These totally delicious chipotle black bean burgers will have you saying adios to your regular old veggie burger recipes. They're loaded with Mexican inspired flavor and ready to eat in just 30 minutes.

Toss your black bean burgers on a toasted bun and add on your favorite vegan mayo, vegan cheese, and veggies. Then enjoy for a lunch or dinner. These vegetable burgers are made with the perfect spices so they are anything but bland. 

How to Make Black Bean Burgers

  1. Preheat the oven and line a baking sheet with parchment paper. 
  2. Sauté the vegetables until softened.
  3. Mash up the beans in a bowl. Then add the veggies and spices.
  4. Form into four burger patties. 
  5. Bake and serve hot.

What You'll Need

Baking Sheet

You'll need a baking sheet for these oven baked veggie burgers. I like to line mine with parchment paper or use a silicone baking mat to create a nonstick surface, and make clean up really easy too.

Potato Masher 

A potato masher is by far the easiest way to mash up your black beans. I get the best texture with one of these wire mashers, but you can also use the back of a fork if you don't have a potato masher.

Tips for Perfect Black Bean Burgers

Make Even Sized Burgers 

Make sure you evenly divide the mixture and create similar sized burgers. Otherwise, you can find that some of your burgers can become dry and overcooked, while others might be underdone.

Roast the Vegetables 

I sauteed the veggies for these chipotle black bean burgers, which makes the recipe really quick and easy. But you could also opt to roast them for a deeper, smokier flavor.

Mix up the Seasonings 

So I went with a Chipotle flavor for these vegan burgers, but feel free to play around with spices. This is a wonderful base for a vegan burger patty, that you can customize to your own preferences.

Swap the Veggies

Want to use up some of that leftover produce in your fridge? Feel free to change up the veggies used in this recipe! Zucchini or peppers would make a great addition.

A chipotle black bean burger is a veggie burger typically made primarily with black beans, vegetables, and seasoned with chipotle peppers and Mexican-inspired seasonings. It's a popular meatless alternative to beef burgers that will offer a good source of protein and flavor. Serve on a bun or in a lettuce wrap!

How long will black bean burgers last in the fridge?

Black bean burgers can last for 3-4 days in the fridge if stored properly. Place in an airtight container. Reheat in the microwave or on the stovetop. If you don't plan to eat the burgers right away, you can freeze them to extend the shelf life. 

How do you freeze black bean burgers?

Wrap each black bean burger tightly in plastic wrap or aluminum foil. This will help prevent freezer burn and keep the burgers nice and fresh. Place the wrapped black bean burgers in a resealable freezer bag. Squeeze out any excess air and seal the bag tightly. Then place the freezer bag in the freezer and freeze the black bean burgers for up to 3 months.

How do you reheat black bean burgers from frozen? 

To thaw the black bean burgers, remove them from the freezer and let them thaw in the refrigerator overnight. Once thawed, you can reheat the black bean burgers in the oven, on a grill, in the microwave, or in a skillet.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion finely diced
  • 1 carrot finely diced
  • 1 stalk celery minced
  • 2 cloves garlic minced
  • 19 oz black beans canned, rinsed and drained
  • 1 cup panko breadcrumbs
  • 2 tablespoons ground flaxseed + 3 tablespoons water
  • 2 tablespoons chipotle pepper in adobo minced
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon smoked paprika

For serving (optional)

  • vegan mayonnaise

  • lettuce
US Customary - Metric

Instructions

  • Preheat oven to 375 F, line a baking sheet with parchment and set aside
  • Mix together the flax seed and 3 tablespoon water in a small bowl. Set aside. (This is your "flax egg".)
  • In a larger pan over medium heat, heat the olive oil, then add the onion, carrot, celery and garlic.

Baked Chickpea Burgers

Vegan chickpea burgers recipe

A number of nourishing ingredients mingle in this baked vegan chickpea burger. Though it’s tasty enough to be eaten plain as a side dish, it’s makes a great sandwich as well. Either way, try it with Quick Tartar Sauce, whose recipe follows.

Makes: About 8 burgers

  • 1 tablespoon olive oil
  • 1 medium onion, minced
  • 2 medium carrots, thinly sliced
  • 2 large celery stalks, strings removed and diced
  • 2 cloves garlic, minced
  • 1 ½ cup cooked or one 15- to 16-ounce can chickpeas, drained and rinsed
  • ½ cup wheat germ, quinoa flakes, hemp seeds,
    or quick-cooking oats, or a combination
  • 2 teaspoons salt-free seasoning blend (such as Frontier or Mrs. Dash)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Juice of ½ lemon (about 2 tablespoons)
  • 2 tablespoons tahini (sesame paste)
  • ¼ cup fresh parsley or cilantro leaves
  • Salt and freshly ground pepper to taste

Preheat the oven to 350 degrees F.

Heat the oil in a medium skillet. Add the onion and sauté over medium heat until translucent. Add the carrot, celery, and garlic, and sauté until all the vegetables are tender and golden.

Combine the vegetable mixture with the remaining ingredients in a food processor. Pulse on and off until the mixture is evenly and finely chopped, but don’t puree.

Drop by ⅓ cup portions onto an oiled nonstick baking sheet (or better yet, a baking sheet lined with baking parchment) and flatten gently.

Bake for 30 minutes, flipping each burger after 20 minutes. Serve on bread or rolls or on their own; either way, they're made even more delicious with Quick Tartar Sauce, following.

Quick Tartar Sauce

Makes about ⅔ cup

  • ½ cup vegan mayonnaise
  • 1 tablespoon sweet pickle relish
  • 1 to 2 teaspoons prepared mustard, or to taste

Combine all the ingredients in a small bowl and stir together until well blended.

You can easy make variations of this recipe. Simply choose different marinades and toppings. If you don't have either kind of grill, simply prepare these burgers in a skillet. These vegan burgers are delicious with lightly cooked or grilled corn and a big salad or any kind of potato salad.

How to Make Easy Portobello Burgers

  1. Stem and clean portobellos, then marinate.
  2. To grill: Prep grill. Grill portobellos on both sides until charred to your liking.
  3. To cook in a skillet: Heat marinade in the skillet. Cook portobellos on both sides until browned to your liking.
  4. Serve on whole-grain buns with whatever other accompaniments you'd like.

Ingredients

  • portobello caps as many as needed (1 per serving)
  • teriyaki marinade homemade or bottled; as needed for marinating
  • whole-grain buns or toasted English muffins

Toppings (Optional)

  • onions carmelized or raw slices
  • garlic sautéed
  • scallions thinly sliced
  • tomatoes sliced
  • baby greens baby spinach or baby arugula
  • salsa store bought or homemade
  • ketchup
  • mustard
  • sweet pickle relish
  • vegan mayonnaise

Instructions

  • Stem the portabellas and wipe them clean. Pour the marinade of choice into a shallow container and arrange the portobello caps, underside down, in a single layer. Let stand for at least 15 minutes and up to an hour. Pour unused marinade back into a bottle for finishing the dish; you'll have enough left over to use for another occasion.
  • To grill: Prepare grill. Grill the portobellos, underside down, for 4-5 minutes. Brush generously with more marinade, then flip and grill for 5 minutes longer or until charred to your liking.
  • To cook in a skillet: Heat a shallow layer of marinade in the skillet. Cook the portobellos, underside down, for 4-5 minutes. Flip and cook for 5 minutes longer, or until browned to your liking. Add a small amount of additional marinade if needed to keep the skillet moist.
  • Serve portobello caps on whole-grain buns with whatever other toppings you'd like. You can place a variety of these toppings and condiments on the table, and let everyone fix their own sandwich!

Juicy tomatoes are tossed with fragrant oregano and thyme, creating a bright, herb-packed dish that tastes like summer in every bite. I'm a huge believer that the best recipes are often the simplest ones. When tomatoes are ripe and full of flavor, they really don't need much help. A handful of fresh herbs, a drizzle of olive oil, and a little seasoning can transform them into something that feels both effortless and special.

It's the kind of dish I like to make when tomatoes are overflowing at the farmer's market or when I want a quick vegan appetizer or light lunch that doesn't require turning on the stove. Just chop, toss, and enjoy.

Step aside burgers, there's a new patty in town! These Vegan Chickpea Patties are a nutritional powerhouse that's loaded with hearty flavors. Perfect for a barbecue or just a simple vegan friendly weeknight meal.

Chickpeas are one of my all time favorite plant based ingredients. They're nutritional powerhouses, filled with protein and fiber. They're hearty, delicious, and pairing them with an array of seasonings can transform these simple legumes into something exotically delicious. I'm guilty of tossing them into all kinds of recipes from heavy winter stews to light chickpea salads.

These chickpea patties marry convenience with fantastic taste. They're quick to make in just a half hour, which means they're easy enough for a weeknight dinner. But they're also perfect for grilling at those fall tailgate parties and summer cookouts.

Besides serving them as veggie burgers, you can use these patties as an addition to fresh salads or as companions to your favorite dipping sauce. Yum!

Helpful Tips

Chill the patties

Don't skip on chilling the patties before cooking - you can even chill them for a bit longer than noted. A well-chilled patty holds its shape much better while cooking.

Bake the chickpea patties

You don't have to stick to pan-frying your patties - baking in the oven at 375°F for 20-25 minutes also works just fine. Just remember to flip them halfway through.

Grill the chickpea patties

Cook the chickpea patties on the grill over medium heat for 4-6 minutes on each side.

I fried my patties in a bit of olive oil, because it's most convenient for me. But coconut oil or canola oil are also good alternatives. 

Make ahead

You can make this chickpea patties in advance if you wish. Just prepare the patties and then store them in the fridge, in a covered container. They will keep for 2-3 days in the fridge, before being cooked.

Storing Leftovers 

You can save leftover chickpea patties in a covered container in the refrigerator for 3-4 days or in the freezer for up to 3 months. Reheat in a hot pan or in the oven to get a crispy finish.

Variations

Mediterranean Chickpea Patties

First up, if you have a thing for Mediterranean foods, add in some cumin, coriander, and lemon zest. 

Asian Chickpea Patties

 For an Asian twist, toss in some sesame seeds, a little soy sauce, and a hint of ginger.

Add Spice! 

Mix in some chili flakes or use spicy smoked paprika instead of the regular one to give your patties a kick of heat. 

Italian Chickpea Patties

If you fancy an Italian touch, a bit of dried basil and oregano, or even a few minced sun-dried tomatoes, will give your patties a rich, savory flavor.

Make it gluten-free

 Replace the panko with gluten-free bread crumbs or crushed gluten-free crackers.

Ingredients

  • 15 oz canned chickpeas drained and rinsed
  • ¾ cup panko breadcrumbs
  • 3 tablespoons water + 1 tablespoon flax meal whisked together for a "flax egg"
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • Olive oil for frying

Instructions

  • In a large bowl, use a fork to mash chickpeas until they are all smashed. Alternatively you can use a food processor to pulse them a few times until they are chopped but not pasty.

  • Add the panko, flax egg, garlic powder, onion powder, salt, smoke paprika, and black pepper and stir until evenly combined.
  • Form into nugget sized patties and place on a lined baking sheet. Chill in the fridge for at least 30 minutes.

  • Heat a skillet over medium heat, add enough oil to the pan so that it is completely coated, then add the patties in batches to the pan and cook 3-4 minutes per side, or until golden brown and heated through.

Tips & Tricks for Copycat Vegan Big Mac Sauce

Vinegar 

For this recipe, you can use apple cider vinegar or a white distilled vinegar. Apple cider vinegar will add more of a tang to the sauce. White vinegar will still add tang but not be as powerful. 

Make Ahead

Feel free to make this sauce a day in advance of when you want to use it. I find that allowing the sauce to sit for at least 30 minutes actually helps to infuse all the flavors together. 

Variations To Copycat Vegan Big Mac Sauce 

Pickle Relish 

Big Mac sauce tastes great with some pickle relish mixed in. I recommend using a dill relish, but you can also use a sweet relish. Just know that adding relish will change up the flavor of the sauce a bit. 

Mustard 

I used a plain yellow mustard for this recipe. But if you want a bit more of a tang, feel free to use a spicy brown mustard instead. It won't be as true to the original Big Mac sauce, but it will be tasty.

How do you use Big Mac Sauce? 

Dip fries into your sauce, spread it on veggie burgers, dip vegan nuggets into it, etc. I have even used this sauce for dipping roasted veggies! 

How do you store Big Mac sauce? 

Store the sauce in an airtight container in the fridge. This sauce will store for a few days. It may separate in the fridge, so just stir it well before using. 

Can you freeze Big Mac sauce? 

It is not recommended to freeze this sauce. Make only the amount of sauce that you plan to eat. Since this sauce takes just minutes to make, you will find it is easy to whip up a bit of sauce right when you need it.

There's nothing quite as comforting as a hot, gooey grilled cheese sandwich. And now the plant based crowd doesn't need to miss out with these easy and delicious vegan grilled cheese recipes!

These days, grilled cheese is hot. (Pun intended.) There are even restaurants devoted solely to grilled cheese sandwiches. So why should us vegans miss out?

So today we have five delicious ways to make a vegan grilled cheese - and most can be made in just a few minutes.

There's no big secret here. We're not going to hand-craft our vegan cheese or anything wild like that. Just simple, delicious, easy vegan grilled cheese.

Tips for Making Vegan Grilled Cheese

Now there is a misconception out there than vegan cheeses are un-meltable. Not so! I've impressed many guests with how melty and stretchy a good vegan cheese made for that purpose can be.

There are several good vegan cheeses on the market melt wonderfully well, including Daiya and Follow Your Heart. You may know of other brands, and if so, comment below and let us know which ones you like!

And of course, nothing pairs with grilled cheese like a bowl of tomato soup. I like to dunk my sandwich! If you want some in a hurry, this Imagine Creamy Tomato is vegan and very good. Or make your own homemade vegan tomato soup.

How to Make Vegan Grilled Cheese

Kids, you don't need a recipe to make a grilled cheese sandwich, though the internet seems to think otherwise.

You just need some sturdy whole-grain bread, vegan cheese, your add-ins of choice, vegan butter (like Earth Balance), and a good nonstick pan or griddle.

Best to cook over medium heat with a generous but not ridiculous layer of vegan butter; cover the pan when cooking the first side so that the cheese will melt; when the underside is golden, flip and cook the other side. That's it!

But of course, a recipe can give you some inspiration for more creative flavor combinations. So here are five of my favorites.

5 Vegan Grilled Cheese Recipes

Vegan grilled cheese sandwich with tomato soup

First up is this swoon-worthy vegan grilled cheese, tomato, and vegan bacon sandwich. Use your favorite kind of purchased or homemade vegan bacon.

Precook vegan bacon slices first. Layer some vegan cheese shreds onto a slice of bread, followed by tomato slices, vegan bacon, sliced tomato, more cheese shreds, topped by another slice of bread. Cook on a little vegan butter over medium heat, covered, until both sides are golden.

This is good with either cheddar, mozzarella, or pepper jack style cheese.

Grilled cheese with mushrooms, yum! To make this delightful sandwich, simply precook sliced brown mushrooms (cremini- or for a fancier feast, shiitake) until wilted, then drain.

Layer on the bread: cheese shreds, cooked mushrooms, more cheese shreds, another slice of bread. Cook on a little vegan butter over medium heat, covered, until both sides are golden.

We think this is best with mozzarella style cheese, but you may beg to differ.

Apple and cheddar is a classic flavor combo, and it works quite well in vegan grilled cheese, too. Using a tart granny smith apple is a good move, but if all you've got is a red apple, that's not a bad choice. Either way, just make sure the apple is nice and crisp. 

Layer on bread: cheese shreds, apple slices, more cheese shreds, another slice of bread. Cook on a little vegan butter over medium heat, covered, until both sides are golden.

Spice things up with fresh jalapeño in your grilled cheese! Slice it thinly and remove the seeds. Use the usual precautions when handling hot chili peppers.

Layer on bread: cheese shreds, sliced jalapeños, more cheese shreds, another slice of bread. Cook on a little vegan butter over medium heat, covered, until both sides are golden.

We used a combination of cheddar and mozzarella-style vegan cheese shreds with this one.

Last but not least, a vegan grilled cheese sandwich with the green goodness of spinach. Rinse some baby spinach and wilt it in the pan you'll be using. Transfer to a colander and squeeze out the liquid.

Layer on bread: cheese shreds, wilted spinach more cheese shreds, another slice of bread. Cook on a little vegan butter over medium heat, covered, until both sides are golden.

We used mozzarella-style vegan cheese shreds here, but this would go with any variety - cheddar, or if you'd like a spicy kick to go with the spinach, pepperjack.

#1 - Vegan Grilled Cheese, Tomato, and Vegan Bacon

  • 3 slices vegan bacon store bought or homemade
  • ¼ cup vegan cheddar, mozzarella, or pepper jack style cheese shreds

  • 2 oz mushrooms cremini or shiitake

Vegan Crunchwrap Supreme

This vegan Crunchwrap Supreme is made with a smoky tempeh filling, homemade dairy-free nacho 'cheese', and guacamole. It's bursting with flavour, and is perfect for an indulgent lunch. Easy to make gluten-free.

You know those recipes that you just want to make over and over again? Yep, this tempeh Crunchwrap is one of those for me. I am seriously obsessed. I've seen Crunchwraps all over social media for a while, and knew I needed to make my own vegan version.

The original Crunchwrap Supreme is from Taco Bell, made with beef and nacho cheese. But, a homemade, plant based version is incredibly easy to put together. Just follow the steps below and you will see for yourself! Chances are, if you're like me and love wholesome comfort food, you will love this as well.

About this vegan Crunchwrap Supreme

The thing that I love about Crunchwraps is that you can really load them up with different ingredients and they won't fall apart. Well, you have to try very hard in order for that to happen (I've had a few such accidents myself during recipe testing lol). Regardless, every bite is packed full of deliciousness, and the wonderful crispy texture of the wrap really brings everything together.

Here, I used tempeh for the filling. I love tempeh, because it's such a versatile ingredient with a great texture and a neutral flavour. With just a few ingredients, it's so easy to transform it. In this Crunchwrap recipe, it takes the place of the ground beef.

I also made a homemade nacho 'cheese' sauce. The great thing about this one is just how simple it is. You don't need a blender, and there are no cashews. You simply put all the ingredients to a saucepan, whisk, and you're good to go! In fact, I love using this 'cheese' as a sauce for many recipes, such as salads and nourish bowls.

I also added avocado, rice and a little bit of grated vegan cheese. Simple, but incredibly yummy!

Smoky tempeh filling

You only need a few simple ingredients to make the smoky tempeh filling. Those are:

Ingredients for smoky tempeh
  • Onion and garlic.
  • Tempeh. I would recommend steaming this beforehand to get rid of any bitter flavour. You can also use crumbled extra firm tofu.
  • Sweetcorn.
  • Tomato paste.
  • Tamari. You can also use soy sauce if not avoiding gluten, or coconut aminos for a soy-free version.
  • Cumin and smoked paprika.

Simply cook the onion and garlic. Then, when they soften, add the rest of the ingredients and cook over a medium-high heat for around 5 minutes. That's it!

Vegan nacho cheese

As I mentioned, this nacho 'cheese' is cashew-free and doesn't require a blender. The ingredients you will need are:

  • Coconut milk. Full fat coconut milk from a tin works best.
  • Turmeric.
  • Salt.
  • Nutritional yeast. This is great for adding a 'cheesy' flavour.
  • Apple cider vinegar.
  • Cornstarch.

Simply add all the ingredients to a saucepan and whisk over a medium heat until the 'cheese' thickens.

What else should I add to a vegan Crunchwrap?

Crunchwraps are super versatile - you can switch up the ingredients and try out different fillings to see which ones you prefer. As you can see, I added rice, mashed avocado and grated vegan cheese. However, the following filling ideas also work really well:

  • Quinoa.
  • Wholegrain rice.
  • Vegetables of your choice, such as tomatoes, carrots and zucchini.
  • Vegan sour cream.
  • Spicy cashew cream.
  • Chunky guacamole.
  • Black beans.
  • Sweet potato.
  • Tostada shells or corn chips for some extra crunch.

Try out different ones and see which ones you like best! The great thing is that there are so many options, so you will never get bored of this recipe.

Vegan Crunchwrap Supreme step-by-step

I would recommend starting by cooking the rice. While that's cooking, make the tempeh filling and the cheese sauce. By preparing them simultaneously, you will save a lot of time.

Place a large tortilla on a flat surface and add 3-4 tablespoon rice in the middle, spreading it out into a circle.

Next, add smoked tempeh on top, followed by a layer of mashed avocado. Finish with the homemade nacho 'cheese', and a sprinkle of grated vegan cheese.

Place a smaller tortilla on top and press down lightly. You can either buy a small tortilla at the store, or make your own by placing a round cup or cookie cutter in the centre of a large tortilla and cutting around the edges. Do not discard the rest of the tortilla - you can use it for homemade chips to dip in any leftover nacho 'cheese' sauce.

Fold the edges of the tortilla towards the centre until completely sealed. Press it down once again and flip.

Now use a spatula to transfer the Crunchwrap to a lightly greased frying pan. Cook for 3-4 minutes on each side over a medium-high heat, until crispy.

Can I make a Crunchwrap ahead of time?

You can make this vegan Crunchwrap Supreme ahead of time and leave in the fridge for 2-3 days, but keep in mind this may cause the wrap to go soggy.

Instead, I would recommend making the smoky tempeh, the rice and the nacho 'cheese' sauce ahead of time and storing them in separate containers for up to around 3 days, and assemble the wraps when ready.

  • Add the tempeh, sweetcorn, tomato paste, tamari, cumin and smoked paprika. Cook for 5 minutes, until the tempeh is lightly crispy.

Make the 'cheese' sauce

  • Add the coconut milk, turmeric, salt, nutritional yeast, apple cider vinegar and cornstarch to a saucepan. Whisk until the 'cheese' thickens.

I absolutely love the start of a new year. It's a time of fresh opportunities, a chance to leave negative energy behind, review your goals and improve yourself with a fresh burst of motivation. Of course, you don't have to wait until a new year or even a new week to do that. But I always love the atmosphere the start of a new year brings!

Another great thing about the start of a new year is Veganuary. With participation more than doubling each year, this challenge encourages people to go vegan for the month of January. After completion, a lot of people decide to adopt a fully vegan lifestyle.

This year, I've decided to run a series on my blog where I share a lot of basic vegan recipes that anyone wishing to eat more plants needs to know. These recipes will be ideal if you're participating in Veganuary 100%, or just want to incorporate more vegan meals into your dinner rotation.

Gluten-free vegan falafel

To start this series, I will teach you how to make amazing vegan falafel. This recipe took a few tries, but I absolutely love how it turned out. Falafel is naturally vegan most of the time, and makes a great addition to lunches, dinners, and even snacks.

Here, I've featured both a baked and a fried version. Regardless of which method you choose, it's going to be incredibly delicious. Think perfectly crispy and crunchy on the outside, soft on the inside, and with a lot of flavour. Plus, you don't need many ingredients to create such deliciousness! I make falafel at least one a week, and could not recommend it more.

Ingredients and substitutions

As I mentioned, you only need a handful of simple ingredients for delicious vegan falafel. These are:

  • Chickpeas. You can use either soaked dried chickpeas (instructions below), which is the most common method for falafel, or canned chickpeas. If you use dried chickpeas, they will be more firm on the inside. Either way, make sure to drain them very well and pat them dry with a paper towel - this will help the falafel keep their shape.
  • Red onion. Great for texture and a tangier flavour.
  • Fresh cilantro. This adds a wonderful green colour and freshness. However, if you don't like cilantro, you can leave it out or replace with fresh parsley.
  • Garlic cloves.
  • Sesame seeds. These will add a nutty undertone. They will also be used to coat the falafels.
  • Buckwheat flour and rice flour. They will work together to not only help the falafels keep their shape, but will also help enhance the savoury flavour. You can use any flour of your choice.
  • Spices: turmeric, cumin, dried basil, salt and smoked paprika. You can add other spices of your choice - for instance, add garlic powder if you want a stronger garlicky flavour. You can also adjust the amounts depending on your preference.
  • Olive oil. This will give the falafels a great soft and fluffy texture on the inside, and ensure that they are not too dry. If you want to keep them oil-free, you can use tahini.
  • Lemon juice. Needed to create a distinctive tangy flavour!

How to make crispy vegan falafel

If you are using dried chickpeas, soak them in cold water for at least 3 hours, or overnight. Drain and rinse them, and pat them dry with a paper towel.

If using canned chickpeas, drain and rinse them, and pat them with a paper towel, making sure they are as dry as possible.

Transfer the chickpeas to a blender or food processor together with the other ingredients, setting aside some of the sesame seeds to coat the falafel. Blend on a low setting for a few seconds, until mostly smooth, but with a bit of texture left.

Scoop out around 2-3 tablespoon of the mixture per falafel and shape them using your hands. If they stick, dip your hands in a little bit of flour before shaping. Dip the falafel in the sesame seeds on both sides and lay them out on a flat surface.

How to fry falafel

To make fried falafel, heat a thin layer of olive oil or avocado oil in a large flat pan or skillet. Add the falafel to the pan, working in batches if necessary - it's important not to overcrowd the pan.

Fry for around 2-3 minutes on one side, then flip and fry for 2 minutes more, until crispy and browned.

How to bake falafel

If you want to make baked falafel, preheat the oven to 180 degrees C (350F) before blending.

Lay out the falafel on a large baking tray lined with parchment paper. Bake in the preheated oven for 25 minutes, flipping half way through.

Storing and freezing falafel

These vegan falafel keep well in the fridge in an airtight container for 4-5 days.

You can also freeze them in a freezer-friendly container for up to 3 months. Once cooked and cooled down, freeze them on a baking tray and then transfer to freezer-friendly containers or bags. To reheat, thaw in the fridge and then warm up either by frying, or baking at 180 degrees C (350F) for 20 minutes.

  • I would definitely recommend using dry chickpeas and soaking them, as this results in the best texture.
  • If using canned chickpeas, make sure to dry them really well before adding to the blender/food processor.
  • If using dry chickpeas, it is not necessary to use flour.
  • Adjust the spices according to your preference, and try out different flavour options.

Serving suggestions for vegan falafel

You can serve these falafel as a snack or a side dish with a dip of your choice, such as vegan tzatziki, hummus, vegan sour cream, guacamole, or spicy cashew cream.

You can also add them to salads, serve in pita or flatbread, in a sandwich, or as part of a nourish bowl.

Slaw

  • 2 cups shredded cabbage or finely chopped cabbage
  • 3 tablespoon vegan mayonnaise
  • 2 tablespoon white vinegar
  • 1 tablespoon sugar

  • 1 can young jackfruit
  • 1 small onion finely chopped
  • 1 tablespoon canola oil

Ingredients

  • 1 cup sweet potato meat about a medium sweet potato, cooked and peeled
  • 1 can 540 ml chickpeas, drained and well rinsed
  • ¼ cup barbecue sauce homemade or commercial
  • ¼ teaspoon salt
  • 1 tablespoon chili seasoning
  • ⅓ cup bread crumbs
  • tomatoes
  • lettuce
  • vegan mayonnaise
  • pickles
  • 5 hamburger buns

Instructions

  • Cook your sweet potato in the oven at 400°F for 20 minutes. Once the sweet potato has been cooked and peeled, let it cool a little.
  • Preheat the oven to 350°F.
  • Place the sweet potato flesh, chickpeas, barbecue sauce, salt, chili seasoning, and bread crumbs in a food processor. Mix until a homogeneous paste forms. You will probably need to scrape the side with a rubber spatula several times during the process.
  • When the preparation is homogeneous, separate into five equal parts and form patties with your hands. Freeze patties for at least 15 minutes to allow the mixture to firm up.
  • Place the patties on a baking sheet covered with parchment paper.
  • Cook in the oven for 30 minutes. Then let cool for about 5 minutes.
  • Meanwhile, prepare the toppings (tomatoes, lettuce, mayonnaise, pickles) and toast your hamburger buns.
  • Assemble the burgers by brushing the inside of each bun with mayonnaise, then stacking a cooked patty, lettuce leaf, pickles, and a tomato slice.

Vegan Lentil and Sunflower Seed Meatloaf

What I like about this kind of recipe is that it is extremely flexible. You can keep the base and make meatballs, burgers, or stuff it into vegetables. Here, I cooked it in a muffin mold, but you can opt for a lentil loaf cooked in a bigger mold. Just don't forget to increase the cooking time!

  • 2 tbsp. of olive oil
  • 1½ cups of onion finely chopped
  • 2 garlic cloves crushed
  • ⅔ cup carrots grated
  • 1 packet 227g mushrooms, finely chopped
  • 1 cup of lentils cooked, rinsed and drained
  • 1½ cup sunflower seeds
  • 2 slices of whole grain bread shredded into small pieces
  • ¼ cup ground flaxseed
  • ½ cup of oatmeal
  • 2 tbsp. of tamari
  • 1 tbsp. apple cider vinegar
  • ¼ cup of vegetable broth
  • 1 tbsp. oregano
  • ½ tsp. thyme
  • ½ tsp. dry mustard
  • Salt and pepper to taste
  • ¼ cup of ketchup
  • ¼ cup of unsweetened applesauce
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. tablespoon maple syrup

Instructions

  • In a skillet, heat olive oil over medium high heat. Add onion and mushrooms. Cook until the onion has begun to turn a little golden, about 10 minutes. Add the garlic in the last minute of cooking. Remove from heat and place in a large bowl.
  • Grate the carrots and add them to the bowl with the onion, garlic, and mushrooms.
  • Blend the lentils in a food processor for a few seconds. They must have a coarse texture. Transfer the lentils into a large bowl.
  • Coarsely grind the sunflower seeds in the food processor. They must have a coarse texture. Transfer to the large bowl with the other ingredients.
  • Add the rest of the ingredients to the bowl and mix well.
  • Place the mixture in a previously oiled muffin pan.
  • In a small bowl, mix ketchup, applesauce, balsamic vinegar, and maple syrup. Pour sauce evenly on the top of the Meatloaf.
  • Bake at 350 ° F for 40 minutes. Let stand for 10 minutes before serving.

Ever since I discovered an Asian supermarket, our drawers have been filled with "exotic" products. I've tested a lot of new Asian recipes without being disappointed. This time I tried a Thai recipe: fast, easy and tasty, this recipe is delicious!

It's easy to whip up a plate of this delicious pad Thai when you're craving comfort food, but sometimes you may want to eat this dish as part of a complete meal. When you're craving that full Asian feast, I recommend pairing this pad Thai with some fresh steamed dumplings and an Asian slaw.

Or if you're feeling bold, you might want to pair this pad Thai with an edamame burger or crispy tofu! And if you want to keep things light, you can always just opt for pairing your pad Thai with some refreshing lettuce cups.

No matter how you serve it or what you eat it with, you can't go wrong with this pad Thai!

How to Make Vegan Pad Thai

  1. Soak noodles until softened, then drain.
  2. Brown tofu in an oiled pan for 5 minutes.
  3. In a bowl, combine the soy sauce, water, and sugar.
  4. Add the carrot, lime juice, and soy sauce mixture to the pan.
  5. Cook another 5 minutes over high heat.
  6. Add remaining ingredients. Cook another 4 minutes.
  7. Serve pad thai in a bowl & sprinkle with sesame seeds.

  • 300 g dried rice noodles
  • 2 tablespoon vegetable oil
  • 200 g firm tofu thinly sliced

Healthy Vegan School Lunch Ideas

Summer always seems to disappear quickly, and back-to-school days find parents scrambling to get the kids ready. One thing you can check off your to-do list is finding  healthy school lunch recipes.

If your child is vegan or vegetarian, that adds to the challenge. Don't despair! With our handy list of recipes and ideas, creating easy, tasty school lunches will be a breeze.

Here are some of the tips that will keep you sane from the first day of school to the last:

1. Keep your lunch-making supplies together.

Keeping everything you need for prepping lunches in one place makes for a much more efficient morning "rush hour." In one cabinet, you can store the lunch boxes, sandwich bags, thermoses, plastic spoons and forks, toothpicks, and small plastic storage containers. I also keep packaged snacks with these supplies for easy access.

2. Stock up on cold packs.

Make sure you have plenty of freezer packs available at the start of the school year. Somehow these things never make it back into my freezer in the evening, so having spares is essential. I like these slim ones that are easy to stack together in the freezer.

3. Vary the types of bread used for sandwiches. 

Bagels, rolls, pita pockets, English muffins, raisin bread, and even fresh flour tortillas or "wraps" can add interest to standard sandwich fare. Check out our sandwich and wrap recipes for ideas.

4. Consider a thermos.

Dishes that taste just as good warm or at room temperature are more successful than those that need to stay hot (but usually don't).

If your child's school has a microwave available, your thermos offerings can include macaroni and cheese, soups, and leftover casseroles.

5. Make fruit appealing.

Fruit packed into lunch boxes can come home uneaten unless you try some simple tricks. Small chunks of fruit, such as strawberries, grapes, melon, tiny seedless orange sections, and such, served on a skewer (long cocktail toothpicks are perfect), are always eaten.

Similarly, apple slices are more likely to be eaten if you supply a tiny container of peanut butter to dip them into.

6. Raw vegetables are better with dip. 

When sending carrots (or baby carrots), celery, bell peppers, etc. - cut them into strips and add a tiny container of your child's favorite dressing or dip.

Natural store-bought or homemade hummus is a great choice, as is vegan ranch dressing. Add wedges of pita bread for dipping, too.

7. Cereal is an unexpected treat at lunch.

Pack some nutritious cereal in a lidded bowl-shaped container, and your child can add his or her favorite nondairy milk to it (vanilla almond milk is particularly good with cereal) when it's time to eat.

Teamed with a banana, this makes a filling meal. And it's always fun to eat breakfast at "weird" times.

8. Make wholesome homemade muffins.

Muffins are always a crowd pleaser, and it's super easy to make tasty ones that are actually healthy too.

Pack a wedge of vegan cheese or a container of coconut yogurt, plus fresh fruit to go along with them.

9. Salads in pita bread or in wraps appeal to kids with more adventurous palates.

Augment simple salads of lettuce, tomato, peppers, and cucumbers with chickpeas, chunks of baked tofu, chickpeas or other beans, and grated nondairy cheese.

Keep pita sandwiches fresh by wrapping them first in foil, then placing them in sandwich bags.

10. Expand on PB & J.

Try cashew, almond, or sunflower butters, and no-sugar added fruit spreads or apple butter for a change of pace.

11. Pack a veggie burger.

Veggie burgers make a surprisingly good packed lunch. Serve it on a whole grain roll or English muffin, with your child's favorite condiments for a fun surprise.

12. Faux meats can expand lunch box variety.

Vegan deli slices might especially appeal to teens. "Chicken" or "turkey"-style slices on soft whole grain bread appeal to tastes of any age.

13. Vegan "Tuna"or "egg" salads.

13. Pasta salad is an appealing lunch option.

Use small shapes such as elbows, wagon wheels, shells, or tiny tubes, which pack well into containers.

Cookies make a perfect after-school snack when served with almond milk. And the next day, you can pack the extras in their lunch box. Check out these vegan cookie recipes to get baking!

SCHOOL SNACKS

Snacks packed for school, whether for snack time or as an extra treat for the lunch box, should be simple and neat.

Explore natural foods stores for packaged snack ideas. Their cookies, cereals, fruit bars, and such, are often naturally sweetened and low in fat.

Similarly, natural chips, rice puffs or crisps, and other crunchy snacks have less salt and fat than their supermarket counterparts.

Prices can sometimes (but not always) be a little higher, but you're getting more value for your money.

Here are some suggestions for school snacks:

Vegan Substitutions Guide

If you're new to plant-based cooking, you may be looking for a guide to vegan substitutions to swap into favorite non-vegan recipes. Thankfully, there are plenty of products vegans can use in place of animal ingredients that will make vegan cooking a breeze. Let's cover how to replace animal ingredients with vegan ingredients.

Milk. It's so easy to substitute for dairy milk in a recipe. You can use soymilk, rice milk, oat milk, hemp milk, or nut milk measure for measure. Most supermarkets carry at least a couple of varieties. It's that easy! If you're a bit more ambitious you can make your own nondairy milk; there are lots of recipes online, or see ours for homemade almond milk or hemp milk. For a store bought option, I really like this almond milk from Silk.

Cheese. It's so easy to find all kinds of vegan cheeses these days. And wow, have these come a long way. You can get slices, blocks, shreds, slices, and more.

In place of cottage or ricotta cheese, you can use crumbled tofu, soaked raw nuts, or a combo. And though it won't be quite as creamy or meltable as the real thing, it will be very good indeed. See the formula in Italian Eggplant Casserole with Cashew-Tofu Ricotta. Or try this 5 Minute Tofu Ricotta recipe. You may need to spice it up with herbs and add some salt to make it work in your particular recipe. Vegan "Parmesan" is also super easy to make and better than what's on the market.

Craving some tangy feta cheese? No issue there - try this simple vegan feta recipe. It's briny and crumbly, just like real feta.

Pizza? No problem. Daiya mozzarella shreds work incredibly well. In my experience, Daiya and Follow your Heart brand cheeses have the best melting power.

Cream cheese on your bagel? Daiya has you covered there, too. There are other brands but these are VegKitchen's favorites. (No affiliation - we just like them.)

Be sure to read the label as some vegetarian cheeses contain casein, which is not vegan. If you can find a great vegan cheese that you like, use it in your recipes in the same manner that you would use dairy cheese.

Now, whether you're vegan or lactose-intolerant, you no longer have to give up your favorite cheese-y foods. Or cheese itself! You'll find these links useful if you're a cheese lover who wants to reform:

Eggs. A great substitute for scrambled eggs is a tofu scramble. You simply use crumbled tofu and heat in a frying pan. Kids generally like tofu scramble, especially kids who have been vegan their entire lives. You can spice it up with tomatoes, peppers, onions, or even potatoes and vegan bacon bits.

You can also make a great vegan scrambled from chickpea flour - check out these vegan scrambled eggs for inspiration.

In baked goods, good substitutions for eggs include applesauce, pureed soft tofu, Ener-G egg replacer, a flax egg (1 tablespoon ground flax seeds plus 3 tablespoons water or other liquid, blended), or mashed bananas. You'll have to experiment with your recipe to see what works best for you.

In dishes where eggs are usually used for binding (such as meatloaf) you can use oat or soy flour, rolled oats, cooked oatmeal, bread crumbs, instant potato flakes, nut butters, tomato paste, or cornstarch.

Chickpea flour makes amazing omelets, and aquafaba is useful for making recipes that originally call for egg whites, like mousse and meringue. See useful links for these and more:

Beef or chicken stock. Replace beef or chicken stock with vegetable broth. Or use vegetable bouillon cubes.

Butter. There are vegan butters on the market that work well in substituting for butter. Be sure to read the labels because not all margarines are vegan. And sometimes mainstream margarines have questionable ingredients and hydrogenated fats.

You may also want to consider using oils like sunflower or olive instead of vegan butter. If you'd like to go with the major brands, make sure that the palm oil used is Fair Trade, otherwise it's an environmental hazard. And remember that the jury is still out on coconut oil!

Yogurt. Several companies make vegan yogurts that will substitute well in your recipes - soy, coconut, almond - more varieties are coming on the market each year. You can find them in fruit flavors and also plain for cooking and baking.

Sour Cream. Try plain nondairy yogurt, especially if used in making dips. There are also a few commercially available vegan sour creams on the market. Or, you can make your own Vegan Sour Cream using silken tofu. Delicious on all kinds of tortilla specialties and on cold soups like the Borscht shown above.

Mayonnaise. There are a few vegan mayonnaise products on the market. You can use vegan mayonnaise exactly the way you'd use non-vegan mayonnaise. Aquafaba can be used to make a great homemade vegan mayo (shown above from Serious Eats) as well.

Gelatin. If you need to substitute for gelatin in a recipe, use agar flakes or powder. It will thicken as it's heated. Also, there are a couple of companies that make a vegan fruit gelatin product that you should be able to find at your local health food market.

Honey. There are many liquid sweeteners on the market that you can use in your recipes instead of honey. However, they all vary in consistency and sweetness, making substitution a guessing game, at least initially. You may have to experiment with ratios until you figure out what works best in your recipes.

In general, however, maple syrup and agave nectar can be substituted measure for measure in recipes. Other sweeteners that are less sweet than honey include agave syrup, corn syrup, malt syrup, light and dark molasses, and brown rice syrup. Frozen fruit-juice concentrates, sorghum syrup, and concentrated fruit syrups range from being half as sweet to just as sweet as honey.

Sugar. Many vegans do not eat sugar since some brands are refined using bone char from animals. Others object to using sugar simply because it's often full of pesticides, and sugar plantation workers aren't always treated very well.

If you want to replace crystalline sugar in a recipe, here are some alternatives: beet sugar, fructose, natural organic sugar, unbleached cane sugar, turbinado sugar, date sugar, maple crystals, and granulated FruitSource. Some of these sugars dissolve better than others, so again, you'll have to experiment. As in other cases, using organic and fair trade products is the optimal choice.

Chocolate. Many people say they couldn't be vegan if it would mean giving up chocolate, but luckily they don't have to! There are many non-dairy vegan chocolate chips, cocoa powders, and chocolate bars. These are most easily found in the natural foods aisle of your supermarket, and of course, in natural foods stores. Once again, fair trade and organic are best.

Meat. If you want your foods to have a similar taste and texture to meat, you're in luck, because never before have so many companies been making vegan meat substitutes.

Among the products on the market now that will substitute for meat are: veggie deli slices (bologna, ham, turkey, and other flavors), veggie burgers, veggie meatballs, veggie sausage links and patties, veggie bacon, veggie ground "beef," soy chicken patties and nuggets, veggie meatloaf and Salisbury steak, veggie jerky, and whole "turkeys" for Thanksgiving or other holidays.

Check your vegan cookbooks for recipes for foods like "neatloaf," nut roasts, lentil-walnut patés, and other old favorites that traditionally contained animal flesh.

Ice Cream. Along with the proliferation of meat analogues, it's so easy to find vegan ice cream. This industry has grown tremendously. There are vegan ice creams based on soy, rice, nut, and coconut milks, and they're all delicious. Some are high in fat and some are fat-free.

Some are fruity like sorbet, while others are sinfully decadent like butter pecan, peanut butter zig-zag, or peanut caramel. You can also buy vegan ice cream sandwiches, mud pies, and ice cream bars. I've made some great shakes, floats, and malts using vegan ice cream products. Your kids will love them too!

There are lots of posts on food blogs and sites for baked polenta fries, in which a rather lengthy  process is detailed. First, the polenta is cooked from scratch (it's kind of like a coarse cornmeal mush for those of you not familiar with it); then it's spread into a dish in which it cools and firms up; then the fry shapes are cut from that. And because food blogs usually want to present recipes that involve more than one or two ingredients, seasonings are added to the mix, as well.

I, too, presented such a recipe. And much as I love polenta fries, I have to admit that I never made them that way again.   • Food processor with grater attachment

Ingredients

  • 2 large beets peeled and cut into chunks (or see note if you'd like to lightly cook the beets)
  • ½ small cucumber cut into chunks
  • 1 medium apple sweet variety, cut into chunks
  • 1 medium carrot peeled and cut into chunks
  • 2 tablespoons fresh dill minced, add more to taste
  • 1 scallion thinly sliced
  • Juice of 1 to 2 lemons to taste
  • 3 tablespoons agave nectar or to taste
  • salt and freshly ground pepper to taste
  • vegan sour cream purchased or homemade, or Cashew Cream for topping, optional
US Customary - Metric

Instructions

  • Grate the beets, cucumber, apple, and carrot in a food processor fitted with the grating blade. Transfer the grated ingredients to a soup tureen or some other kind of serving container such as a deep, steep-sided casserole dish.
  • Fill the container with enough water to give the soup a dense but not overly crowded consistency. Stir in the dill and scallions.
  • Add the juice of 1 to 1 ½ lemons (depending on how large and juicy they are), and the agave. Season gently with salt and pepper.
  • Cover and let the soup chill for at least 3 hours. This can be made the morning before you want to serve it for dinner, or the day before. Just before serving, taste and add more lemon juice and agave to your liking.
  • Serve garnished with a dollop of vegan sour cream or cashew cream, if desired.

Notes

If you prefer beets lightly cooked, just use your favorite cooking method, whether in the microwave or on the stovetop. Don't overcook! Cook just until they can be pierced, then plunge them in a bowl of ice water until they're cool enough to handle.

Here's a quick and clever way to make potato fries without a lot of peeling and cutting. Fingerling potatoes, if you are not familiar with them, are small potatoes with a long, narrow shape-hence their name. They come in several varieties; I like to use organic golden fingerlings like Russian Banana. These fries are ready, from start to finish, in about 20 minutes.

These fries are great served alonside almost anything! Serve them alongside your favorite vegan burgers, some vegan nuggets, or even a nice salad.

How to Make Fingerling Potato Fries

  1. Clean potatoes and cut into fries.
  2. Simmer potato fries in water in a pan until soft.
  3. Drain water from skillet.
  4. Drizzle oil into the skillet.
  5. Cook potatoes on all sides until golden brown.
  6. Stir in seasonings.

Can you change the seasoning for these fries?

You can easily change the seasonings for your homemade fries. Just add in whatever flavor of spices you want at the end of cooking. Try some paprika, Italian seasoning mix, or even rach dressing powder!

How long do these fries last?

You can store your leftover fries in the fridge for up to 1 week. However, these fries taste best when they are fresh. The longer you store your fries, the less crisp they will be.

These Fingerling Potato Fries are quick to make and super versatile. Once you make your own homemade fries, you'll never look back!

Ingredients

  • 1 ½ lbs fingerling potatoes
  • 2 tablespoon safflower oil or other high heat oil
  • scallions thinly sliced or cut into long ribbons, optional
  • salt to taste
  • paprika to taste (see note)

Instructions

  • Scrub the potatoes well. No need to peel them, but do peel away any overly dark or knobby spots, of which there should be few.
  • Cut each potato in half lengthwise, which results in a short, chunky fry shape.
  • Place the cut potatoes in a nonstick skillet with ½ cup water. Bring to a simmer, then lower the heat and cover. Simmer steadily for 5-8 minutes or until the potatoes can be pierced with a knife but are still quite firm, stirring occasionally.
  • Drain any excess water from the skillet.
  • Set the skillet back on the heat and drizzle in the olive oil.
  • Turn the heat up to medium-high and cook the potatoes, stirring frequently, until touched with golden brown on most sides, about 5-8 minutes.
  • Stir in the optional scallions. Remove from the heat and season with salt and paprika.

Notes

If you'd like a spicier flavor, try Spanish paprika, which has a smoky and more intense flavor than sweet paprika.

Pasta salad with parsley pesto and two squashes

This flavorful summer pasta salad, featuring zucchini and yellow summer squashes, is a good choice for a vegan/vegetarian potluck, yet easy enough to make as part of an everyday meal. It's delicious with grilled vegetables and vegan burgers.

Pasta salad with parsley pesto and two squashes recipe

Serves: 8 or more

  • 1 packed cup parsley leaves
  • Several basil leaves, optional
  • ¼ cup toasted pine nuts or ½ cup walnuts halves, toasted or not
  • Juice of ½ lemon, plus more, to taste
  • 2 tablespoons extra-virgin olive oil
  • 6 to 8 ounces penne pasta or other, preferably whole grain
  • 2 medium-small zucchinis, quartered lengthwise and sliced
  • 1 medium-small yellow summer squash, cut to match zucchini (see note)
  • ½ medium red bell pepper, finely diced
  • ⅓ cup sliced sun-dried tomatoes
  • 1 to 2 scallions, thinly sliced
  • Salt and freshly ground pepper to taste
  • Dried hot red pepper flakes, optional
  • 1 cup or so halved cherry or grape tomatoes

Combine the first 5 ingredients in a food processor along with ¼ cup water, and process until the mixture is coarsely and evenly pureed. Set aside.

Cook the pasta in plenty of rapidly simmering water until al dente. Just before draining it, add the squashes to the water, and simmer for a minute or so. Drain and rinse the pasta and squashes under cool water, then drain well again.

Combine the squash and pasta mixture in a large serving bowl with the bell pepper, dried tomatoes, and scallions. Add the pesto and toss well.

Season with salt and pepper and add a bit of heat with red pepper flakes if you'd like. Add a bit more lemon juice if you'd like. A combination of lemon juice and salt, judiciously added, helps bring up the flavor. Scatter the tomato halves over the top and serve.

Note: Of course, you can reverse this and use two yellow squashes and one zucchini, or one of each plus another kind of tender summer squash like pattypan.
