Chocolate Raspberry Banana Smoothie

If you've been stuck in a strawberry-banana smoothie rut (no judgment - it's a classic for a reason), this chocolate raspberry banana smoothie is here to shake things up. It's frosty, filling, and tastes a little bit like dessert, even though it's actually good for you. The chocolate almond milk does a lot of the heavy lifting flavor-wise, and the raspberries bring this gorgeous tartness that cuts right through the richness. Balanced, beautiful, and ready in five minutes.

I created this one on a whim when I had a bag of frozen raspberries taking up space in my freezer and a very ripe banana that needed to be used now. I threw in some chocolate almond milk thinking it might be weird - and it was anything but. My family immediately asked me to make it again the next morning. That's how you know.

Key Ingredients & Substitutions

Banana - The base of this smoothie. A ripe banana gives the most natural sweetness. Freeze it ahead of time for an extra thick, frosty texture - just peel and freeze it in a zip-lock bag the night before.

Raspberries - Fresh raspberries are wonderful when they're in season, but frozen raspberries work beautifully any time of year and actually make the smoothie colder and creamier. I keep a bag in the freezer year-round just for this.

Chocolate almond milk - This is the secret weapon. It gives the smoothie that deep chocolate flavor without adding any cocoa powder or sweetener. You can swap in any plant-based chocolate milk - oat, soy, or coconut all work great.

Hemp seeds - Optional but highly recommended. They add a protein boost and a little healthy fat without changing the flavor. Great for keeping you full through the morning.

Vanilla extract - Just a small splash rounds out the chocolate flavor and adds a little warmth. Easy to skip if you're in a rush.

Helpful Tips

Freeze your banana ahead of time. A frozen banana makes this smoothie so much thicker and creamier - almost milkshake-like. Just keep a stash of peeled, frozen bananas in your freezer and you'll always be ready.

Use frozen raspberries for a frostier result. If you're using fresh raspberries, add a few ice cubes to get that chilled, blended texture. Frozen raspberries can go straight from the freezer into the blender.

Start with less liquid. It's always easier to add more almond milk to thin it out than to fix a smoothie that's too runny. Start with ¾ cup and add more as needed.

Blend in stages. If your blender struggles with frozen fruit, pulse a few times first before blending on high. This helps everything break down evenly.

Variations

Triple berry: Swap half the raspberries for frozen blueberries or blackberries for an even more antioxidant-rich blend.

Chocolate peanut butter: Add a tablespoon of peanut butter or almond butter for a thicker, nuttier smoothie that's seriously satisfying.

Mocha smoothie: Add a shot of cooled espresso or a teaspoon of instant coffee for a grown-up, caffeinated twist.

Green smoothie: Toss in a big handful of spinach - you won't taste it at all, and you'll get a nice nutrient boost hidden under all that chocolate-raspberry flavor.

Protein smoothie: Stir in a scoop of your favorite vegan chocolate protein powder for a post-workout version.

Tips & Tricks for Dragon Fruit Smoothie

High Speed Blender 

I highly recommend using a high-speed blender. Using a high-speed blender will ensure that all your fruit is well blended and that your smoothie has a creamy texture. If your blender isn't fast enough, you will find that the texture of your smoothie is off. 

Thickness of the Smoothie 

You can adjust the texture of your smoothie by adding certain ingredients! Add extra fruit to make your smoothie nice and thick. You can also add extra plant based milk to help thin out the smoothie.

Variations to Dragon Fruit Smoothie

Added Fruit 

Feel free to change up the fruit you add into this smoothie. Any fruit you have on hand will work great. Toss in some frozen pineapple, kiwi, mango, etc. Create whatever flavor combo you prefer!

Flaxseed 

Add in a little flaxseed to add in extra nutrients. Sneak in a tablespoon or two for your kids who are going to sip this smoothie-or great nutrients for you! 

Plant-Based Yogurt 

Instead of milk, you can use a vanilla plant-based yogurt. This will give you a thicker and richer smoothie.

Dragon fruit is a mild fruit when it comes to flavor. You will find fresh dragon fruit offers the flavor of a pear mixed with a kiwi. Dragon fruit is a delicious fruit that tastes great mixed in with other fruits. 

Can you freeze dragon fruit? 

You can freeze dragon fruit if you buy some from the store. This is a great way to prep your fruit and keep it ready to toss in smoothies like this.

Dragon fruit can be tricky to find, depending on where you live. So if you find some, go ahead and buy a lot so you can freeze some for later!

How do you store leftover smoothie? 

If you don't drink all your smoothie right away, don't worry-you can save it! Store your leftover smoothie in an airtight container for 1-2 days in the refrigerator. When you're ready to eat it, just give the smoothie a stir, pour into a glass, and enjoy.

Protein Chocolate Smoothie Bowl & Cookie Dough Bites

This protein-packed vegan chocolate smoothie bowl is the definition of dessert for breakfast! Serve it with the chewy secret ingredient cookie dough bites to start your morning in a healthy, yet delicious way. Gluten-free, oil-free, dairy-free.

You can quite often find me in the kitchen experimenting with new smoothie bowl recipes. From banana ice cream to frozen cauliflower and colorful superfoods, it's easy to throw together something new every day.

And as long as you don't go overboard with any of the ingredients (I've had a few spinach-y disasters in the past), it's quite hard to go wrong in terms of taste. No wonder everyone on Instagram seems to love them!

Simply throw a few ingredients into a blender, and you've got yourself a hydrating, nourishing breakfast.

These vegan smoothie bowls are:

  • Packed full of vegan protein. While I don't struggle with protein on my vegan diet, I definitely like to look for interesting ways to boost my intake!
  • Creamy and super smooth.
  • Ready in ten minutes. Definitely goes to show that healthy eating doesn't have to be boring or time consuming.
  • Exactly like eating dessert for breakfast.
  • Perfectly chocolatey.
  • Gluten-free.
  • Oil-free.
  • Refined sugar-free. 

Vegan Chocolate Smoothie Bowl

However, the one thing I struggle with is that fruit and veg-only smoothies don't keep me full for very long. No matter the portion size, my stomach starts rumbling again within half an hour.

My go-to solution that doesn't take the option of enjoying a bowl of fruity goodness of the table is 'buffing up' my smoothies with healthy fats or a source of protein (a few tablespoons of oats works like magic too).

I love adding avocado to green smoothies, cashews to banana ice cream and nut butters to pretty much anything. Avocado also makes an incredible brownie - try our fudgy avocado brownies for proof.

Protein powders are great for extra flavor and helping build muscle and recover from working out at the same time.

Tofu in smoothie bowls?

The protein base of this chocolate smoothie bowl is tofu. Before you run away, hear me out. Of course, tofu is a go-to plant based protein source for many, but I don't blame you if you don't automatically think to put it in a smoothie.

I saw a couple other people do it, which made me skeptical at first. I feared a weird texture and aftertaste. But now that I've given it a go myself, I'm definitely not going back.

You might ask which tofu variety you should use. The recipe works really well with silken tofu, which makes the texture smooth and silky. I like using firm tofu too for a thicker texture that's a little bit like ice cream.

The trick is to use a high speed blender or a good quality food processor, to make sure you're not surprised with any tofu chunks.

No-bake Cookie Dough Balls

Chickpeas are simply amazing. Hummus is an obvious favourite recipe. Cookie dough is not so obvious - but with a few extra ingredients, you can turn beans into dense bites of deliciousness.

Of course, you can make and eat them by themselves, storing them in the fridge for an energizing snack (In fact, I'd recommend leaving them in the fridge for at least half an hour for optimal results).

But when eaten together with the protein smoothie bowl, these cookie dough balls take an already amazing breakfast to the next level.

I added protein powder for a hint of extra flavor. It's optional, as the chickpeas contain a lot of protein in themselves.

Plus, you can adjust the amount of maple syrup used depending on how sweet you want them to be. If you don't use protein powder, I'd recommend adding a few tablespoons extra syrup to bring in more sweetness.

Ingredients and Substitutions

For the cookie dough bites:

  • Chickpeas.
  • Protein powder. Use either a vanilla, a chocolate, or a neutrally flavored one. (I like this vanilla one.)
  • Dark chocolate.
  • Plant based milk of your choice. (I prefer almond milk.)
  • Maple syrup.
  • Almond butter, or any nut or seed butter of your choice.
  • Shredded coconut.

For the smoothie bowl

  • Banana.
  • Tofu, either silken or firm.

How to Make the Vegan Smoothie Bowl

5 Best Vegetables for Acid Reflux and Heartburn — and a Smoothie

It is a well-known fact that diet plays a decisive role in the annoying symptom known as heartburn or acid reflux - often as a trigger, or root cause.

Changing your diet can help resolve heartburn symptoms for the long run. Some foods have substantial alkaline effects that help alleviate acid reflux quickly and effectively.

Here, we'll discuss the 5 best vegetables for acid reflux and heartburn - remedies you'll find in any produce section or farm market.

Studies are now showing us that certain unexpected vegetables are in fact great home remedies for acid reflux symptoms. The same studies are also showing that other groceries have so far been overrated as heartburn remedies. 

At the end of the article we'll show you an easy and tasty anti-heartburn smoothie recipe, which combines the power of all these natural ingredients.

Home Remedies or drugs?

There are many potential causes for heartburn, and you should always talk to your doctor about the possible root cause. But what can be done if you have acute heartburn right now? 

One option is medication, like antacids or PPIs. I assume, as you found your way to this site, that this isn't your goal. And that is very good! Many of the available drugs will indeed help against heartburn, but will often cause more severe or risky side effects.

And here I want to emphasize the "home" in remedy. Ideally you want an effective remedy that you already have at home for other reasons (like food for example).

The goal of this article is to present you with 5 vegetables, which almost everyone already has at home and which are excellent remedies for heartburn, as recent studies show. They act as natural antacids to neutralize stomach acid.

Vegetables for neutralizing stomach acid

Out of pure interest, I always keep one eye on the study situation around acid reflux and heartburn. Because of that I have recently encountered two very interesting, fairly recent studies of that topic.

  • Study 1 (December 2016)
  • Study 2 (April 2017)

Both studies research how effectively certain foodstuffs can be used as antacids (for neutralizing stomach acid).

These foods support restoring the natural gastrointestinal balance and the function of this tract. They help buffer the acid reflux, support the digestion process, reduce the burning sensation and soothe the inflamed stomach lining.

The study investigates the antacid effect of several foodstuffs and compares their effects to water and to the active controls: sodium bicarbonate and a marketed antacid (ENO). The foods used during this study were broccoli, cucumber, kale, radish, lemon juice, cold milk and curd.

While lemon juice unsurprisingly fails to deliver antacid effects, all the other foods - broccoli, cucumber, kale, radish, and spinach - proved to be strong antacids. 

However, I would like to expressly point out the risks of milk and curd as home remedies for heartburn.

Although these have a positive effect on many people in the short term, as the studies have shown, they are unsuitable for safely fighting heartburn. Cow's milk is both difficult to digest and relatively greasy, and therefore remains in the stomach for a long time, thus stimulating gastric acid production. Hence, I would not recommend the milk products (milk or curd), nor lemon juice at all.

Both studies conclude that the tested foods have significant antacid effects, and can therefore be recommended as anti-heartburn additives for your own diet. All 5 vegetables are highly alkaline, but also extremely healthy in many other regards.

The 5 winners and the benefits for your health

Here is an overview of the 5 tested vegetables and a summary of their benefits to your health.

Cucumber

The cucumber includes so-called proteases (enzymes with a protein cleaving function). Thus, cucumber helps to more easily digest protein rich nutrients. The enzymes also clean the intestine by killing bacteria. 

Additionally, there are antioxidant substances in a cucumber, which reduce for example the risk of heart diseases.

The cucumber is also one of the most calorie-free foods: one hundred grams contain only about 12 calories. This is mainly due to the high water content (about 95%). So a cucumber can also be a pretty good thirst quencher.

Furthermore, it contains not only water, but also many vitamins such as B (stress control), C (antioxidant - good for the heart), E and minerals like iron, calcium, phosphorus, zinc, magnesium, potassium (sustain healthy blood pressure).

Please note that most of the vitamins actually are in the cucumber peel. So it's best to buy untreated cucumbers or to wash them very well, and eat the skin. And if you use the cucumber as a smoothie or shake ingredient, it is best to blend it with its skin still on.

With regard to heartburn, cucumbers are an alkaline food and thus neutralize acid in the body by increasing the pH value.

Who knew cucumbers were so healthy?! They're also tasty - try them in this hummus and cucumber wrap or this watermelon cucumber cooler.

Fresh spinach in a bowl

Spinach

Spinach helps against heartburn, as we have shown in the studies above. But this is only one of many benefits of this amazing vegetable.

The alkaline characteristics of the spinach are crucial with regard to heartburn and make it an excellent antacid. But this characteristic is just one of many health benefits.

In short, according to a study by the University of Manchester, spinach is extremely healthy and first and foremost protects the eyes in two ways:

  • By a very high percentage of beta carotene, spinach protects against night blindness.
  • Through the contained lutein, spinach also protects against AMD, an age-related eye disease.

With one serving of spinach, you cover your daily requirement of beta carotene, vitamin K, fiber and manganese, as well as about half of the magnesium requirement.

Spinach also contains various antioxidants. These have been proven to possess anticancer properties (skin cancer, stomach cancer, breast cancer and prostate cancer).

Furthermore, the magnesium contained in the spinach helps the cardiovascular system by regulating the blood pressure. Even one portion raw spinach salad is sufficient to lower high blood pressure within a few hours.

Kale - fresh bunch curly

Kale

Kale is also a vegetable with highly alkaline properties and therefore suitable as a natural remedy for heartburn.

But just like the other vegetables listed here, this is just the tip of the iceberg. Kale is generally extremely healthy. It contains lots of vitamin K and C, iron, calcium and many antioxidants.

Due to the high quality of the contained protein, it is often recommended as a healthy alternative to animal proteins. As studies prove, kale is a true superfood and possesses various healing effects.

I love kale - this massaged kale salad and this white bean and kale skillet are two of my favorite ways to enjoy it.

Broccoli

Broccoli is highly alkaline as well and therefore a strong antacid - an excellent food for heartburn. But this is just its side job, so to speak.

Broccoli is also extremely healthy and is one of the great vegetables that have been shown to have a preventive and combative effect on a wide variety of cancers (Study 1 - Ohio State University, Study 2 - University Hospital of Heidelberg/Germany).

However, this topic is beyond the scope of this article. If you are interested in all the details of the anti-carcinogenic properties of the broccoli, I can recommend this summary page from Greenmedinfo to launch for your further reading.

But apart from this sensational property, broccoli can do so much else for your health:

  • It strengthens the immune system by possessing a high proportion of beta-carotene, zinc and selenium.
  • Broccoli supports the fight against diabetes. The low sugar and high fiber content can be used to minimize insulin requirements.
  • The risk of heart disease and stroke is minimized due to lutein, B6 and folate.
  • Broccoli contains a lot of vitamin K and the calcium content is even higher than many dairy products. This helps build and maintain a healthy bone structure.
  • The amount of potassium, calcium and magnesium supports the regulation of blood pressure.
  • It's even known to be a cold remedy, thanks to the vitamin C, antioxidants and inflammation inhibitors.

Daikon radishes

Radish

Radish is a great remedy for heartburn, as already noted above, and it's also very healthy for other reasons. Not everyone likes this root vegetable because of its spiciness.

This characteristic flavor stems from the radish containing a high amount of mustard oils, which are an additional help against your heartburn.

Varieties of radish include horseradish, daikon, red radishes, and many others. Mustard oils soothe the stomach and also lower the production of stomach acid.

Furthermore, the mustard oils have a healing effect on bile and the liver.

Other benefits of radishes are a low calorie and fat content, as well as being rich in vitamin C. Approximately half the daily requirement is covered by just 200 g of radish.

Anti-reflux vegetable smoothie

Anti-Heartburn Smoothie

How about a wonderful, extra-healthy anti-heartburn smoothie made from all of the above ingredients? For me this has worked wonderfully against heartburn, whenever I've had some in the past weeks. And it tastes a lot better than you'd think!:

Makes: 1 green smoothie

  • A handful of raw spinach (regular or baby spinach
  • 3 to 4 broccoli florets (uncooked),
  • 1 leaf of kale - fresh and without stems (because of the tough fibers it's best to chop it a little, unless you have a very powerful blender).
  • ½ cucumber
  •  3- or 4-inch piece horseradish or a handful of regular radishes, chopped (depending on your taste and spiciness of the radish, you can vary the quantity).
  • Water as needed
  • ½ peeled orange to sweeten, optional

Combine everything in a blender. Blend until completely smooth, and enjoy!

2. Green smoothies are much healthier than fruit or vegetable juices. When juices are extracted, you get vitamins and minerals but no fiber. However, smoothies are made using the whole fruit/vegetable, so you get all the fiber in your drink.

3. Green smoothies are a great way to eat your veggies easily. Although most people like fruit, many have trouble getting their daily requirement of veggies. When you make a green smoothie, the taste of the greens is hidden by the taste of the fruit, so you don't even notice the veggies are there.

Fruits are a good source of energy, but eaten alone will only provide short bursts of energy (they contain lots of sugars, which are quickly metabolized). Because of their high content of veggies, green smoothies have a balanced sugar content.

8. Green smoothies are low in calories but very filling. Because they contain high amounts of water and fiber, they'll make you feel as if you just ate a full meal. If you're trying to lose weight, green smoothies will help fight hunger and cravings while helping the pounds melt off easier.

9. Green smoothies are easy to digest. Because they're already blended and liquefied, smoothies are quicker to digest. After all, your body no longer needs to work so hard to "break down" the food in order to extract the nutrients. People who suffer from indigestion after eating a heavy meal will also benefit, as smoothies are filling but light.

10. Green smoothies will keep you hydrated. Although one should drink at least eight glasses of water a day, experts believe most people don't drink even half that amount. One of the reasons for that is that many people simply don't like the taste of plain water. If that describes you, simply add more water to the mix as you prepare your smoothie. You'll be drinking more liquids without even noticing it.

Tips, Tricks, & Variations

This recipe will make two 12-ounce or three 8-oz servings.

I used fresh spinach in this green smoothie. But you could also substitute kale if you prefer. I have also had readers report success with frozen spinach, but I would suggest defrosting and writing out the extra moisture before using it.

Any type of nondairy milk will work fine in this smoothie. I prefer almond milk but soy or cashew milk are also great choices. For a thicker smoothie, try substituting a dairy free yogurt instead.

The hemp or chia seeds are totally optional, but highly recommended. They add a nice punch of protein, and also help thicken up the smoothie.

  • 2 big handfuls baby spinach
  • 1 medium apple cored and cut into large chunks
  • 3- to 4- inch piece cucumber preferably peeled, cut into chunks
  • 1 cup unsweetened vanilla nondairy milk or water or half of each
  • 1 to 2 tablespoons hemp seeds or chia seeds optional

Kale, banana, and avocado join forces in this creamy, filling smoothie. Hemp seeds are optional, but they're one of the best, most concentrated sources of Omega 3s-better (and tastier) than flaxseeds. They make a great addition to this creamy smoothie. Look for both hempseeds and hemp milk at most any natural foods market.

This smoothie is full of nutrition, making it a perfect way to start your day! Serve it for breakfast with a bowl of granola, a tasty breakfast cookie, or a homemade muffin. You can also whip up this smoothie as a great post-workout or afternoon snack!

How long does this smoothie last?

This smoothie isn't meant to be stored. You can refrigerate it for a day if you can't drink it all at once, but I don't recommend it. If you know you won't need so much smoothie, you can easily reduce the ingredient amounts.

Do I need to add lemon juice and agave nectar?

You don't techinically need the lemon juice or agave nectar for this recipe. The lemon juice adds a nice citrus-y flavor to the smoothie-and helps it keep its green color a bit longer! And the agave nectar makes it a bit sweeter. But if you're fine with the flavor without these two ingredients, then you can just serve your smoothie plain.

Oil: A little oil helps smooth out the texture. I like using neutral oils like avocado oil or grapeseed oil, but you can also use olive oil for a richer flavor. Just add it slowly to get the perfect consistency.

Salt: A touch of salt brings out the natural flavors of the pumpkin seeds. You can adjust the amount to your taste preference or omit it entirely if you're watching your sodium intake.

Apple Cider Vinegar

This might seem like an odd cake ingredient, but it reacts with the baking powder to give the cake a perfect rise. I suggest using a high quality apple cider vinegar like Bragg's for the best results.

Sugar

This recipe calls for granulated sugar. Depending on the region you live in, your regular old white sugar may or may not be vegan. In the US, you will want to choose a brand clearly marked organic or vegan. This one from Whole Foods is cheap and vegan friendly.

Tips and Tricks

Parchment Paper is Your Friend

To ensure your cake layers come out of the pans cleanly, don't skip lining your pans with parchment paper.

Cool Completely

Patience is key. Frosting a warm cake can lead to a melting disaster! So make sure to let the cake cool all the way down to room temperature before frosting it. You can speed up the process by putting it in the fridge for a bit.

Storing the Cake

Cover the cake and store in the fridge for 4-5 days. You can also freeze the cake for up to two months. If freezing, you will want to remove from the freezer to thaw the day before you plan to serve it.

Replace the all-purpose flour with your favorite gluten-free flour blend for a gluten free version. Be sure to choose a gluten free brand of sprinkles too.

While rainbow sprinkles are classic, feel free to use any vegan-friendly sprinkle variety you like. You can theme this cake to just about any occasion by just changing out the sprinkles. Halloween? Ingredients

For the Cake:

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar organic
  • ½ cup rainbow sprinkles vegan-friendly
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ⅓ cups unsweetened non-dairy milk such as almond or soy
  • ½ cup vegetable oil
  • ¼ cup unsweetened applesauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon pure vanilla extract

For the Vegan Funfetti Frosting:

  • 1 cup vegan butter softened
  • 4 cups powdered sugar sifted
  • 2 teaspoons pure vanilla extract
  • 2-4 tablespoons unsweetened non-dairy milk as needed for consistency
  • ¼ cup rainbow sprinkles
  • Additional rainbow sprinkles for decoration

Instructions

For the Cake:

  • Preheat your oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper for easy removal.
  • In a large mixing bowl, sift together the flour, sugar, baking powder, and salt. Stir in the rainbow sprinkles to distribute evenly.
  • In another bowl, whisk together the non-dairy milk, vegetable oil, applesauce, apple cider vinegar, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  • Divide the batter evenly between the two prepared cake pans, using a spatula to smooth the tops.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.

For the Vegan Buttercream Frosting:

  • Using a hand mixer or a stand mixer with the paddle attachment, beat the vegan butter until creamy.
  • Gradually add the powdered sugar, 1 cup at a time, beating well after each addition.
  • Add the vanilla extract and 2 tablespoons of non-dairy milk. Beat for an additional 3-5 minutes or until the frosting is light and fluffy. If the frosting is too thick, add more non-dairy milk, one tablespoon at a time, until reaching the desired consistency.
  • Once the cakes are completely cool, place one layer on a serving plate or cake stand.
  • Spread a layer of frosting on the top of the first cake layer, then place the second cake layer on top.
  • Frost the top and sides of the cake with the remaining buttercream frosting, smoothing it out with a knife or spatula.
  • Decorate the top with additional rainbow sprinkles to match the Funfetti theme.
  • Chill the cake in the refrigerator for at least 30 minutes before slicing to allow the frosting to set.

How to Make A Pina Colada

Helpful Tips For Making Pina Colada

High Speed Blender 

Make sure that you are using a high speed blender. This is going to ensure the mixture really blends well together. Plus the higher speed will break down the frozen pineapple chunks in the recipe. 

Frozen Pineapple 

Make sure your pineapple is frozen, or it will alter the texture of your cocktail. Just place pineapple on a lined baking sheet and freeze for 1-2 hours. Do a single row of pineapple to ensure it evenly freezes. Or buy pre-frozen pineapple to cut a corner of prep. 

Variations to Pina Colada Recipe 

Rum 

I used a dark rum for this recipe. But you are welcome to swap it out with a lighter rum if you want. Or even try out vodka for another twist. 

Coconut Shavings 

Consider adding on some coconut shavings to the top of your drink to showcase the coconut in the drink. You could even blend some coconut up with the pineapple mixture. It will be a bit chewy when you sip. 

Coconut Ice Cream 

If you want to give this a sweeter flavor, swap the coconut cream with coconut ice cream that is dairy free. This is going to enhance the flavors even more and it offers a creamier texture.

Pina Colada FAQs

Are pina coladas healthy? 

You will find that depending on the ingredients used it depends. Some recipes will use a lot of pineapple, coconut cream, and such, which does add in sugar, calories, etc. So use your judgement on brands of each item you need. 

Can I make this cocktail ahead of time?

I find it is best to serve this up right before you are going to enjoy it. That way it doesn't melt and break down too much and dilute the flavor of the drink. 

Does this recipe double well? 

Go right ahead and make as many of these cocktails as you want. Just make as much that fits in your blender. If you want more then just batch mix up the pina colada mixture then pour in glasses and serve. 

What can I use instead of a simple syrup? 

If you would like you can swap the simple syrup out with a maple syrup. You use the simple syrup to help sweeten up the drink. So just reach for a maple syrup to swap in, if you prefer. The sweeten to your preference. 

How to adjust the thickness of the cocktail? 

Add more liquid to thin up the pina colada. Or to thicken it toss in extra frozen pineapple. Then mix and adjust the ingredients as needed.

Scrape Down Sides of Blender 

As you are mixing up the dragon fruit in the blender make sure to scrape down the sides. Some pieces can stick to the sides, so you want to ensure you get it all blended. 

Sweeten To Taste 

If you find you want your lemonade sweeter simply stir in some extra maple syrup. Or if you find it is too sweet you can add a bit more water to help dilute the sweetness.

Sweetener

If you do not want to use maple syrup you can sweeten the lemonade anyway you want. I do find that using a liquid sweetener is best. If you use granulated sugar it can leave a crunchy texture if it doesn't dissolve. 

Other Fruit 

So I used just dragonfruit for this recipe, but you could add in some fresh strawberries or even kiwi to help add an extra layer of flavor to your lemonade.

How to store lemonade? 

Leave out the ice, and store your lemonade in the fridge in a sealed pitcher. Then put the ice in each glass and pour the lemonade on top. Make sure to stir between pouring to ensure all the ingredients are incorporated. 

Does this recipe double well? 

Yes, you can easily double or triple the recipe if needed. I have made a larger batch for parties and the recipe doubles well. 

How to know if dragon fruit is ripe? 

Dragon fruit that is ripe will be bright in color. Then grab the fruit and gently squeeze it. You want it to have some give and not be rock hard. If the fruit feels mushy or extra soft, it is overripe. 

Can I make this an alcoholic drink? 

Simply add in a shot of vodka or even rum to make this an alcoholic lemonade. If you want a stronger drink you can add additional alcohol to the lemonade.

This quick and easy vegan peanut butter dip is perfect for dipping fresh apples, veggies, or spreading on toast or crackers. And it's ready in just 5 minutes!

I whipped this up one afternoon as a quick snack one afternoon when I was craving something a bit sweet. And it's turned out to be one of my new favorite vegan snack!

How to Serve Peanut Butter Dip

I served this vegan peanut butter dip in so many ways, but my favorites are:

  • As a dipping sauce for fresh apple slices.
  • As a topping for celery sticks.
  • Spread on a slice of whole wheat toast for breakfast.

This could even make a great lunch served on a slice of toast alongside a delicious and healthy green smoothie.

Variations

Any nut butter can replace the peanut butter in this dip - try cashew butter or almond butter for a creamy alternative.

This dip does not need to be measured exactly, just throw the ingredients in your blender and blend away. If you need a bit more nondairy milk to get it to blend, add some. If you need more maple syrup or another date to sweeten it, add it. Experiment! It really is hard to mess up this mixture of ingredients. They just go together and come out great.

This is also a great way to incorporate flax seed into your diet. Flax is high in Omega-3 essential fatty acids which are good fats shown to have heart healthy effects. Flax is also high in fiber. In order to absorb these nutrients, the seed must be broken apart in a blender or grinder.

These easy chocolate dipped apricots and hazelnuts are sure to be your new favorite homemade snack! You can make a big batch of these fruity chocolates at the start of the week and take some with you every day to school or work.

They're also great as a pre- or post-workout treat or a simple dessert with a cup of coffee. And they're delicious when scattered atop a smoothie bowl.

Tips & Tricks

What's great about these homemade chocolates is that they require just 3 ingredients - either prunes or dried apricots, hazelnuts and dark chocolate. That's it!

I've used hazelnuts for this recipe, but you can swap these for any other nut of your choice, such as macadamias, cashews, pecans, etc.

When choosing chocolate, you can also choose whichever one you prefer. I like to use a dark variety with at least 70% cocoa solids, but vegan milk chocolate works too.

Make the Chocolates

It really is super easy!

Start by melting the chocolate either on the stove, or microwaving it on medium power for 1-2 minutes. Meanwhile, stuff the dried apricots with the hazelnuts.

Then, dip the apricots in the chocolate one by one and leave to set in the fridge for around 30 minutes on a sheet or parchment paper.

Here, I propose a kind of chia pudding-very interesting for breakfast or a snack.  It's a raw and healthy recipe with a touch of the season from the apples and cinnamon.

Ingredients

  • 1 cup of coconut milk
  • 5 tablespoons chia seeds
  • 1 cup apples diced
  • Juice and grated rind of a lemon
  • 1 tablespoon agave syrup
  • 1 teaspoon cinnamon
US Customary - Metric

Instructions

  • The day before, mix the chia seeds, coconut milk, agave syrup, and lemon juice in a container.
  • Cover the container and store in the refrigerator.
  • The next day, peel and cut apples into small cubes.
  • Cook the apples with ¼ cup water for 10 minutes, until you obtain a sauce.
  • Add chia-coconut milk preparation to a small container.
  • Place the apples sauce on top of the mixture.
  • Sprinkle with cinnamon and grated lemon zest.

How to Eat Dragon Fruit? There Are More Ways Than You Might Imagine

Pitaya, better known as dragon fruit, is probably the most unique-looking edible fruit on the planet. The fruit itself has a bright pink outer skin with a kiwi-like inside. The taste is vaguely similar to kiwi, though it is more like a crossover between a kiwi and a pear. Pitaya is actually a cactus fruit, and the cactus stem gives it plenty of moisture and a very specific succulent taste.

Apart from the exotic look and taste, dragon fruit is also packed with immune-boosting nutrients like manganese, minerals, and vitamins. However, you might be wondering—how do you eat it?

Well, you shouldn’t be intimidated by the unusual look of this plant because it is surprisingly simple to eat. But before you actually eat one, you should know how to pick up the best dragon fruit.

Selecting the Best Dragon Fruit

Chances are that a well-stocked supermarket in your neighborhood will offer dragon fruit all year round. To get the best pitayas, you should aim for the period when the fruit is in season. Peak dragon fruit season begins in the summer and lasts until early autumn.

Generally, you should go for a pitaya that has a uniform bright pink color. It is OK to get a fruit with some blemishes. However, if there are a bunch of blotches on the skin, it indicates that the fruit is too ripe. You should also squeeze the fruit a little to make sure that it is neither too soft nor too firm.

It is also worth mentioning that dragon fruit is native to both Asia and Central America and that there are some small differences between these two fruits. Namely, the Asian pitaya is not as sweet as the Central American. Also, the kiwi-like flesh is red in the Central American fruit.

How to Eat Dragon Fruit Raw

Similar to most other exotic fruits, pitaya is best when eaten raw, though it can also be a great addition to smoothies, fruit salads, and even fruit kebabs. First, you should know how to properly extract the succulent flesh in order to avoid the bitter dragon fruit skin.

You need to do the following:

  1. Put your dragon fruit on a clean flat surface or a cutting board and cut it into two halves. It is quite easy to cut the fruit, but you should make sure to get a sharp knife for an even cut. Hold the fruit with your other hand so it doesn't budge.
  2. After you cut it, you need to remove the skin from the fruit. If you've ever skinned an avocado, removing the pitaya skin should be plain sailing. Use a tablespoon to carefully get the flesh out and go around each dragon fruit half until you completely remove the flesh.
  3. Once you get the flesh out, you should check if there is any skin left on it. Peel or cut the leftover skin because it is not suitable for eating. Now you can cut the dragon fruit flesh any way you want and enjoy the specific taste of this exotic plant.

Some Extra Tips

If you have a melon baller, you can scoop out the pitaya flesh to create bite-sized balls. There is no reason not to eat the dragon fruit straight from the skin in a similar way you would eat an avocado. Just avoid digging in too deep because the skin might add some unpleasant bitterness.

There is also a way to filet the flesh out of the dragon fruit. Cut it into halves and then quarters and run your knife from to bottom between the skin and flesh.

Other Ways to Eat Dragon Fruit

At this point, you should have a perfect understanding of how to eat dragon fruit raw. However, there are some other ways to consume this healthy exotic treat.

Blending the dragon fruit into a mouth-watering smoothie might be the most common, but did you know that you can also grill it?

Here is how to eat dragon fruit on a kebab or as part of a smoothie.

Chili Powder Dragon Fruit Kebab

This recipe provides you with a taste few other kebabs can match. The sweet dragon fruit complements the pineapple, and both fruits are well-rounded with a chili powder seasoning on top.

Ingredients:

  • 1 dragon fruit
  • 1 pineapple
  • Some extra virgin olive oil
  • 1 teaspoon of chili powder
  • A light pinch of salt

Preparation:

  1. Remove the skin from the pineapple and dragon fruit, then cut them into bite-sized cubes. Once you've finished cutting, put the cubes into a bowl and add the chili powder and salt. Toss the bowl a few times so you get an even seasoning all around.
  2. After you've seasoned the cubes, thread them onto a skewer. Each skewer should have an equal amount of pineapple and dragon fruit. Make sure to leave enough space at the bottom of the skewer so you can turn them on the grill.
  3. Put the fruit kebabs on a grill and turn until each side becomes light brown. You should brush the kebabs with the olive oil every so often so they do not stick to the grill. In about 10 minutes, your dragon fruit kebabs will be ready for serving.

Simple Dragon Fruit Smoothie

Dragon fruit mixes really well with most fruits and other vegan ingredients. This recipe gives you an idea of how to prepare a healthy and tasty smoothie quickly and easily.

Ingredients:

  • 1 dragon fruit
  • 1 banana
  • A cup of blueberries
  • A cup of soy milk
  • Sweeteners to taste

Preparation

  1. Cut the dragon fruit and the banana into chunks, put them in a blender together with the blueberries, and add a spoonful of your favorite sweetener.
  2. Pour a cup of soy milk and blend the fruits until you get the desired smoothness. You can add some extra soy milk to thin the smoothie.
  3. Once you are happy with the thickness, pour the dragon fruit into glasses and enjoy.

I love hash browns. No, seriously. I'm a bit of a hash brown connoisseur. So these potato waffles from the Real Food, Really Fast cookbook are right up my alley.

What separates award-winning hash browns from merely adequate hash browns all comes down to texture. They should be perfectly crisp on the outside, yet tender and creamy on the inside.

And that's exactly why these hash brown waffles are so perfect. Using a waffle iron instead of a traditional frying pan, gives a far more satisfying crunchy crust, while keep the potatoes in the center nice and creamy.

Tips & Tricks

Squeeze any excess water from the shredded potatoes before mixing them with the other ingredients. This helps ensure a nice crispy potato waffle!

Preheat the waffle iron so it's nice and hot before you begin. All waffle irons are a little different in terms of time needed to heat up, so consult your manual if you are unsure. It needs to be fully heated to get a crispy potato waffle.

Work in batches if you need to. I used a four-waffle iron, but yours may make just one or two waffles at a time. That's fine, just work in batches.

The vegan butter can be substituted with coconut oil, if you prefer. It will lend a little bit of coconut flavor to the hash brown waffles.

Top your waffles with your favorite vegan-friendly garnishes. I like to serve them with sliced avocado and a sprinkle of crushed red pepper. Other great options are salsa, dairy free sour cream, or melted dairy free cheese shreds.

  • 1 pound frozen shredded potatoes thawed
  • 1 ½ tablespoons vegan butter or coconut oil, melted
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat the waffle iron.
  • Squeeze any excess water out of the shredded potatoes, if necessary, before tossing them into a large bowl.
  • Mix in the melted vegan butter, salt, and pepper, stirring thoroughly to incorporate. Make sure that the potato shreds are all evenly coated before proceeding.
  • Lightly grease the waffle maker. Distribute the potato mixture equally between four waffle squares, covering the surface as evenly as possible while packing it in firmly. (If your waffle iron makes a single waffle, work in batches.)
  • Close the lid and make sure that it locks to ensure full contact with the hash browns. Cook on medium-high for 5 to 8 minutes, until golden brown all over. Serve right away, while still hot and crisp!

You can also find ready-to-cook shredded potatoes in the refrigerated sections of some grocery stores, alongside prepared and packaged side dishes.
