I’m all for rice, especially brown rice, but lately, I’ve fallen for cauliflower rice. Or, to be more precise, cauliflower “rice.” If you haven’t discovered it yet, it’s nothing more than cauliflower chopped down into rice-like pieces. Much as I like brown rice, it can feel heavy; cauliflower rice becomes a lighter substitute. Chinese-style cauliflower fried rice shows how well it works; and it makes the dish even quicker to prepare — no need to take the 30 to 40 minutes to cook brown rice.

Here’s cauliflower Spanish rice that’s super simple to make, thanks to a great new shortcut —frozen riced cauliflower. This will save you the time and effort of wrangling a cauliflower into tiny bits with a food processor. We’ve added black beans to make this tomato-y rice more substantial as a main dish.
To be clear, this tasty cauliflower fried rice uses cauliflower as the “rice” rather than being an actual rice dish that includes cauliflower (like Cauliflower Rice Pilaf for instance). Because we can’t be bothered with tasks like breaking a cauliflower into bits like most food sites do (we’re not Vegan Food Hacks for nothing!), we start with a bag of riced cauliflower that you will find in your supermarket’s frozen foods section.
We use the word “steak” quite loosely here, but what an awesome way to announce your veganism to the world, by calling a slice of cauliflower a steak! You can grill this outside on the barbecue or indoors on a grill pan. The recipe also works well if you cut the cauliflower into florets and roast them in a single layer on a sheet pan. I must confess that for me, the main appeal of cauliflower crown roast, a new-fashioned way of preparing this veggie, is its appearance. Once you cut wedges away, what you have is lots of unseasoned cauliflower. To mitigate this blandness, serve with plenty of the same simple, tasty gravy used to baste it while it bakes.
