Healthy, Easy Vegan Kale Recipes

kale saladWhether you like raw kale salads, sautéed dishes and stews, or green smoothies, you’ll find these and other easy vegan kale recipes to choose from here. Kale is super-nutritious (and a great source of calcium for the vegan diet) as well as versatile — there aren’t many greens that would work equally well in a warming stew, a raw salad, and a refreshing beverage. Like its cousin, collard greens, kale is a cruciferous vegetable, the family of veggies that broccoli and cauliflower belong to. It comes in several varieties, the most common of which are the curly-leafed type, laminate (or “dinosaur”), and Russian. Lacinato kale has long, narrow leaves that are a handsome forest green, sometimes blue-green. Russian kale is also curly, with red-tipped leaves with a slightly less sweet flavor than its monochromatic counterpart. In my opinion, though lacinato and Russian kale look appealing, the mild, slightly sweet flavor of the curly variety is the most widely adaptable.
