    Baked Apples (Gluten-Free)

    Baked apples are a luscious breakfast or brunch treat that's good for you as well as easy to make. And with crushed almonds rather than the traditional breadcrumbs, it's gluten-free as well. Recipe contributed by Caryn Hartglass, founder of Responsible Eating and Living.

    Serves: 4

    • 2 tablespoons almonds
    • 2 tablespoons raisins
    • ½ teaspoon cinnamon
    • ½ teaspoon ground nutmeg
    • 4 large organic apples, cored
    • Nondairy yogurt for serving, optional

    Chop the almonds and mix with the raisins and spices.

    Place the apples in a baking dish and add a small amount of water, about ½ inch in depth.

    Fill the cored centers with the almond/raisin mixture. Bake at 350º F until apples are soft, about 40-50 minutes. Test occasionally.

    Remove from oven. Plate each apple with some of remaining juice in the baking dish and serve with nondairy yogurt if desired.

      I got out the ingredients to make this today and do not have any nutmeg! Can I use Allspice or should I use pumpkin pie spices?

      Hi Norma, I think pumpkin pie spice would be great for this; go for it!
