    Carrot Maca Juice

    I think this juice tastes a little bit like a toasted marshmallow.     Makes 16 ounces

    • 16 carrots
    • 1 tablespoon maca powder
    • 2 tablespoons raw cashews

    Juice the carrots. Pour the fresh juice into a blender, add the maca and cashews, and blend until smooth. Press through a fine-mesh sieve for a silkier texture.

    Variation: Blend with a generous amount of ice and a touch of stevia to create a delicious, low-calorie slushie.

    Nutritional Information (per 8 ounces): 303 calories; 7g fat; 345.2mg sodium; 1,653mg potassium; 56.2g carbs; 16.1g fiber; 23.4g sugar; 8.4g protein
