Cool Refried Bean Wraps

Serve these delightful wraps with stone-ground natural tortilla chips on the side. They’re also a good companion to simples soups.

Makes: 4 wraps

  • 16-ounce can spicy fat-free refried beans
  • Four 10-inch round wraps or rectangular lavish wraps, lightly warmed if desired
  • Vegan mayonnaise, as needed
  • 1 medium ripe avocado, peeled and cut into slices
  • 2 to 3 plum tomatoes, very thinly sliced
  • Finely shredded lettuce, as needed

Heat the refried beans in a saucepan with about 1/4 cup of water, just until they are warm and smooth.

Spread the wraps thinly with the mayonnaise, then with the refried beans. Top with a single layer of tomatoes and avocados, placed here and there, followed by an even sprinkling of the lettuce.

Wrap snugly and cut each in half crosswise. Serve at room temperature and eat out of hand.

    Being a strick vegetarian I will have to soak the beans and than cook them. Any suggestions for spices that would go well with the bean in this wrap.

  2. Hello– though you can find vegan refried beans in a can, it’s admirable that you’d like to cook your own. You can use chili powder, cumin, oregano, and minced fresh chilies or dried hot red pepper flakes, the last two if you like the mixture spicy!

  4. Vego, I made these a number of times for my kids as they were growing up for their lunches and they seemed to hold up fine. Let me know if you try it!
