
    • Shredded coconut.
    • Raisins or dried cherries for a fruity spin.
    • Maple or agave syrup.

    Plant based milk. 

    I used oat milk for my cinnamon bun mug cake. But you can substitute any vegan friendly milk of your choice. Cashew, almond, or soy milk would all work fine.

    Use organic sugar. 

    Note that I have specified organic sugar in the recipe. This is because many brands of non-organic sugar are not actually vegan! If this is important to you, choosing brands marked organic will ensure no bone char was used in the processing.

    Ingredients

    Ingredients dough:

    • 9 tbsp unbleached all-purpose flour
    • 4 tbsp plant based milk I used oat milk
    • 1 ½ tbsp organic cane sugar
    • 1 tbsp coconut oil
    • ½ tsp baking powder
    • ¼ tsp salt
    • ¾ tsp cinnamon

    Ingredients frosting:

    • 4 tbsp organic powdered sugar
    • 1 tsp plant based milk I used oat milk

    Instructions

    • Start by making the dough. In a small bowl whisk together the flour, baking powder, salt and 4 tbsp of vegan milk. Mix until you get a dough ball. You can add a little bit more flour if it is stick, or a little bit more milk, if it seems dry.
    • Put some flour on the surface of your counter and roll out the dough in a square, about the height of your mug.
    • Brush some coconut oil on one side and then sprinkle the sugar and cinnamon over the dough. Roll up the dough.
    • Brush the remaining coconut oil on the inside of your mug. Place the rolled dough in the mug.
    • Put the mug in the microwave for 50 seconds. If it seems too wet, you can add a few more seconds (in increments of 5 seconds), until no longer wet.
    • In a separate small bowl mix together the frosting ingredients, the powdered sugar and vegan milk, and pour this over the cinnamon bun in the mug, and let it sit for 30 seconds before serving.

      How can you tell when it is cooked? Mine was like rubber with sugar all over the place.
