    Awesome Almond Chia Pudding

    Please enjoy this super easy 5 minute chia pudding as a salute to super easy healthy recipes made in a blender! This is one of go-to quick desserts if somebody comes over for dinner at the last minute or I feel like a quick treat. I LOVE this almond version that tastes like marzipan. But you could add vanilla extract and stir in a mashed banana and a teaspoon of cinnamon, or stir through berries or other fruit. Recipe and photo contributed by Tess Masters, from The Blender Girl, reprinted by permission.

    Serves: 2

    • 2 cups unsweetened almond milk (strained if homemade)
    • ¼ cup pure maple syrup
    • 1 teaspoon natural almond extract
    • Pinch Celtic sea salt
    • ¼ cup + 1 tablespoon chia seeds
    • ⅓ cup sliced raw almonds, plus more for garnish

    Throw the almond milk, maple syrup, almond extract, and salt into your blender and blast on high for a few seconds until combined.

    Transfer this mixture to a glass bowl or large jar and whisk in the chia seeds until well combined. Chill in the fridge for at least 3 hours stirring occasionally to evenly distribute the chia seeds.

    Once chilled, stir the mixture very well again to evenly distribute the chia seeds, and then stir in the chopped almonds. Transfer the mixture to 2 serving glasses or bowls and top with chopped almonds. A sprinkle of cinnamon is delicious as well.

    Nutritional Information: 247 calories; 12g fat; 182.5mg sodium; 33g carbs; 4.5g fiber; 27g sugar; 5.3g protein

      would it work with flax seed?

      Scott, that's a good question. For flaxseed to gel, it needs to be ground (chia doesn't). Its flavor isn't quite as neutral as chia's. If you'd like to give it a try, I'd say to cut the recipe in half (or even a quarter) and see how it works. Let us know!
