Past the mid-way point in July finds many of us under a blanket of heat. The better news is that summer produce is abundant and inexpensive. Here are vegan dinner ideas that are both economical and quick, getting you from the kitchen to the table in about 30 minutes. Don’t forget to serve plenty of summer fruit for dessert or evening snack! Pinto Bean and Quinoa Sloppy Joes, above, are a great favorite of VegKitchen readers. Serve with any slaw-style salad — make extra for tomorrow’s meal! Fresh corn on the cob, now in season is a great addition as well.

Black bean and squash tacos
