This green delight — a smoothie featuring the green goodness of spinach and sprouts with the sweetness of pineapple — offers ultimate refreshment, and the coconut water is immensely hydrating. It’s great over a couple of pieces of ice if the day is very warm. Bottoms up!
Makes about two 12-ounce servings
- 1 heaping cup pineapple chunks (preferably fresh)
- 1 or 2 handfuls clean baby spinach
- Handful of green sprouts (such as sweet pea shoots)
- 12 ounces coconut water
- 2 tablespoons hemp seeds, optional (but highly recommended!)
Combine all the ingredients in a high-speed blender and process until completely smooth. Serve at once.

May 6, 2011 at 1:13 pmMo, I think Vita-Mix is the machine of choice for green smoothie enthusiasts and raw-foodies; that’s what I have. I have heard good things about Blendtec as well but don’t personally know anyone who has used it.

April 22, 2013 at 9:48 amGreen Star Juicer by Tribest is for Wheatgrass. Its the only one that I know of that extracts the rough fiber from the wheatgrass. That’s the one we use.

December 29, 2013 at 7:02 pmVita Mix does mix fine but it is so tall, I hate not being able to get it properly scraped out when pureeing, like applesauce. I wish that the container was shorter, wider. Does anyone know if they have corrected this with a container that is easier to clean out? Even if it’s smaller that the tall one that came with?
I do have the thingie that came with that you can insert through the top to stir while in use but this is no help in getting all the contents out.

December 29, 2013 at 10:24 pmSandra, you do make a very good point. I don’t like to make anything thicker than an average smoothie or pureed soup in the Vita-Mix. For anything with more heft, I just use the food processor. If there is something that’s a bit thicker than what I originally intended, I pour out what I can easily, then for the rest I add a little more liquid, turn it on again, and pour the thinner contents out and mix with the previous batch. I realize that sounds a little confusing but hope you know what I mean!
