How to Make Vegan Nutella

  1. Start by preheating the oven to 350°F. 
  2. You want to spread out all your hazelnuts onto a pan and roast as directed on a baking sheet. 
  3. Toss roasted hazelnuts into a food processor and pulse until you have a thick nut butter. 
  4. Once the nut butter is ready, pour in the coconut oil and melted chocolate. Then add in the vegetable milk, vanilla, maple syrup, and sea salt. Process a bit longer until well mixed. 
  5. Transfer to an airtight container and store.

Thickness

When making homemade chocolate hazelnut spread, you will find that storing the Nutella in the refrigerator will leave it thicker. If you store it at room temperature, it will be a bit thinner in texture. 

Remove Skins From Hazelnuts

One easy way to remove the roasted hazelnuts' skins is to place them on a dishtowel. Then fold the towel over and rub vigorously to remove the shells. This will give your chocolate nut spread a creamier texture.

Swapping Nuts

Consider swapping out the hazelnuts for another nut like cashews or almonds. Granted, it will no longer be a hazelnut spread. But you can essentially roast, blend, and mix any kind of nut just like hazelnuts to make a chocolate nut spread. 

High Powered Blender 

It would be best to use either a high-speed blender or food processor to get the right consistency for your nut spread. Otherwise, you will find your nuts don't break down enough to make it as creamy as you would hope. 

Frosting 

When making a homemade frosting, consider adding some of the spread to give it a Nutella flavoring! This chocolate nut spread is so easy to incorporate into baking and other sweet desserts.

Can I Use Artificial Sweeteners In Vegan Nutella? 

You will find that using artificial sweeteners will stiffen up the spread. That is why I recommend using maple syrup or date puree to add enough sweetness to the spread. 

How Can I Use Nutella Spread? 

This chocolate Nutella spread can be used to spread on waffles, toast, stir in batters for cookies, cakes, and more. For a delicious waffle pairing, try these vegan pumpkin waffles, or spread it over vegan lemon ginger scones for a delicious twist. Or you can eat a little off a spoon. Ingredients

  • 400 g raw unsalted hazelnuts skinned
  • 100 g 60% dark chocolate
  • 2 tablespoon coconut oil melted
  • 4 tablespoon maple syrup or 3 tablespoon date puree
  • ½ cup vegetable milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
US Customary - Metric

Instructions

  • Heat your oven to 175°C (350°F).
  • Spread the hazelnuts in a baking tray, and roast for 15 minutes.

  • Remove from the oven, and place into a food processor or high-speed blender.

  • Blitz for a few minutes, until you have a thick and creamy nut butter. (You'll probably need to stop and scrape down the sides of the bowl-or jar-a few times.)

  • While the nuts are processing, break the chocolate into small pieces and melt with the coconut oil.

  • Once the nut butter is ready, add the melted chocolate and coconut oil, maple syrup, vegetable milk, vanilla extract, and salt.

  • Blitz for another couple of minutes, until everything is completely mixed together and smooth.

  • Transfer to a sterilised jar, and store at room temperature or in the fridge for a thicker texture. It will remain good for a month.

Traditional all bran muffins have been given a plant based makeover, in these easy vegan bran muffins. This healthy and delicious breakfast muffin can be even more fun with the addition of your favorite mix-ins. Try adding raisins, dried cranberries, dried blueberries, chocolate chips, or diced apples. Your imagination is the limit!

I loved the traditional All Bran Muffins that I had growing up. So of course, I had to do my best to make a vegan-ized version of that very special treat.

The easy vegan bran muffins are one of my favorite make-ahead breakfast recipes. They're quick and simple to throw together over the weekend, and have breakfast ready all week long.

These vegan bran muffins are:

Tips & Tricks

Wheat Bran - I used this wheat bran from Bob's Red Mill. But you can use your favorite brand.

Flour - I used a whole wheat flour for my vegan muffins, as it's a bit healthier. But you can also substitute all purpose flour and the recipe works just fine.

Ground Flax Seed - Don't skip the flax seed in this recipe (I used this brand!). When mixed with the liquid in the recipe, the flax seed works like a sort of glue to hold the batter together. It helps take the place of the eggs in the original recipe.

Non Dairy Milk - I used almond milk in this recipe, but you can substitute any kind of dairy free milk that you prefer. Soy milk and oat milk both work very well.

Variations

Try experimenting with your favorite mix-ins. Add ¼ cup of any of these to your batter for a fun treat. The combinations are endless!

My favorite mix-ins are:

  • Chocolate Chips
  • Diced Apples
  • Raisins
  • Dried Berries (like cranberries or blueberries)
  • Nuts (like almonds or walnuts - chop them up first!)
  • Sunflower Seed

  • 1 ⅓ cups whole wheat flour can substitute all purpose flour
  • 1 cup wheat bran
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • ⅛ teaspoon salt
  • 1 ¼ cups almond milk or other nondairy milk
  • ½ cup applesauce unsweetened
  • 2 tablespoon ground flaxseed
  • 1 ½ teaspoon vanilla extract
US Customary - Metric

Instructions

  • Preheat oven to 350F degrees. Line muffin tins with liners.
  • In a stand mixer, combine the flour, wheat bran, brown sugar, baking soda, and salt.
  • Add the almond milk, applesauce, ground flaxseed, and vanilla extract.
  • Pour batter into the muffin tins, and bae for 22-25 minutes. They are done when a toothpick inserted into the middle of the muffin comes out clean.

Notes

Feel free to add ¼ cup of raisins, chocolate chips, or nuts for a fun variation.

Make a delightful and cruelty-free meal with this easy Vegan Mushroom Risotto-a tasty comfort dish that's both easy and takes few ingredients. Lightly seasoned and brimming with simmered mushrooms, enjoy your perfectly cooked risotto.

When it comes to rice dishes like this vegan mushroom risotto, Vegan Fried Rice with Tofu, Rice Stuffed Tomatoes, and Spanish Vegan Paella, they're true comfort food. They always leave you extremely satisfied and they truly don't take a ton of effort.

I always feel like it's time for a nap or a good book in front of the fire after a meal like this. I might just include a glass of Vegan Eggnog or a Vegan Chocolate Chip Cookie while I'm at it. 

Dishes like this are great for a vegan meal because they can be customized as desired. If you're not a fan of mushrooms, you can always swap it out for another vegetable or add more vegetables to the mixture. You can also adjust the seasonings and thickness of the meal to your preferences. This risotto recipe is pure gold and the perfect go-to dinner dish. 

How to Make Vegan Mushroom Risotto from Scratch

  1. Saute - Heat some oil in a pot and saute the onion, garlic, and mushrooms until the onions are translucent. Cover pot until mushrooms release water. Add the rice and saute for a couple of minutes. 
  2. Simmer - Add half the stock and let simmer for 15-20 minutes. Add half of the remaining stock and let simmer for another 10 minutes. Add the last of the stock and simmer for another 5-10 minutes. 
  3. Season - Season with salt and pepper, to taste. Serve with some fresh herbs on top and enjoy!

Tips and Variations

  • Storage - Store in a sealed container, in the fridge, for up to 5 days. Store in an airtight container, in the freezer, for up to 2 months.
  • Reheating - Reheat in the microwave or over the stove. Be sure to add a bit of broth or water so the rice won't be dried out upon reheating. 
  • Add more vegetables - This recipe is easy when it comes to adding ingredients. I love adding in some spinach, cabbage, zucchini, etc. Whatever you like! Just remember to ensure those veggies are cooked appropriately as you don't want to be biting into crunchy, uncooked veggies. 
  • Use other rice options - If you can find risotto, you can always use arborio rice, sushi rice, jasmine rice, or similar types of rice. 
  • Make it thinner - Add more vegetable stock and simmer a little less for a thinner risotto. 
  • Make it thicker - You can mash the rice a bit or lighten up on the stock in order to make it thicker. 
  • Make it creamy - Swap out some of the stock for full fat coconut milk. This will make the rice and sauce creamier and add another bit of flavor to the mix.
  • Make it with leftover rice - If you have leftover rice you can skip the long simmering period and just toss in the rice. Be sure to reduce the stock by about half or more.

What Goes with Mushroom Risotto?

Since rice is such a widely encompassing ingredient, there are tons of side dishes that go well with this mushroom risotto recipe. A light soup is always one of my go-tos such as Vegan Broccoli Cheddar Cheese Soup, Vegan Potato Leek Soup, or Vegan Asparagus Soup. I always love to add in Vegan Stuffed Mushrooms, Vegan Cornbread, or even a Cucumber Tomato Salad. Get creative because the sky's the limit with side dishes on this one. 

Is Risotto a Main Dish?

Risotto is a type of rice (sometimes mistaken as a type of pasta as well). So, in and of itself, it's commonly served as a side dish. However, like this risotto recipe, it can be turned into a main dish by adding a few simple ingredients. For a vegan dish, this is often various vegetables and the risotto is cooked in vegetable broth.

Ingredients

  • 6 cups vegetable stock
  • 16 ounces mushrooms sliced
  • 1 ½ cups risotto
  • 1 onion diced
  • 2 tablespoons olive oil
  • 1 tablespoon garlic minced
  • salt and pepper to taste
US Customary - Metric

Instructions

  • Heat up olive oil in a pot. Saute onion, mushrooms, and garlic until the onions are tender (about 3-5 minutes).
  • Cover the pot until the mushrooms have released water (5-7 minutes).
  • Add the rice to saute with the vegetables for 2-3 minutes.
  • Stir in 3 cups of vegetable stock and cover. Let simmer for 15-20 minutes or until the stock has been absorbed.
  • Add another 1 ½ cups of stock and let simmer for another 10 minutes or until the stock has been absorbed.
  • Add the last cup and a half of stock and let simmer for 5-10 minutes or until it is absorbed.
  • Season with salt and pepper to taste.

Vegan Red Velvet Cake

This vegan red velvet cake is rich, chocolatey, and topped with a decadent dairy-free buttercream frosting. You would never guess it's entirely vegan!

This dairy-free red velvet cake recipe pairs a rich chocolate cake with a sweet, creamy buttercream frosting - the perfect party cake!

How to Make Vegan Red Velvet Cake

  1. Mix together the non-dairy milk and vinegar. Add oil, vanilla extract, and red dye. 
  2. In another bowl, combine all dry ingredients, and then add the wet ingredients. Mix until you have a smooth, red batter.
  3. Pour the batter into a cake pan, and bake.
  4. Make the frosting by beating together sugar and butter. Add non-dairy milk, and whisk until it's creamy. 
  5. Cut the cake into 3 layers.
  6. Spread the frosting on the first layer of the cake, and then cover it with the second layer. Repeat with the last cake layer. 
  7. Decorate
  8. Store the cake in the fridge for up to 5 days.

Dry the Fruit Before Topping

When you use fruit to decorate a cake, always be sure to dry it thoroughly first so it doesn't make your icing soggy.

Mix up the Toppings

Crushed nuts such as walnuts or pecans also make a great cake topping. They're pretty and add a satisfying little crunch.

You can also use colored sugars for something a little more festive. Or simply top it with sprinkles, like this vegan birthday cake.

Make Red Velvet Cupcakes

You can easily convert this vegan cake into cupcakes instead of cake. Just pour the batter into cupcake liners - I like these re-usable ones - filling each ⅔ of the way full.

You will want to reduce the baking time to 30-40 minutes. It depends a bit on the type of cupcake pan and liners you use, so check in on them often.

How do I store the cake?

Red velvet cake is best stored in the refrigerator, where it will stay fresh for up to 5 days.

What type of dairy free milk should I use?

There are a number of plant-based milks that you can choose from for this recipe. Almond milk, soy milk, coconut milk, oat milk are all good options that will work well.

Personally, I love using coconut milk for cakes because it makes the cake really moist. It will add a slight coconut flavor, but I promise it's delicious!

What is Icing Sugar?

Icing sugar is just another name for powdered sugar or confectioners sugar. They are all the same product. I like this brand.

How do you make red velvet cake without buttermilk?

This vegan option mixes together apple cider vinegar and non-dairy milk, which is a great vegan substitute for buttermilk.

Ingredients

Dry Ingredients

  • 2 ½ cups self raising flour
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • Pinch salt

Wet Ingredients

  • 1 ⅓ cup non dairy milk
  • ⅔ cup sunflower oil or substitute a light olive oil
  • ¼ cup apple cider vinegar 60 ml
  • 1 teaspoon vanilla extract
  • 2 tablespoon red food coloring

Frosting

  • 1 cup vegan butter
  • 1 ½ cup icing sugar 268 g
  • 1 tablespoon non dairy milk such as almond or soy milk
  • Vanilla extract optional
US Customary - Metric

Instructions

  • Preheat the oven to 350 F (180C). Grease a baking pan. Gather ingredients.
  • Mix non dairy milk and vinegar together. Leave for some minutes then add oil, vanilla essence and red dye.
  • In a large bowl, add all dry ingredients, combine all together then pour milk mixture into the bowl.
  • Mix everything together until you get a red batter. Pour batter in baking mould. Transfer on a baking tray and bake for about 60 minutes or until a toothpick comes out clean.
  • For the frosting. Beat icing sugar and butter together then add milk. Whisk until you get a white creamy texture.
  • Remove cake from oven and let completely cool down. With a sharp knife, remove the head of the cake to make it flat then cut the cake into 3 layers. Keep the head aside, don't throw it away.
  • Spread frosting on first layer then cover with second layer, repeat one more time. Use remaining frosting to decorate the whole cake.
  • Make crumbles with the head of the cake to decorate the top. You can add berries on top. I used cherries but feel free to decorate as you wish.
  • The red velvet keeps well in the refrigerator for several days.

Vegan Carrot Cake with Maple Cream Cheese Frosting

This vegan carrot cake is rich, flavorful, and topped with a decadent maple cream cheese frosting. This one-bowl recipe is super easy to make, 100% vegan, and simple to make gluten-free.

Ah - carrot cake. One of my all time favorite desserts. I mean, it's basically health food right? There's carrots in the cake, so I think that counts. 

Last year I created these pint-sized carrot cake cupcakes over on my vegetarian blog, which are totally adorable and delicious. But they weren't 100% plant based. 

So of course, I had to go ahead and create a vegan carrot cake to share with you all this time around.

This vegan carrot cake is: 

  • Topped with a decadent vegan cream cheese frosting! 
  • Rich, moist, and totally delicious.
  • 100% vegan and vegetarian friendly.

Tips for Perfect Vegan Carrot Cake

Making flax eggs. Flax eggs make a sturdy substitute for traditional eggs in this vegan cake, helping to hold the thick batter together. To make a flax egg - simply whisk together 1 tablespoon ground flaxseed and 3 tablespoon water. (You can also grab this free printable vegan substitution chart for a handy reference!) 

Make it gluten-free. This recipe is 100% gluten free when made with a gluten-free baking flour. I love this one, because it can be swapped out in a 1:1 ratio for all-purpose flour. 

Use your favorite frosting. I think the vegan cream cheese frosting is totally worth the effort. But if you're short on time, feel free to use your own favorite instead. In fact, Duncan Hines Cream Cheese Frosting is actually dairy-free.

How to Make Vegan Carrot Cake

Making this vegan carrot cake is ridiculously easy. It's just all the ingredients tossed into one bowl. Then stir well with a wooden spoon or an electric mixer.

The cake batter is then poured into a greased cake pan, like the one you see below, and popped into the oven to bake for 30-35 minutes at 350 °F.

I love one-bowl cake recipes that don't require me to mix all the wet and dry ingredient separately and dirty everything in my kitchen!

For a fancy celebration cake, follow the recipe instructions to create three layers. Alternatively, you could make a two layer cake with two 8" pans.

And it's even delicious served "naked", without the frosting. Although I don't know what kind of person skips the frosting. 😀

How to Make Vegan Cream Cheese Frosting

It's pretty hard to beat cream cheese frosting. It's such a rich, distinct taste that there's not really a substitute. 

So I created my own version of vegan cream cheese frosting, inspired by this one that I saw on Minimalist Baker.

I used a store-bought vegan cream cheese as the base for my frosting. I'm usually not too big on commercially prepared products like these, but in this case it's the simplest way to get a result that resembles REAL cream cheese frosting.  

What is vegan cream cheese? Well it tastes much like real cream cheese with a tangy sour cream flavor and a firm texture but is completely dairy free.

It's made from ingredients like soy protein, plant based fats, nuts and natural enzymes. You can find it in the dairy or produce department of most grocery stores. 

I added a bit of vanilla and maple syrup to infuse extra flavor. I think it really gives the frosting something special! 

I used a stand mixer to whip together the vegan cream cheese, dairy-free margarine, confectioner's sugar, vanilla extract, and maple syrup. You'll want to whip it until it's really creamy and fluffy!

Remember to let the cakes cool down completely before adding the frosting! 

Use a generous amount of frosting, about ½ cup for each layer. As you assemble the cake, level off each layer of icing using a spatula to make sure the layers are smooth and even. (An offset spatula like this is easiest to work with!) 

Once the layers of the carrot cake are assembled, cover the entire cake with the vegan cream cheese frosting.

Get the icing as smooth as you can with your spatula. Finish off by decorating the cake with chopped nuts. I used a mixture of walnuts and pecans - but pistachios would be delicious too!

CAKE BATTER

  • 3 tbsp ground flaxseed
  • ½ cup water
  • ⅓ cup coconut oil melted
  • 1 tablespoon lemon juice
  • ¼ cup maple syrup
  • 1 cup brown sugar
  • ½ cup sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 2 teaspoon vanilla extract
  • 2 cups all-purpose flour or gluten-free baking flour
  • 2 cups carrots grated

FROSTING

  • 8 oz vegan cream cheese room temperature
  • ½ cup vegan butter room temperature
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple syrup
  • ¾ cup walnuts or almonds chopped
US Customary - Metric

Instructions

  • Prepare the "flax eggs", which will be our vegan egg substitute. Whisk together the ground flaxseed and water in a small bowl. Allow to sit for 15 minutes to thicken before proceeding.
  • Preheat oven to 350 degrees Fahrenheit.
  • Prepare three 6" cake pans with nonstick spray. 
  • Combine all cake ingredients into a large mixing bowl or the bowl of a stand mixer. Mix until well combined into a thick batter.
    Note: If your batter seems too dry, you can add a bit of water or dairy-free milk to loosen it up. This is due to the varying moisture levels found in carrots.
  • Evenly distribute the batter between the three baking pans. Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean. 
  • Allow the cakes to cool for about 10 minutes in the pan. Then turn them out onto a wire rack to cool completely. 
  • While the cakes are cooling, prepare your vegan cream cheese icing. Start by creaming together the vegan cream cheese, vegan margarine, vanilla extract, and maple syrup until smooth. (This is best done in a stand mixer.) 
  • Slowly add in one cup of confectioners sugar at a time, whisking until combined. Continue mixing on high until the frosting is nice and fluffy.
  • It's time to assemble the cake! Place one layer on a cake stand or plate and top with about ½ cup of frosting, then level with a spatula. Continue with all three layers.
  • Finally cover the entire cake with the frosting, and top with chopped walnuts or pecans, if desired. Enjoy!

A hamantash is an Ashkenazi Jewish filled triangular cookie. We've come to the rescue by giving these traditional Purim cookies a vegan makeover!

I like to make these Purim cookies with at least two - sometimes even three - types of jam for variety and color. My personal favorite fillings are apricot preserves, strawberry jam, and prune butter. But you'll find these tasty treats in all sorts of flavor combinations!

What is a hamantasch?

A hamantasch (also spelled hamantaschen) is a traditional pastry eaten during the Jewish holiday of Purim. The pastry is shaped like a triangle or a pocket, with a filling typically made from poppy seeds, fruit preserves, or chocolate.

The name "hamantasch" is Yiddish for "Haman's pockets" or "Haman's ears," which refers to the villainous character of Haman in the Purim story, who is said to have worn triangular-shaped hats.

The triangular shape of the pastry is meant to represent either Haman's hat, his ears, or his pockets, and the tradition of eating hamantaschen on Purim is meant to symbolize the triumph of good over evil.

Making Vegan Hamantaschen Cookies

Traditional purim cookies are made with a butter-laden pastry, but it's simple enough to swap the butter for a plant-based vegan margarine instead. I recommend the Earth's Best buttery spread for this recipe!

I also eliminated the eggs and replaced the milk with a dairy-free almond milk instead. You could use another plant based milk of your choice as well - cashew milk or soy milk would work just fine.

And while many traditional recipes utilize a whole wheat flour, I have found that a mix of all purpose and whole wheat flours gives the best texture!

The Best Hamantaschen Fillings

For my vegan hamantasch, I used three different flavor jams: strawberry, peach, and blueberry. But you can get as creative as you like.

Here are some fun and tasty hamantasch filling ideas:

  • Fruit jams - strawberry, peach, apricot, blueberry, or raspberry
  • Poppyseed (a traditional choice.)
  • Lemon curd
  • Chocolate
  • Nutella hazelnut spread (check out this homemade vegan Nutella)
  • Salted Caramel
  • Apple Pie Filling
  • Prune preserves

Tips for Perfect Vegan Hamantaschen

Chill the dough: It's important to chill the cookie dough before rolling and cutting it. This will help the dough hold its shape when you fill and fold it.

Roll the dough evenly: Make sure to roll out the dough evenly to a thickness of about ⅛ inch. This will help ensure that the hamantaschen cookies bake evenly and hold their shape.

Don't overfill the cookies: Overfilling the hamantaschen can cause the filling to leak out during baking, while underfilling can result in a dry pastry. Use about a teaspoon of filling for each hamantaschen, and be sure to place it in the center of the dough round.

Fold the hamantaschen properly: To ensure that the hamantaschen hold their shape during baking, fold the edges of the dough up and over the filling to create a triangle, pinching the corners together firmly.

Ingredients

  • 1 cup all purpose flour
  • ½ cup whole wheat flour
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup vegan margarine such as Earth Balance
  • 1 teaspoon orange zest
  • ½ cup powdered sugar
  • 3 tablespoon almond milk plus a little extra if needed
  • ¾ cup jam for filling I used peach, blueberry, and strawberry
US Customary - Metric

Instructions

  • Preheat oven to 350 F (176 C), line a baking sheet with parchment and set aside.
  • In a medium bowl, mix together the all purpose flour, whole wheat flour and salt. Set aside
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the vegan butter and powdered sugar until light and fluffy,
  • Add in 3 tablespoons of almond milk, the orange zest, and the vanilla and mix well (it may not completely blend in and that is okay).
  • Add the flour mixture to the wet ingredients and mix until moistened.
  • Add additional almond milk if necessary until the dough is easily workable.
  • Cover the dough with plastic wrap and allow it to chill for at least two hours before proceeding.
  • Roll out to roughly ⅛" thickness on a lightly floured surface, then cut the dough into 2 to 2 ½ inch circles and transfer to baking sheet.
  • Add a small amount of jam (about 1 teaspoon) to the center of each circle, then fold the sides up and pinch to make a triangle shaped cookie. Pinch closed a bit more than you think needed, as they do open up while being baked. See the pictures for help with this part!
  • Bake in the preheated oven for 8-10 minutes, or until the hamantaschen are lightly golden

Quick Teff Crêpes (Easy Substitute for Injera)

Although these teff crêpes don't have quite the same texture or pronounced sourness typical of injera, they make a good stand-in on days when you want Ethiopian food quickly and don't have time for the fermentation process or access to commercial injera. They have a slightly spongy-stretchy texture, with a small bit of tang from the yogurt and vinegar, and work well for scooping up sauces and stews. Rice pudding is a comforting dessert that has been around since ancient times. But this Pineapple Rice Pudding recipe gives the classic treat a new life with some tangy fruit!

Kids of all ages can enjoy this updated comfort food as a snack or dessert. You can even serve this pudding packed in a thermos in your lunch box! This rice pudding is made with brown rice, almond milk, and-for extra fruity flavor-crushed pineapple.

When I want to get cozy, I prefer rice pudding over pretty much any other dessert. But I can also go for a decadent bread pudding, too, like this extra sweet and creamy Chocolate Chunk Banana Bread Pudding.

Scones are another great, old-fashioned treat. These Peanut Butter and Jam Scones aren't quite as sweet as pudding, but they still make for a great treat. Alternatively, a cup of delicious Vegan Gingerbread Hot Chocolate can keep you warm and comfy, too!

How to Make Pineapple Rice Pudding

  1. Combine rice with water in a saucepan.
  2. Bring to a boil, then simmer until the water is absorbed.
  3. When water is evaporated, add almond milk and simmer until absorbed.
  4. Remove from heat and allow to cool for 5 minutes.
  5. Stir in the remaining ingredients.
  6. Serve pudding warm or at room temperature.

Instructions

  • Combine the rice with 2 ½ cups water in a medium saucepan.
  • Bring to a boil, then cover and simmer gently until the water is absorbed, about 30 minutes.
  • When all water is evaporated, stir in the almond milk, and simmer until absorbed.
  • Remove rice from the heat and allow to cool for 5 minutes, then stir in the remaining ingredients.

How to Make Easy Vegan Peanut Butter Cookies

  1. Preheat the oven and prep your pan.

Tips & Tricks for Easy Vegan Peanut Butter Cookies

Mixing the Dough

I used a pastry cutter to mix the dough, but you can also use a fork. You want your dough to be well mixed to get to the proper consistency. 

Making the Lines

The classic look of peanut butter cookies include cross hatched lines on top. You can make these lines by pressing a fork into the cookie to leave tine marks. Press the fork into the cookie in both directions. Adding these lines is optional, but it is the classic way to bake this kind of cookies. 

Variations to Easy Vegan Peanut Butter Cookies

Sea Salt 

Add a dusting of sea salt on top of the cookies. The salt will enhance the flavor of the peanut butter in the cookies. Just a light sprinkle will do. 

Creamy vs Crunchy 

You can use creamy or crunchy peanut butter for this recipe. I switch back and forth between the two depending on my mood. Both types of peanut butter taste delicious in this recipe.

Chocolate

You can dip half your cookie in vegan melted chocolate or drizzle chocolate over the top. You could also mix some chocolate chips into the dough before baking, or add a large chocolate, like a Hershes kiss, to the middle. This is a fun way to enjoy a bit more sweetness!

How should I store these cookies? 

You can store your cookies in an airtight container on the counter. The cookies will store for 3-5 days. After that, you will find that the cookies can really become dried out. 

Do peanut butter cookies freeze well? 

You can go right ahead and freeze any cookies you don't plan to eat right away. Just place them in a freezer bag or container. They will last in the freezer for 3-4 months. When you're ready to eat them again, simply thaw the cookies on the counter for an hour or so, and then enjoy. 

Can you double this recipe? 

Feel free to make extra cookies. This recipe will double well-just batch cook the cookies, and then cool them on a cooling rack.

  • 2 cups peanut butter smooth, crunchy, or a combo; at room temperature
  • 1 cup flour whole wheat, pastry, spelt, or einkorn
  • 1 cup natural granulated sugar
  • ½ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 350°F.
  • Combine all the ingredients in a large bowl.
  • Work dough ingredients together with a pastry blender or the tines of a large fork until completely blended.
  • Scoop the dough up by rounded tablespoons, or a bit more if you'd like larger cookies. Arrange on a parchment-lined baking sheet.
  • Flatten the dough lightly with your palm, then press down lightly with a regular-sized fork in two directions to make that cool criss-cross pattern that peanut butter cookies are known for.
  • Bake cookies for 10 minutes, or until the bottom of the cookies are golden brown.
  • Allow cookies to cool for a bit to firm up, then transfer to a plate or container. Store cookies covered at room temperature.

Healthy Vegan School Lunch Ideas

Summer always seems to disappear quickly, and back-to-school days find parents scrambling to get the kids ready. One thing you can check off your to-do list is finding  healthy school lunch recipes.

If your child is vegan or vegetarian, that adds to the challenge. Don't despair! With our handy list of recipes and ideas, creating easy, tasty school lunches will be a breeze.

Here are some of the tips that will keep you sane from the first day of school to the last:

1. Keep your lunch-making supplies together.

Keeping everything you need for prepping lunches in one place makes for a much more efficient morning "rush hour." In one cabinet, you can store the lunch boxes, sandwich bags, thermoses, plastic spoons and forks, toothpicks, and small plastic storage containers. I also keep packaged snacks with these supplies for easy access.

2. Stock up on cold packs.

Make sure you have plenty of freezer packs available at the start of the school year. Somehow these things never make it back into my freezer in the evening, so having spares is essential. I like these slim ones that are easy to stack together in the freezer.

3. Vary the types of bread used for sandwiches. 

Bagels, rolls, pita pockets, English muffins, raisin bread, and even fresh flour tortillas or "wraps" can add interest to standard sandwich fare. Check out our sandwich and wrap recipes for ideas.

4. Consider a thermos.

Dishes that taste just as good warm or at room temperature are more successful than those that need to stay hot (but usually don't).

If your child's school has a microwave available, your thermos offerings can include macaroni and cheese, soups, and leftover casseroles.

5. Make fruit appealing.

Fruit packed into lunch boxes can come home uneaten unless you try some simple tricks. Small chunks of fruit, such as strawberries, grapes, melon, tiny seedless orange sections, and such, served on a skewer (long cocktail toothpicks are perfect), are always eaten.

Similarly, apple slices are more likely to be eaten if you supply a tiny container of peanut butter to dip them into.

6. Raw vegetables are better with dip. 

When sending carrots (or baby carrots), celery, bell peppers, etc. - cut them into strips and add a tiny container of your child's favorite dressing or dip.

Natural store-bought or homemade hummus is a great choice, as is vegan ranch dressing. Add wedges of pita bread for dipping, too.

7. Cereal is an unexpected treat at lunch.

Pack some nutritious cereal in a lidded bowl-shaped container, and your child can add his or her favorite nondairy milk to it (vanilla almond milk is particularly good with cereal) when it's time to eat.

Teamed with a banana, this makes a filling meal. And it's always fun to eat breakfast at "weird" times.

8. Make wholesome homemade muffins.

Muffins are always a crowd pleaser, and it's super easy to make tasty ones that are actually healthy too.

Pack a wedge of vegan cheese or a container of coconut yogurt, plus fresh fruit to go along with them.

9. Salads in pita bread or in wraps appeal to kids with more adventurous palates.

Augment simple salads of lettuce, tomato, peppers, and cucumbers with chickpeas, chunks of baked tofu, chickpeas or other beans, and grated nondairy cheese.

Keep pita sandwiches fresh by wrapping them first in foil, then placing them in sandwich bags.

10. Expand on PB & J.

Try cashew, almond, or sunflower butters, and no-sugar added fruit spreads or apple butter for a change of pace.

11. Pack a veggie burger.

Veggie burgers make a surprisingly good packed lunch. Serve it on a whole grain roll or English muffin, with your child's favorite condiments for a fun surprise.

12. Faux meats can expand lunch box variety.

Vegan deli slices might especially appeal to teens. "Chicken" or "turkey"-style slices on soft whole grain bread appeal to tastes of any age.

13. Vegan "Tuna"or "egg" salads.

13. Pasta salad is an appealing lunch option.

Add your child's favorite veggies-steamed broccoli, peas, corn and carrots, plus olives and their favorite dressing can add up to nice lunch box fare.

14. Wholesome homemade cookies.

Cookies make a perfect after-school snack when served with almond milk. And the next day, you can pack the extras in their lunch box. Check out these vegan cookie recipes to get baking!

SCHOOL SNACKS

Snacks packed for school, whether for snack time or as an extra treat for the lunch box, should be simple and neat.

Explore natural foods stores for packaged snack ideas. Their cookies, cereals, fruit bars, and such, are often naturally sweetened and low in fat.

Similarly, natural chips, rice puffs or crisps, and other crunchy snacks have less salt and fat than their supermarket counterparts.

Prices can sometimes (but not always) be a little higher, but you're getting more value for your money.

Here are some suggestions for school snacks:

  • Natural fruit leathers (or make your own fruit leather!)
  • Low-fat fruit and cereal bars
  • Granola bars
  • Good-quality, non-frosted toaster tarts
  • Dried fruit, such as apple rings or apricots
  • Trail mix (dried fruits with nuts and seeds)

First, gather up all your ingredients. Make sure that your bananas are nice and ripe so that they're easy to mash. And melt your coconut oil - I just stick mine in the microwave for a few seconds. And you're ready to cook!

Take your ripe bananas and mash them up in a bowl. Then, put them off to the side. We'll get back to them shortly.

Vegan Banana Pancakes {gluten free}

Then in a larger bowl, add your flour, baking powder, and salt. Stir these together so everything is evenly distributed, and add the melted coconut oil and vinegar.

Yes, you read that right. Vinegar. You're probably thinking, "Who would put vinegar in their pancakes?"

But it's actually more common than you might think, and it's the secret ingredient for this recipe! The vinegar will react with the baking powder, creating bubbles and lead to perfect, fluffy pancakes.

Now, slowly add in your vanilla almond milk and mix. And finally we get to the bananas! Add the bananas to the mix and stir everything into a thick pancake batter.

Vegan Banana Pancakes {gluten free}

You don't want your mixture to be too watery or too thick. If it's too watery, add a tablespoon of flour. If it's too thick, add a tablespoon of almond milk until you get the consistency you'd like.

Now, put your pan over medium heat. Spray on some non-stick spray and pour your batter onto the pan. You can make them as large or as small as you want.

I like to use about ¼ cup of batter for each pancake. You will want to cook your banana pancakes on each side for about two minutes or until golden brown.

Once you're all done, sprinkle your vegan banana pancakes with powdered sugar. Then top with fruit or syrup - or both! You can also eat these pancakes plain, and they are just as delicious.

Instructions

In January of 2018 there were near-riots in France as a grocery chain knocked down the price of Nutella, the popular chocolate-hazelnut spread that's gathering a following here in the U.S. But is it really worthy of that kind of devotion? After all, the first two ingredients are sugar and palm oil-not ideal fuels to start the day. An omnivorous colleague and I recently had a good-natured spat about cake. She insisted that non-vegan cake (or "real" cake, as she called it) was superior to the vegan version. Naturally, I challenged her to a cupcake battle.

Without telling them which was which, we had everyone in our office sample her non-vegan chocolate cupcakes and my vegan ones. In the end, only half could tell them apart. People kept asking me, "No butter? No eggs? What did you put in them?"

Vegan baking can be as inventive as hiding zucchini and black beans in desserts or as simple as making a vegan substitution. If you're working off an old family recipe or want to experiment with creating your own recipes, here are 5 simple vegan egg substitutes that are sitting in your kitchen right now.

Chocolate Chip Banana Muffins

Bananas

Bananas work as a binder, making them a great vegan egg substitute for baked goods. And-as a bonus-bananas add a dose of potassium too. They're sweet, so you might want to use less sugar than the recipe calls for (or, if you're me, forgo the extra tablespoon!). Using this substitute might add some banana flavor to whatever you're cooking, but with many baked goods, that just compounds the yum factor.

Substitute half a banana for one egg.

Try it in Laura Theodore's Chocolate Chip Banana Muffins.

Cornstarch

Using cornstarch as an egg substitute will thicken your batter, so it's best for recipes like cookies and puddings.

To replace one egg, mix one tablespoon of cornstarch with two tablespoons of water.

White Vinegar and Baking Powder

This combo is a great vegan egg substitute for cakes. It doesn't have a strong effect on the flavor of your cake as long as you also add a pinch of salt.

For each "egg," mix one tablespoon of water with one tablespoon of white vinegar in a separate bowl or glass. Then, stir in a teaspoon of baking powder. Now you're ready to add the mixture to your batter.

Cinnamon-Raisin Quick Bread

Applesauce

Like banana, applesauce doubles as an egg replacement and a sweetener. But it has the advantage of being an easier flavor to mask.

Opt for one-third of a cup of applesauce without baking powder (for a rich, dense cake or brownie) or one-fourth of a cup with a teaspoon of baking powder (for a light, fluffy dessert).

Water, Oil, and Baking Powder

In recipes that call for only one egg, a quarter cup of vegetable oil should be fine.

But for recipes that call for more than one, you can avoid a greasy baked good by whisking together two tablespoons of water, one teaspoon of vegetable oil, and two teaspoons of baking powder for each "egg" the recipe calls for.

It took a while for a virtual non-baker like me to get the hang of baking without eggs, but I did. One of my first projects was to learn how to bake vegan challah because I wanted my son to continue to enjoy his favorite Friday night ritual, safely. I found that it was easier, safer, and tastier to make it myself, rather, than to relentlessly ask questions at the bakery which only yielded nonchalant responses that could result in a potentially life threatening episode.

Often, my guests ask me for this recipe and as part of my mission, I now pass it on to you. Another benefit of this challah (aside from the fact that it is ridiculously simple) is that it is cholesterol-free for those family members or guests who are on restricted diets. Enjoy! These vegan blondies are moist, sweet, and loaded with butterscotch flavor. It's a nostalgic treat, and super simple and quick to make.

Blondies, a childhood favorite, turned out to be one of the most difficult recipes for me to master in vegan form.

Really, it should have been a breeze to figure out this seemingly foolproof idea, and yet my first trial pan of raw batter literally exploded all over the oven.

I wish I were exaggerating, but in all honesty, drippy streaks of sugar and margarine plastered the glass window from which I watched in horror.

Vegan Butterscotch Blondies

Thankfully, though it took a while to perfect my approach, the following 5 or 6 attempts only resulted in a trash can full of unsatisfactory baked goods rather than more kitchen disasters.

Now, I am happy to share my easy method for creating the delicious vegan blondies that I remember fondly from my pre-vegan days.

And thanks to all my rounds of testing, it doesn't require you to make the mess I did either. 😉

  • 6 ounces vanilla nondairy yogurt soy, coconut, or almond
  • ⅓ cup plain nondairy creamer ditto above
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

Instructions

  • Preheat your oven to 350ºF (175ºC) and lightly grease an 8 x 8 inch square baking pan.
  • Melt the vegan butter and pour it over the brown sugar in a medium bowl, stirring to coat.
  • Add the vanilla, yogurt, and creamer, and stir until homogeneous.
  • Slowly incorporate the flour along with the baking powder, stirring just enough to arrive at a smooth mixture.
  • Pour the batter into your prepared pan. Bake for 25 to 30 minutes, until the sides just begin to pull away from the pan and the top is fairly firm.
  • The blondies may still be slightly gooey on the inside, but they will continue to cook once removed from the oven. Besides, they are "fudgy" bars, so you don't want them to dry out! Wait for the blondies to cool completely before cutting.

If you're new to plant-based cooking, you may be looking for a guide to vegan substitutions to swap into favorite non-vegan recipes. Thankfully, there are plenty of products vegans can use in place of animal ingredients that will make vegan cooking a breeze. Let's cover how to replace animal ingredients with vegan ingredients.

Milk. It's so easy to substitute for dairy milk in a recipe. You can use soymilk, rice milk, oat milk, hemp milk, or nut milk measure for measure. Most supermarkets carry at least a couple of varieties. It's that easy! If you're a bit more ambitious you can make your own nondairy milk; there are lots of recipes online, or see ours for homemade almond milk or hemp milk. For a store bought option, I really like this almond milk from Silk.

Cheese. It's so easy to find all kinds of vegan cheeses these days. And wow, have these come a long way. You can get slices, blocks, shreds, slices, and more.

In place of cottage or ricotta cheese, you can use crumbled tofu, soaked raw nuts, or a combo. And though it won't be quite as creamy or meltable as the real thing, it will be very good indeed. See the formula in Italian Eggplant Casserole with Cashew-Tofu Ricotta, or use it in our vegan zucchini lasagna where tofu ricotta is the star. Or try this 5 Minute Tofu Ricotta recipe. You may need to spice it up with herbs and add some salt to make it work in your particular recipe. Vegan "Parmesan" is also super easy to make and better than what's on the market.

Craving some tangy feta cheese? No issue there - try this simple vegan feta recipe. It's briny and crumbly, just like real feta.

Pizza? No problem. Daiya mozzarella shreds work incredibly well. In my experience, Daiya and Follow your Heart brand cheeses have the best melting power.

Cream cheese on your bagel? Daiya has you covered there, too. There are other brands but these are VegKitchen's favorites. (No affiliation - we just like them.)

Be sure to read the label as some vegetarian cheeses contain casein, which is not vegan. If you can find a great vegan cheese that you like, use it in your recipes in the same manner that you would use dairy cheese.

Eggs. A great substitute for scrambled eggs is a tofu scramble. You simply use crumbled tofu and heat in a frying pan. Kids generally like tofu scramble, especially kids who have been vegan their entire lives. You can spice it up with tomatoes, peppers, onions, or even potatoes and vegan bacon bits.

You can also make a great vegan scrambled from chickpea flour - check out these vegan scrambled eggs for inspiration.

In baked goods, good substitutions for eggs include applesauce, pureed soft tofu, Ener-G egg replacer, a flax egg (1 tablespoon ground flax seeds plus 3 tablespoons water or other liquid, blended), or mashed bananas. You'll have to experiment with your recipe to see what works best for you.

In dishes where eggs are usually used for binding (such as meatloaf) you can use oat or soy flour, rolled oats, cooked oatmeal, bread crumbs, instant potato flakes, nut butters, tomato paste, or cornstarch.

Chickpea flour makes amazing omelets, and aquafaba is useful for making recipes that originally call for egg whites, like mousse and meringue. See useful links for these and more:

Beef or chicken stock. Replace beef or chicken stock with vegetable broth. Or use vegetable bouillon cubes.

Butter. There are vegan butters on the market that work well in substituting for butter. Be sure to read the labels because not all margarines are vegan. And sometimes mainstream margarines have questionable ingredients and hydrogenated fats.

You may also want to consider using oils like sunflower or olive instead of vegan butter. If you'd like to go with the major brands, make sure that the palm oil used is Fair Trade, otherwise it's an environmental hazard. And remember that the jury is still out on coconut oil!

Yogurt. Several companies make vegan yogurts that will substitute well in your recipes - soy, coconut, almond - more varieties are coming on the market each year. You can find them in fruit flavors and also plain for cooking and baking.

Sour Cream. Try plain nondairy yogurt, especially if used in making dips. There are also a few commercially available vegan sour creams on the market. Or, you can make your own Vegan Sour Cream using silken tofu. Delicious on all kinds of tortilla specialties and on cold soups like the Borscht shown above.

Mayonnaise. There are a few vegan mayonnaise products on the market. You can use vegan mayonnaise exactly the way you'd use non-vegan mayonnaise. Aquafaba can be used to make a great homemade vegan mayo (shown above from Serious Eats) as well.

Gelatin. If you need to substitute for gelatin in a recipe, use agar flakes or powder. It will thicken as it's heated. Also, there are a couple of companies that make a vegan fruit gelatin product that you should be able to find at your local health food market.

Honey. There are many liquid sweeteners on the market that you can use in your recipes instead of honey. However, they all vary in consistency and sweetness, making substitution a guessing game, at least initially. You may have to experiment with ratios until you figure out what works best in your recipes.

In general, however, maple syrup and agave nectar can be substituted measure for measure in recipes. Other sweeteners that are less sweet than honey include agave syrup, corn syrup, malt syrup, light and dark molasses, and brown rice syrup. Frozen fruit-juice concentrates, sorghum syrup, and concentrated fruit syrups range from being half as sweet to just as sweet as honey.

Sugar. Many vegans do not eat sugar since some brands are refined using bone char from animals. Others object to using sugar simply because it's often full of pesticides, and sugar plantation workers aren't always treated very well.

If you want to replace crystalline sugar in a recipe, here are some alternatives: beet sugar, fructose, natural organic sugar, unbleached cane sugar, turbinado sugar, date sugar, maple crystals, and granulated FruitSource. Some of these sugars dissolve better than others, so again, you'll have to experiment. As in other cases, using organic and fair trade products is the optimal choice.

Chocolate. Many people say they couldn't be vegan if it would mean giving up chocolate, but luckily they don't have to! There are many non-dairy vegan chocolate chips, cocoa powders, and chocolate bars. These are most easily found in the natural foods aisle of your supermarket, and of course, in natural foods stores. Once again, fair trade and organic are best.

Meat. If you want your foods to have a similar taste and texture to meat, you're in luck, because never before have so many companies been making vegan meat substitutes.

Among the products on the market now that will substitute for meat are: veggie deli slices (bologna, ham, turkey, and other flavors), veggie burgers, veggie meatballs, veggie sausage links and patties, veggie bacon, veggie ground "beef," soy chicken patties and nuggets, veggie meatloaf and Salisbury steak, veggie jerky, and whole "turkeys" for Thanksgiving or other holidays.

Check your vegan cookbooks for recipes for foods like "neatloaf," nut roasts, lentil-walnut patés, and other old favorites that traditionally contained animal flesh.

Ice Cream. Along with the proliferation of meat analogues, it's so easy to find vegan ice cream. This industry has grown tremendously. There are vegan ice creams based on soy, rice, nut, and coconut milks, and they're all delicious. Some are high in fat and some are fat-free.

Some are fruity like sorbet, while others are sinfully decadent like butter pecan, peanut butter zig-zag, or peanut caramel. You can also buy vegan ice cream sandwiches, mud pies, and ice cream bars. I've made some great shakes, floats, and malts using vegan ice cream products. Your kids will love them too!

If you're looking for the perfect vegan-friendly Fall dessert, you've come to the right place!

This pumpkin mousse is so good, it's a no-brainer. In fact, the only question is exactly when to eat it.

Personally, I'm a firm believer in dessert for breakfast. 😉 But of course, this pumpkin mousse also makes a delicious snack or after-dinner dessert.

This particular recipe comes to us from Jo Stepaniak's cookbook, Low FODMAP and Vegan, which I had a chance to test out. The whole cookbook is geared toward those with IBS that wish to enjoy a plant-based diet. How great is that?

Helpful Tips

Use canned pumpkin puree, not pumpkin pie filling. They look similar, but pie filling comes pre-sweetened and loaded with spices. You want to start with just plain pumpkin here.

Silken tofu is key. It gives this mousse that impossibly smooth texture without any dairy. Make sure it's silken tofu (not firm or extra firm), and give it a good blend until totally creamy - no lumps allowed.

Sweetness is subjective. If you like things really sweet, you may want to add a bit more maple syrup. Start with the recipe amount, taste, and add more if you're feelin' it. You can also substitute agave nectar, if you prefer.

Variations

Chocolate Pumpkin Mousse: Add 2-3 tablespoons of cocoa powder or melted dairy-free dark chocolate to the blender for a rich, chocolatey twist.

Low-Sugar Version: Cut back on the maple syrup and add a few drops of liquid stevia or monk fruit sweetener. You still get that sweet, spiced flavor without the sugar high.

Garnish game! Add a dollop of whipped coconut cream, a sprinkle of cinnamon, crushed graham crackers, or chopped toasted pecans to take your mousse to the next level.

Ingredients

  • 1 banana ripe, broken into pieces
  • ½ cup pumpkin puree canned, or sweet potato purée
  • ¼ cup almond milk or light coconut milk
  • 2 tablespoons creamy peanut butter no-salt-added
  • 2 tablespoons maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon

    
ground nutmeg

  • Pinch ground cloves or allspice
  • chopped toasted pecans optional, for garnish

Instructions

  • Put all the ingredients in a blender or food processor and process until smooth.
  • Spoon evenly into two small custard cups.
  • Serve immediately or cover tightly and chill for up to 3 hours. Garnish with the chopped pecans, if desired.

Everyone wants to know—what do vegans like to eat as the main dish for Thanksgiving? What do we think of Tofurky? (Answer: not our personal choice, but we have no problem with it if that's what vegans want. Holidays are about nostalgia and familiar fare, and it's certainly a more compassionate choice than the bird). (1) DIY: Homemade Almond Milk Recipe

 

  • Best-quality raw almonds - 1 cup (organic is even better)
  • Sea salt - 1 teaspoon
  • Distilled water - 2 to 4 cups (as per your preference)

Method:

  1. Take the almonds in a glass bowl and pour distilled water into it to soak them completely. Add sea salt to the water and cover the bowl with a lid. Keep it aside for nearly 12 hours.
  2. Rinse the swelled up almonds well under running water to get rid of all sorts of enzyme inhibitors.
  3. Now, put the almonds in a blender and pour rest of the distilled water into it. Blend thoroughly to mash all the nuts.
  4. Strain it or not, your creamy almond milk is absolutely ready!homemade almond milk

(2) DIY: Homemade Oat Milk Recipe

Ingredients:

  • Oats - 1 cup
  • Agave nectar or maple syrup - 1 to 2 tablespoons (as required for sweetness)
  • Sea salt - (¼) teaspoon
  • Distilled water - 3 cups

Method:

  1. Rinse the oats well and drain them perfectly before placing them in a bowl.
  2. Add water to it and cover with a lid. Let the oats soak for 8 to 10 hours so that they get softer as well as easier to process.
  3. Once again, rinse the oats well and remove the oat slime completely.
  4. Shift them to a blender and pour distilled water into it. Blend for some time and sieve it.
  5. Press the semi-pulverized oats with the backside of a spoon in order to take the maximum milk out of it.
  6. Add agave or syrup and sea salt to the concoction and your homemade oat ilk is here!

(3) DIY: Homemade Brown Rice Milk Recipe

Ingredients:

  • Sea salt - 1 teaspoon
  • Distilled water - 2 cups

Method:

  1. Clean and wash brown rice properly and soak it in water for a couple of hours.
  2. Cook it as usual.
  3. Now, place the cooked brown rice inside a blender jar. Also, add sea salt and distilled water to it.
  4. Blend until a smooth, thick milk is formed. Voila!
