A Colorful Vegan Christmas
Here’s an old standby that never fails to please — a savory spread based on creamy white beans, accentuated with sun-dried tomatoes. Serve with raw vegetables and crispbreads. Make the sliceable version of Smoky Cheddar Cheez and serve with crisp red grapes for a lovely array of appetizers. Photo by Gail Calvert Rollins.
One of my old favorites, this tasty spinach spread, with hints of dill and crisp cucumber, never loses its charm. Serve with fresh bread, whole-grain crackers, crispbreads, or raw veggies. This is compatible with carrots, cauliflower, bell pepper, and celery. more→
A knock-your-socks-off festive holiday beverage, this unique take-off on eggnog lights up with a tangy edge and an inviting powder puff pink color thanks to the season’s bountiful cranberry harvest. The nog is quickly assembled in the blender, but you may want to plan ahead for multiple batches when serving a crowd. Recipe and photo contributed by Zel Allen, from Vegans for the Holidays.*
In this light dessert, pears are lightly cooked in red wine and apple juice and gently spiced with cinnamon and allspice. A delicious and elegant way to present pears, this is especially nice in the winter when so few other fruits are available. more→
Antioxidant and nutrient-dense cranberries have so much going for them. Why not enjoy these tart treats raw? This delicious relish can be made in minutes and can be enjoyed on special occasions (like Thanksgiving and Christmas, when cranberry sauce is a staple) or for everyday meals. This recipe doubles easily for serving a crowd. Served in small portions, this provides a great burst of color and flavor to the plate and goes just as well with spicy dishes as it does with comfort foods.

Wild rice, apples, and pecans just seem to belong together. The texture of this autumnal pilaf will invigorate your palate. This makes a great stuffing for squashes or peppers, as well as serving as a hearty side dish for the vegan Thanksgiving and Christmas dinner menu. Thanks to Progressive International for providing their useful nut chopper (see our review) to embellish this scene! Photos by Evan Atlas. more→
Mashed potatoes laced with smoky-flavored roasted garlic adds a big yum factor to a comforting classic. No worries if you’re a bit shy of garlic — roasting garlic makes it much mellower and sweeter.
