This classic tabbouleh is everything a great salad should be - bright, herby, tangy, and refreshing. Make it the traditional way with bulgur, or swap in quinoa for a gluten-free version or couscous when you want something even faster.

Key Ingredients & Substitutions

  • Bulgur wheat. The traditional grain for tabbouleh - it has a nutty flavor, chewy texture, and cooks quickly on the stovetop. Medium or fine bulgur both work; fine bulgur soaks up the dressing especially well. Substitute couscous for a near-instant version, or quinoa to keep it gluten-free and higher in protein.
  • Fresh flat-leaf parsley. The star of the dish - don't hold back. Tabbouleh should be heavily green. Flat-leaf (Italian) parsley has more flavor than curly; use at least one large bunch, very finely chopped.
  • Ripe tomatoes. Use the best tomatoes you can find - they provide sweetness and juice that becomes part of the dressing. Cherry tomatoes, halved, work beautifully in summer. In winter, Roma tomatoes are your most reliable option.
  • Fresh lemon juice. Squeeze it fresh - bottled juice won't give you the same brightness. Start with one large lemon and add more to taste.
  • Extra-virgin olive oil. Use a good one; it's a primary flavor in the dressing.
  • Scallions. Milder than red onion and traditional in many versions. If you prefer the bite of raw onion, swap in ¼ cup minced red onion.
  • Fresh mint. Optional but excellent - a small handful of thinly sliced mint leaves adds a cooling note that makes this especially refreshing in warm weather.

Variations

  • Quinoa tabbouleh (gluten-free). Rinse 1 cup quinoa, then cook with 2 cups water for 15 minutes over low heat until absorbed. Cool completely before mixing in - quinoa releases liquid as it cools, so don't rush this step. The result is slightly nuttier and higher in protein than the bulgur version.
  • Couscous tabbouleh (fastest version). No stovetop needed. Place 1 cup whole-grain couscous in a heatproof bowl, pour 1¼ cups boiling water over it, cover tightly, and let stand 10 minutes. Fluff and cool, then mix in the other ingredients. On the table in about 20 minutes total.
  • Chickpea tabbouleh. Add a drained 15-ounce can of chickpeas to make this a hearty main-dish salad instead of a side.
  • Add olives. About ⅓ cup sliced Kalamata olives adds a salty, briny depth - especially good if you're not serving olives alongside.
  • Cucumber tabbouleh. Add 1 cup diced English cucumber for extra crunch and freshness. This is common in Lebanese-style versions.
  • Grain-free version. Replace the grain entirely with extra-finely chopped cauliflower (raw) for a low-carb tabbouleh that's surprisingly close to the original in texture.

Tips for the Best Tabbouleh

  • Cool the grain completely before mixing. Warm grain will wilt the parsley and make the salad soggy. Spread it on a baking sheet to cool faster.
  • Chop the parsley very fine. Rough-chopped parsley gives an uneven, chewy texture. Use a sharp knife and chop it until it's almost a finely minced pile - it should almost melt into the grain.
  • Let it rest before serving. Tabbouleh gets dramatically better after 30 minutes as the grain absorbs the dressing. An hour is even better. Make it ahead if you can.
  • Dress it twice. Add half the lemon juice and olive oil before resting, then taste and add more just before serving - the grain absorbs a lot and it often needs a second hit of lemon.
  • Season assertively. Tabbouleh is a bold salad - it needs more salt than you might expect, and plenty of black pepper. Taste it at least twice before serving.

How to Serve

Tabbouleh is a natural fit on a Middle Eastern mezze spread alongside hummus, warm pita, a handful of olives, and stuffed grape leaves. For a bold homemade dressing to accompany any grain salad, try our garlic mustard vinaigrette. For another fresh herb-forward salad, our tomato relish salad is bright and simple. It also works beautifully as a side dish for grilled or roasted vegetables, falafel, or lentil soup. Leftovers keep well in the fridge for up to 3 days - the flavors deepen overnight, though the parsley will lose some of its brightness. Give it a fresh squeeze of lemon and a drizzle of olive oil before serving again.

Ingredients

  • 1 cup bulgur wheat see notes for couscous or quinoa variations
  • 2 cups water
  • 3 medium ripe tomatoes diced
  • 1 cup fresh flat-leaf parsley finely chopped (about 1 large bunch)
  • 3 scallions thinly sliced
  • 2 tablespoons fresh mint leaves thinly sliced, optional
  • 3 tablespoons extra-virgin olive oil
  • 1 large lemon juiced (about 3–4 tablespoons)
  • salt and freshly ground black pepper to taste

Instructions

  • Combine the bulgur and water in a small saucepan. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 12 to 15 minutes, until the water is fully absorbed. For a more tender result, add an extra ½ cup water and continue simmering until absorbed. Remove from heat, fluff with a fork, and spread onto a baking sheet or large plate to cool to room temperature.
  • While the bulgur cools, dice the tomatoes, finely chop the parsley, and thinly slice the scallions and mint (if using). Juice the lemon.
  • Transfer the cooled bulgur to a large serving bowl. Add the tomatoes, parsley, scallions, and mint. Drizzle with the olive oil and lemon juice, then season generously with salt and pepper.
  • Toss well to combine. For best flavor, cover and let the salad rest at room temperature for at least 30 minutes before serving — this allows the bulgur to absorb the dressing. Taste and adjust salt, pepper, and lemon juice before serving.

Notes

Couscous variation: Skip the stovetop cooking. Place 1 cup whole-grain couscous in a heatproof bowl. Pour 1¼ cups boiling water over it, cover tightly with a plate or plastic wrap, and let stand for 10 minutes. Fluff with a fork and cool to room temperature, then proceed with the recipe as written.
Quinoa variation (gluten-free): Rinse 1 cup quinoa under cold water. Combine with 2 cups water in a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed. Miso-Butternut Squash Soup with Soba or Udon Noodles

This miso butternut squash soup has been a reader favorite on VegKitchen since 2018 - and it's just as cozy and satisfying as ever. We've given it a fresh update with brand-new photos, but the recipe is the same warming bowl we've always loved: a rich miso-ginger broth, tender squash, soba noodles, and a heap of wilted greens.

Key Ingredients & Substitutions

  • Butternut squash. Roasted or microwaved until just tender - it adds natural sweetness and body to the broth. Kabocha squash or sweet potato work as swaps and cook in roughly the same time.
  • Vegan miso paste. The soul of this soup. White (shiro) miso is mild and slightly sweet; yellow miso is a bit more savory; red miso is the boldest and most intense. Any variety works - just make sure it's labeled vegan, as some miso pastes contain dashi (fish stock). Stir it in at the very end, off the heat, to preserve its probiotic benefits.
  • Soba noodles. Buckwheat soba gives the soup its earthy, nutty character. Pure buckwheat soba is also gluten-free - just check the label, as many commercial soba blends include wheat flour. Udon noodles work equally well for a thicker, chewier texture.
  • Fresh ginger. Grated fresh ginger is essential here - it adds warmth and brightness that ground ginger can't replicate. Use as much as you like.
  • Vegan vegetable bouillon cubes. Two cubes give the broth depth and savory umami to complement the miso. Choose a low-sodium, MSG-free brand. Vegetable broth works as a direct substitute - just use it in place of the water.
  • Baby spinach. Stirred in at the end, it wilts in about a minute and adds color and nutrition. Watercress, baby arugula, baby bok choy, or any tender Asian green are excellent alternatives.
  • Frozen peas. A simple addition that adds sweetness, color, and a little extra protein. Thaw them before adding so they don't drag down the broth temperature.

Variations

  • Make it brothier. This soup is fairly thick as written. For a more broth-forward bowl, increase the water to 6 cups and add an extra bouillon cube.
  • Add tofu. Cube a block of firm or extra-firm tofu and add it with the squash for extra protein. Press it first so it holds its shape in the soup.
  • Spicy miso version. Stir a teaspoon of sriracha or a pinch of red pepper flakes into the broth along with the miso for a warming kick.
  • Add edamame. Swap the peas for shelled edamame (thawed from frozen) for higher protein and a slightly nuttier flavor.
  • Rice noodle version (gluten-free). Use thin rice noodles in place of soba. Soak them separately according to package directions, then add to bowls when serving to keep them from absorbing all the broth.
  • Richer broth. Stir in a tablespoon of tahini or a drizzle of toasted sesame oil just before serving for a creamier, nuttier finish.

Tips for the Best Miso Butternut Squash Soup

  • Never boil miso. Always dissolve it in warm (not boiling) water and stir it in at the very end with the heat off or very low. Boiling destroys the beneficial probiotics and dulls the flavor.
  • Cook the squash just until tender. You want it to hold its shape in the soup, not turn to mush. Whether you're microwaving or roasting, test it with a knife - it should pierce easily but still feel firm.
  • Cook noodles separately if making ahead. Soba absorbs broth quickly as it sits. If you think you'll have leftovers, cook the noodles separately and add them to individual bowls at serving time.
  • Taste and adjust the miso at the end. Start with 2 tablespoons, then add more to taste. The amount you need depends on the brand and type of miso - some are much saltier than others.
  • Prep the squash ahead. The squash can be cooked, peeled, and cubed up to 2 days in advance and kept in the fridge. It makes this a genuinely quick weeknight soup.

How to Serve

Serve immediately in deep bowls with chopsticks for the noodles and a spoon for the broth. This soup is a complete meal on its own but pairs beautifully with a simple cucumber salad, edamame, or steamed dumplings. For a heartier spread, serve alongside brown rice or a wedge of crusty sourdough bread. Leftovers keep for up to 3 days in the fridge - store the noodles and broth separately if possible, and reheat gently over low heat without boiling. Miso Butternut Squash Soup with Soba Noodles

Ingredients

  • 1 small butternut squash about 1 pound
  • 4 cups water plus more as needed
  • 4 ounces soba (buckwheat) or udon noodles broken in half
  • 2 teaspoons fresh ginger grated, or more to taste
  • 2 vegan vegetable bouillon cubes low-sodium, no MSG
  • 4 ounces fresh baby spinach about 4 to 6 cups loosely packed
  • 1 cup frozen green peas thawed
  • 3 scallions thinly sliced
  • 3 tablespoons vegan miso paste white, yellow, or red — see notes
  • freshly ground black pepper to taste

Instructions

  • Pierce the butternut squash a few times with a knife. Microwave on high for 4 to 6 minutes, adding 1 minute at a time, until it can be pierced easily with a knife but still holds its shape. Alternatively, wrap the whole squash in foil and bake at 375°F for 30 to 40 minutes until just tender. Let cool until easy to handle, then halve, scoop out the seeds, peel, and cut the flesh into bite-sized chunks. Set aside. (This step can be done ahead of time.)
  • Bring the 4 cups of water to a rapid simmer in a large soup pot. Add the soba or udon noodles and cook according to package directions until al dente, about 4 to 5 minutes.
  • Add the grated ginger, bouillon cubes, thawed peas, and squash chunks to the pot. Stir to dissolve the bouillon and cook for 3 to 4 minutes over medium heat. Add up to 1 cup additional water if the soup seems too thick.
  • Stir in the spinach and cook just until wilted, about 1 to 2 minutes. Add the scallions and stir to combine.
  • In a small bowl, whisk the miso paste with ⅓ cup warm (not boiling) water until smooth. Stir into the soup. Taste and add more dissolved miso if desired — do not boil the soup after adding miso, as heat destroys the beneficial probiotics. Season with black pepper and serve immediately.

Notes

Choosing miso: Use white (shiro) or yellow miso for a milder, sweeter flavor; red miso for a more intense, earthy broth. Always check the label — some miso pastes contain dashi (fish stock) and are not vegan. Look for miso labeled vegan or check that the ingredients list only soybeans, salt, and grain (rice or barley).

Let's talk about onions for a minute. Usually, they're the unsung heroes hiding out in the background - chopped, sautéed, and forgotten about. But not today. Today, onions take center stage, get all gussied up in a glossy glaze, and come strutting out of the oven like they own the dinner table.

  • Onions: Large yellow onions work best here. You want them big and round, so they hold up in the oven and soak up all that glaze. My personal favorite are Vidalia Onions!
  • Vegan Butter: Adds richness and helps create that luscious glaze. I am a fan of the Earth's Best Buttery Sticks for this type of dish. If you're not vegan, regular butter works here too.
  • Brown Sugar: The star of the glaze - gives it that warm, molasses-y sweetness. Light or dark, either is fine.
  • Salt & Pepper: Simple seasoning, balances the sweetness beautifully.
  • Water: Just enough to help the glaze form while the onions roast.

Helpful Tips

Don't peel too much: Just remove the papery outer layers of the onions and trim the ends slightly - you want them to stay intact when baked.

Score the tops: A shallow cross-cut on top of each onion helps the glaze seep into the onions while they bake.

Roast covered, then uncovered: Start with foil covering the baking dish to steam and soften the onions, then uncover to let them caramelize.

Baste as you go: Spoon that buttery glaze over the onions occasionally as they bake, for maximum flavor and that pretty shine.

Ingredients

  • 1 cup vegetable broth homemade or store bought
  • ¼ cup maple syrup or agave nectar
  • 1 tablespoon vegan butter such as Earth Balance Buttery Sticks
  • ⅛ teaspoon dried rosemary
  • ⅛ teaspoon dried thyme
  • ⅛ teaspoon ground nutmeg
  • 6 large onions sweet variety, such as Vidalia
  • 1 cup breadcrumbs
  • fresh rosemary sprigs optional, for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • Combine all the ingredients except the onions and breadcrumbs in a small saucepan. Heat gently, stirring, until all are smoothly blended. Remove from the heat.
  • Peel the outer skin from the onions, and cut them in half crosswise. Cut a thin sliver from the bottom of each onion half, so that they'll stand steadily in a baking dish.
  • Arrange the 12 onions halves in a shallow baking dish and pour the mixture from the saucepan evenly over them.
  • Cover and bake for 45 minutes to 1 hour, or until the onions are tender when pierced with a fork. Once or twice during this time, spoon some of the liquid from the bottom of the baking dish over the onions.
  • Sprinkle the onions with breadcrumbs and bake, uncovered, for an additional 10 to 15 minutes, or until most of the liquid has been absorbed. Serve at once or keep warm until needed.

This Vegan Pumpkin Mac and Cheese is creamy, delicious, and super simple to throw together. It's the ultimate Fall comfort food!

This vegan mac and cheese is loaded with creamy, cheesy, pumpkin flavor. It's an epic adult version of your favorite childhood meal!

This has quickly become one of my all time favorite vegan comfort foods and a family favorite for the fall and winter seasons.

This pumpkin mac and cheese pasta is:

Helpful Tips

Blend Until Silky Smooth: Don't rush the blending step - give it a full minute or two so the sauce turns out creamy and lump-free. No one wants grainy mac & cheese (vegan or not).

Cook Pasta Just to Al Dente: Slightly undercook your pasta since it'll soften a bit more once you mix it with the warm vegan cheese sauce. Mushy mac is a tragedy we can all avoid.

Salt Matters: Taste the sauce before mixing it into the pasta and adjust the salt. Pumpkin can be a little sweet, so don't be shy about seasoning it properly.

Add Pasta Water If Needed: If your sauce feels too thick once mixed with the pasta, a splash or two of reserved pasta water to loosen things up without diluting the flavor.

Easy Variations

Add Some Green: Toss in a handful of baby spinach, kale, or even frozen peas at the end for a little color and extra nutrition. Your body will thank you.

Smoky Vibes: Stir in a teaspoon of smoked paprika or chipotle powder for a smoky twist. It turns the cozy factor up to 11.

Get Cheesy (Again): Want it extra cheesy? Mix in a little vegan cream cheese, a scoop of nutritional yeast, or your favorite melty dairy-free cheese.

Roasted Veg Boost: Roasted cauliflower, broccoli, or butternut squash make great mix-in. And they're a great way to sneak in some veggies for the family.

Crunchy Toppings: Pour the mac and cheese into a baking dish, top with breadcrumbs, and broil for a few minutes. Yum!

Spice It Up: A pinch of cayenne, a few dashes of hot sauce, or some red pepper flakes = yes, yes, and yes.

Pumpkin Swap: No pumpkin? No problem. Use canned butternut squash, sweet potato puree, or even carrot purée if you're feeling really wild.

Protein Power: Stir in some sautéed tempeh, lentils, or chickpeas to bulk things up and keep you fueled up longer.

FAQs

Can I leave out the nutritional yeast in the recipe? 

The nutritional yeast (I use this brand) gives a pleasant nutty flavor and texture that resembles traditional parmesan cheese. When paired up with the creamy cashews it really helps give that cheesy consistency we all love! So personally, I wouldn't leave it out.

Is there an alternative to soaking the cashews overnight? 

If you forget to soak your cashews or don't have the time, here's a trick. Boil water in a large pot. Then remove it from the heat and allow the cashews to sit in the hot water for 30-60 minutes. This will be enough to still give that ultra-creamy texture you want!

Can I make butternut squash mac and cheese instead?

Yes, totally! This recipe will work exactly the same with pureed butternut squash in place of the pureed pumpkin. Or try out this Butternut Squash Mac and Cheese.

Can I make this ahead of time?

Totally. You can make the sauce a day or two in advance and just cook the pasta fresh when you're ready to eat. It makes weeknights feel way less chaotic.

How do I store leftovers?

Pop any leftovers into an airtight container and store them in the fridge for up to 4 days. This dish thickens a lot as it sits. When reheating leftovers, stir in a little non-dairy milk or water to revive that creamy texture.

Can I freeze it?

I wouldn't. Pasta tends to get weird and mushy after freezing, and the creamy texture of the sauce doesn't always bounce back. If you must freeze it, freeze just the sauce and make fresh pasta when you're ready to eat.

  • ½ cup raw cashews soaked in cool water overnight or for 1 hour in boiling water
  • ¼ cup nutritional yeast
  • 1 teaspoon ground mustard

  • 1 ½ teaspoons sea salt

  • Bring a large saucepan of water to a boil and salt generously. Cook the pasta according to the box directions until al dente and drain in a colander.

Same. And if you've ever found yourself eating olives straight out of the jar with zero regrets, then you, my friend, are going to love this tapenade. This isn't your average tapenade either-it's got depth, attitude, and a whole lot of umami thanks to the magical addition of sun-dried tomatoes. It's the kind of spread that feels fancy but takes less time to make than a cup of coffee.

Key Ingredients & Substitutions

Lemon juice (optional) - Just a splash really brightens things up. Fresh is best.

Kalamata olives - These briny beauties bring deep, fruity richness and a signature bold flavor. Be sure to use pitted ones to save your food processor (and your sanity).

Sun-dried tomatoes - Oil-packed ones bring the best texture and flavor, but dry-packed will work if you rehydrate them in warm water first.

But one thing I hadn't done with yellow squash before is soup! So this recipe was a bit of an experiment, but I sure am glad I tried it. This yellow squash soup turned out so tasty and it couldn't be any simpler to make.

Key Ingredients & Substitutions

Flour: All-purpose flour is used for both the crust and thickening the filling. If you're looking for a gluten-free option, try using a 1:1 gluten-free flour blend.

Vegan Butter and Vegetable Shortening: These ingredients are the secret to a flaky, tender crust. Even though vegan butter and shortening are made with largely the same ingredients, the butter has more moisture, making them a bit different to work with. I'm a big fan of the Earth's Balance Buttery Sticks for a vegan butter. If you don't have shortening, you can use all vegan butter, but the combination of both gives the best texture. 

Ice Water: Helps bring the dough together without making it too sticky. Make sure it's really cold to keep the fat from melting before the crust bakes.

Onion and Garlic: These aromatics add depth and flavor to the veggie filling. You can substitute shallots for a slightly sweeter taste.

Frozen Mixed Veggies: A convenient and colorful mix of peas, carrots, green beans, and corn. The downside of frozen veggies tends to the texture, but it works just fine in a gravy-esque filling like this one. Feel free to use fresh veggies if you prefer or add your own favorites like mushrooms or zucchini.

Potato: Adds heartiness and texture to the filling. A medium white or Yukon gold potato works especially well, but you can use sweet potatoes for a bit of a spin on the traditional recipe.

Vegetable Broth: The base of the sauce, giving it a rich and savory flavor. Use a low-sodium broth to control the salt level, or make your own broth for even more flavor.

Dried Thyme: A classic herb for pot pies, adding a warm, earthy note. You can also use fresh thyme or experiment with other herbs like rosemary or sage.

Vegan "Chicken": I don't used processed ingredients like this too often, and it is totally optional. But in this case, some vegan "chicken" adds a great texture and makes the pot pie even more filling. You can find options in most grocery stores these days, or substitute with chickpeas or tofu for a protein boost.

Helpful Tips for Making Vegan Pot Pie Casserole

Keep the Dough Cold: Cold ingredients are key to a flaky crust. If your kitchen is very warm, chill the flour and the mixing bowl in the fridge before you start cooking.

Don't Overwork the Dough: Mix just until the dough comes together to keep it tender. Overmixing can make it tough and chewy.

Season to Taste (and taste often!): Don't be afraid to taste the filling before it goes into the pie. Adjust the salt, pepper, and herbs to your liking. 

Cover the Edges: If you notice the edges of the crust browning too quickly, cover them with foil to prevent burning.

Let It Rest: Allow the pie to cool for at least 20 minutes before slicing. This helps the filling set and makes it easier to cut clean slices.

Storing & Freezing

Store leftover pot pie in an airtight container in the refrigerator for 3-5 days. You can also freeze leftovers for up to two months. I recommend slicing into portions and freezing in individual containers for easy reheating. To reheat, simply defrost, transfer to an oven safe dish, and warm in the oven.

Variations

Mushroom Pot Pie

Add a mix of your favorite mushrooms to the filling for a rich, umami flavor that pairs perfectly with the creamy sauce. Sliced portobellos work well, or shiitakes for a fun twist.

Southwestern Pot Pie

Spice things up by adding a can of green chilies, a teaspoon of cumin, and a handful of chopped cilantro. Top with sliced avocado before serving.

Root Vegetable Pot Pie

Swap out the frozen veggies for a mix of roasted root vegetables like parsnips, turnips, and sweet potatoes for a wintery twist.

Herbed Crust

Add fresh herbs like parsley, thyme, or rosemary right into the crust dough for an extra layer of flavor.

Make Mini Pot Pies

Instead of one large pot pie, try making several personal sized ones instead. Just divide the filling amongst four mini pie dishes (like these), and top each with its own crust. Bake time will be less, more like 20-25 minutes, depending on the size of your baking dishes.

For the filling:

  • Preheat the oven to 400F.
  • In a large pot over medium heat, melt the vegan butter. Add the onion and garlic and cook, stirring frequently, until the onion turns translucent.

  • Sprinkle the flour overtop and stir, then cook for an additional 1-2 minutes. Slowly pour in the vegetable broth, whisking constantly to avoid lumps.
  • Add the frozen veggies, chopped potato, salt and thyme and mix to a simmer. Allow to cook, stirring frequently, about 10 minutes, or until the potato is starting to feel tender.

This Aloo Gobi tastes just as delicious as the restaurant version - and you won't believe how easy it is to make this popular Indian potato and cauliflower curry at home!

I've always been a big fan of Indian food, but my interest certainly increased when I married into my husband's Indian family. I really enjoy experimenting with all of the rich flavors of this vegan-friendly cuisine. 

And while I will never claim to be an expert on Indian cooking - I think I've come up with some real keepers. 😉 This Aloo Gobi is one of my faves for its simplicity. It's relatively quick, only takes 30 minutes to throw together, and my whole family loves it.

  • Slightly spicy and packed with flavor.
  • Easy to make with simple ingredients.
  • 100% vegan!

What is Aloo Gobi? 

Aloo Gobi is a classic Indian curry consisting of "aloo" - meaning potato in Hindi - and "gobi" - meaning cauliflower. It's a no-frills kind of meal that's a staple in North India, especially in Punjab. The dish is pretty much what you'd get if potatoes and cauliflower had a party and invited some spices like turmeric, cumin, and coriander to jazz things up.

Key Ingredients & Substitutions:

Potatoes

I use plain old Russet potatoes most often, but waxy potatoes like Yujon Gold also work really well. 

Cauliflower

You'll use a medium size head of cauliflower in this recipe, which you will cut into florets. But you can also use the pre-cut florets for convenience. 

Tomatoes

I prefer to use fresh tomatoes in aloo gobi, but you can also used canned diced tomatoes. The fire roasted varieties give a great flavor!

Helpful Tips:

Even Cooking. Cut your potatoes and cauliflower into uniform pieces to ensure they cook at the same pace.

Adjust the Spice Level. You can add more or less chili powder to this recipe, to suit your own spice preference. Or for another spicy option, add some slivered red chili peppers to the masala. 

Serving Suggestions. Serve the Aloo Gobi with warm vegan naan bread, fluffy basmati rice, or even couscous or quinoa for a twist. It also pairs well with a dollop of vegan raita or a drizzle of lemon juice for an extra zing. For an even heartier meal, serve it as a side along with this vegan chana masala.

Storing Leftovers. You can serve any leftover aloo gobi in the refrigerator in an airtight container for 4-5 days. You can also freeze for up to 2 months. Reheat on the stovetop over medium heat or in the microwave.

Variations

Add Some Protein

Chickpeas or tofu can bulk this aloo gobi up, for an even heartier meal.

Make it Creamier

A dollop of coconut milk added in the last few minutes of cooking can be a nice addition for a creamier finish.

Herb it Up!

Apart from cilantro, try fresh mint or dill for a different herby note.

For a Smoky Flavor

Roast the cauliflower in the oven until slightly charred before adding it to the dish.

Sweet Potato Aloo Gobi

Replace the white potatoes with sweet potatoes for a totally new dish with a sweeter flavor.

Roasted Aloo Gobi

As an alternative, you can prepare the masala on the stovetop and then add it to oven roasted potatoes and cauliflower!

  • 2 tablespoons vegetable oil

  • 1- inch piece of ginger grated

  • 1 teaspoon turmeric powder

Instructions

  • Prep the Vegetables: Prepare the potatoes and cauliflower as described. Set aside.
  • Sauté Cumin Seeds: In a large pan or wok, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until aromatic.
  • Cook Onions, Garlic, and Ginger: Add the chopped onion to the pan and sauté until it starts to turn golden. Then, add the minced garlic and grated ginger, cooking for another minute until fragrant.
  • Add Tomatoes and Spices: Mix in the diced tomatoes, turmeric powder, ground cumin, ground coriander, red chili powder, and salt. Cook until the tomatoes soften and the oil starts to separate from the spices.
  • Cook the Potatoes and Cauliflower: Add the potato chunks and cauliflower florets to the pan. Stir well to coat the vegetables with the spice mixture.
  • Add Water and Simmer: Pour in the water, and mix everything well. Cover the pan with a lid and let it simmer on medium-low heat for about 15-20 minutes, or until the potatoes and cauliflower are tender. Stir occasionally to prevent sticking and to ensure even cooking.
  • Garnish and Serve: Once the vegetables are cooked to your liking, turn off the heat. Garnish with fresh cilantro leaves.

Notes

This Aloo Gobi is best served with flatbreads like roti or naan, or with a side of basmati rice for a simple, satisfying vegan meal. Enjoy your cooking!

Picture this: a chilly evening, a cozy kitchen, and a craving for something that warms you from the inside out. Enter the magic of Masala Lentils. One spoonful, and I was totally hooked! And I bet you will be as well. 

Don't be intimidated by the array of spices - this is one of the simplest lentil recipes I've come across. In fact, it's a great way to introduce yourself to Indian cooking.

This amazing lentil recipe was contributed by Richa Hingle way back in 2015, and is a sample recipe from her cookbook, Vegan Richa's Indian Kitchen.   • ¾ cup brown lentils washed and drained
  • 2 cups water
  • 2 to 3 teaspoons safflower or other neutral oil
  • ½ cup finely chopped red or white onion

Instructions

  • Combine the lentils with 2 cups of water in a saucepan. Partially cover and cook over medium heat until the lentils are tender, 25 to 30 minutes.
  • While the lentils are cooking, make the tempering. Heat the oil in a skillet over medium heat. Add the onion and cook until golden brown, 5 to 6 minutes.
  • In a blender, combine the garlic, cumin, coriander, cardamom, cinnamon, fenugreek, paprika, nutmeg, black pepper, sriracha, and 2 tablespoons of water. Blend to combine well.
  • Add this paste to the onions in the skillet. Cook until fragrant, about 2 minutes. Stir in the tomatoes and salt, and cook until the tomatoes are tender, about 8 minutes. Mash the larger tomato pieces.
  • Add the tempering to the lentils. Bring to a boil over medium heat. Reduce heat and simmer for another 5 minutes.
  • Taste and adjust salt and spice. Garnish with cilantro and vegan butter, if using, and serve hot.

What is Dal Tadka? 

Dal Tadka, pronounced [dahl tad-ka], is a classic Indian comfort food dish. The name itself describes the dish very accurately. 'Dal' is the Hindi word for lentils, which are a staple ingredient in South Asian cooking. 'Tadka' means tempering - a cooking technique where spices are roasted in hot oil or ghee, releasing their essential oils and enhancing their flavor. 

The lentils are typically cooked until tender and then mixed with a base of onions, tomatoes, and ginger, along with turmeric and salt. The Tadka, prepared separately, can include a range of spices like cumin, mustard seeds, garlic, and chili, depending on regional and personal preferences. The sizzling Tadka is then drizzled over the creamy dal, creating a dish that's comforting, nutritious, and packed with flavor. 

Variations of the classic Dal Tadka can be found across the different regions of India, each with their own local touch!

Why You'll Love this Recipe

This recipe is my spin on the traditional dal tadka - simplified so it can easily be made by a home cook with easy-to-find ingredients and no special equipment. This dal tadka is:

  • Doesn't require a pressure cooker - or any other special equipment.
  • Easy enough to make for a weeknight meal.

Key Ingredients & Substitutions

Lentils. 

I used yellow lentils (toor dal) for this recipe, but it works well with many types of lentils. Other good choices are moong dal (split yellow moong lentils), masoor dal (red lentils), chana dal (split chickpeas), and urad dal (split black gram). Some folk even use a mix of two or three different types of lentils.

Oil or Ghee? 

I simply used olive oil for my tadka, because it's the simplest vegan substitution for the traditional ghee used in this dish. But there are several brands that make a vegan ghee, so feel free to give that a try if you prefer. This one from Livlo is the brand I see recommended most often!

The spices! 

This recipe uses a variety of traditional Indian spices, but the key here is a high quality garam masala. It's worth splurging on a high quality garam masala, like this one, for the best flavor.

Helpful Tips & Variations

Soak the lentils. If possible, rinse and soak your dry lentils for 30 minutes before cooking. It helps to  reduce cook time and enhance texture.

Make it creamier. Lightly mashing some of the lentils after cooking helps achieve a rich, velvety consistency. For even more creaminess, you can use an immersion or regular blender to puree a portion of the cooked dal. I do not recommend pureeing all of it - the texture will be too mushy.

Serving suggestions: Serve dal tadka over steamed basmati rice or Indian flatbread like naan or roti for a complete vegan meal. You may also wish to serve with a dollop of vegan raita (yogurt sauce). 

Storing leftovers. Store leftover dal tadka in a covered container in the fridge for 3-4 days. You can also freeze for up to two months. To serve again, let it defrost (if frozen) and reheat on the stovetop over medium heat.

Variations

Add more spice. This recipe is just mildly spicy to start with. For more heat, add additional chili powder or add a minced red chili pepper to the tadka mixture. 

Add more plant based protein. Stir in diced firm tofu or tempeh cubes for extra protein.

Mash the Dal:

  • Once the lentils are cooked, use a back of a spoon or a potato masher to mash them slightly for a creamier texture. If the mixture is too thick, add a little water to reach your desired consistency.

  • In a separate small pan, heat the olive oil. Add the chopped onion and cook for 4-5 minutes, until it turns golden.

As an Italian, I've eaten more than my share of lasagna in my life. In fact, traditional lasagna is my son's all time favorite food and the dish we make for most holidays in our home. It's comfort food at its finest! 

But it's also a heavy dish. And on these hot summer days, I need something a bit lighter. So I came up with this veggie-centric vegan friendly version of my fave pasta dish!

Ingredients & Supplies You'll Need

Here's what you'll need to make this delicious zucchini lasagna:

  • Zucchini - the star ingredient!
  • Firm Tofu - to make a vegan ricotta cheese substitute.
  • Nutritional yeast - to add that cheesy flavor.
  • Italian Seasoning
  • Salt
  • Lemon Juice
  • Olive oil
  • Onion
  • Bell pepper
  • Garlic
  • Mushrooms
  • Baby Spinach - Or you can use kale if you prefer.
  • Tomato Sauce
  • Fresh Basil - Optional, but recommended!

In addition to these ingredients, you will need a 9"x 13" baking dish and either a vegetable peeler or a mandoline slicer for slicing the zucchini.

How to Make Zucchini Lasagna

The first step is to slice your zucchinis lengthwise into thin strips. Lay them out on a paper towel and sprinkle them all over with salt. Allow them to sit for at least 15 minutes to draw out all of the excess moisture - this will keep your lasagna from becoming a soggy mess!

Next, you'll prepare a vegan tofu "ricotta" by blending the tofu, nutritional yeast, Italian seasoning, salt, and lemon juice in a food processor until smooth.

In a large skillet, sauté the bell peppers and onions until they are translucent. Add the garlic and mushrooms and cook until the mushrooms are browned and the excess liquid has evaporated. Finally, add the spinach and allow it to wilt.

Now, it's time to assemble your lasagna. Add a layer of tomato sauce to the bottom of a 9x13 baking dish, then a layer of zucchini slices. Follow that with another layer of sauce, followed by half of the cooked vegetables and half of the vegan ricotta. Then, add another layer of zucchini noodles, sauce, remaining vegetables, and remaining vegan ricotta. Finally, top with a final layer of zucchini slices and remaining sauce.

Cover the baking dish and bake in the oven at 400 degrees Fahrenheit for 45 minutes or until it is bubbly. Once done, remove the lasagna from the oven and add fresh minced basil. Allow it to sit for 10 minutes before serving.

Helpful Tips & Tricks

Here are some helpful tips and tricks for making a delicious vegan lasagna!

Slicing the Zucchini Strips

Use a vegetable peeler or a mandoline slicer to create very thin, uniform slices of zucchini. This will ensure that your lasagna layers cook evenly and don't become mushy. You are unlikely to get thin enough slices by simply using a kitchen knife.

Remove the Moisture from the Zucchini 

After slicing your zucchini, lay the pieces out on paper towels and sprinkle with salt. This will help draw out excess moisture, making for a firmer lasagna. Don't skip this step or you will get soggy lasagna!

Storing the Leftovers

If you have leftovers, store them in an airtight container in the fridge for up to 3-4 days. For best results, reheat in the oven or microwave before enjoying.

Variations & Substitutions

Homemade Marinara Sauce 

I used a simple plain tomato sauce for this recipe, to let the veggies shine. You can use any tomato or pasta sauce of your choice, or try your hand at making homemade tomato sauce. 

Vegan Ricotta

This recipe uses a simple homemade tofu ricotta. For an alternative, this cashew ricotta is also a great choice. If you're short on time, consider using store bought vegan ricotta. There are many delicious options available at most grocery stores. I'm a fan of the Kite Hill brand.

Add Vegan Mozzarella

I wanted to limit the processed ingredients in this healthy lasagna recipe, but you could also add some dairy free mozzarella shreds to the top if you're craving more cheesiness.

Spice it Up

For more flavor, consider adding fresh herbs such as basil or oregano to your marinara sauce. Or for a little spice, add some crushed red pepper flakes. Yum!

Add Some Protein

If you want a protein boost, add in some meatless soy crumbles or crumble up some Beyond Sausages - they are perfect for this! You could also add lentils, chickpeas, or beans for a fun variation.

Roasted Vegetables

Consider using roasted vegetables such as eggplant, bell peppers, or mushrooms to add different textures and flavors to the dish.

Fun Fact: Where did Lasagna Originate? 

The origins of lasagna are a highly debated topic. While most people assume the dish came from Italy, this popular recipe has made quite the journey around the world!

Some believe it began with laganon, a Greek word describing flat sheets of pasta that were cut into strips. Still others suggest that lasagna first appeared as far back as the 14th century in England and Italy, where cookbooks detailed various recipes for layers of cheese and pasta baked together. It wasn't until the 16th century when tomato-based versions of the dish were recorded that it bore closer resemblance to today's version.

Tacos are one of my all time favorite easy weeknight dinners. They're just so simple and quick to throw together with whatever veggies and beans I have in the pantry.

But for a really hearty vegan taco, you can't beat this walnut taco meat. Use the vegan taco meat for topping salads, filling tortillas, or even serving over top of a baked potato.

How to Make Vegan Walnut Taco Meat

  1. In a food processor, combine the nuts and mushrooms and pulse. 
  2. Then in a skillet, sauté the onion and garlic. 
  3. Toss in the nuts and mushrooms and cook for 4-5 minutes.

Food Processor 

Make sure to use a food processor for this recipe. If you don't have a food processor a high speed blender will work also. Just pulse the ingredients to combine. Don't mix too much or you will end up with a paste!

Heavy Skillet 

Reach for a nice, large skillet for cooking up the taco meat. This is going to let you spread out the walnut-mushroom mixture in a single layer, and ensure an even cook on all the ingredients.

Don't Overmix the Walnuts and Nuts

It is important that your nuts and the mushrooms are chopped up finely in a food processor, but not overprocessed into a paste. You want a rough, crumbly texture - like traditional taco meat.

Allow Mixture to Thicken

It is important to cook the mushrooms and nuts down with the spices as directed. Let it all break down and thicken together with the liquids. You don't want walnut soup - you want a cohesive mixture.

Mix up the Seasonings 

You can change up the spices in this recipe to suit your own taste. Or you can use your favorite store bought taco seasoning packet that you know and love.

Mushroom Varieties

I find that cremini mushrooms work best for this walnut-mushroom taco meat, but you can swap with your own favorite mushrooms as well. Shiitake mushrooms are also a good option!

Coconut Aminos 

Feel free to use coconut aminos instead of soy sauce in the recipe if you wish. It will give you a similar flavor, but is gluten free.

How to Make A Farro Bowl

Helpful Tips For Success

Sheet Pan 

I like to use a rimmed sheet pan when I roast vegetables in the oven. I find that it is going to offer the best space so you can cook in a single layer. Otherwise you will find you need a larger pan so things don't overlap. 

Flipping Halfway Through Roasting 

Make sure that you flip the vegetables half way through roasting. That way both sides of the vegetables will brown evenly.

Dressing 

I made this homemade dressing but you are more than welcome to swap it out with something else if you want. I find the dressing compliments the farro and vegetables nicely. 

Vegetables Used 

So this dish can be made with almost any vegetable. Broccoli, kale, spinach, zucchini and the list goes on. Feel free to pick and choose what vegetables you are wanting. 

Artificial Sweetener 

If you do not want to use maple syrup you can use an agave or artificial sweetener of choice or leave the syrup out altogether if you don't want added sugar into the bowl.

What does farro go with?

Farro is very versatile, and is generally used in making bowls or salads. I love making bowls as you can pile on all the veggies you want and enjoy the rich flavors. 

Is farro a carb or protein?

You will find that farro is a high protein grain. You will find it is a great way to get some added protein in to your daily diet. It does contain carbohydrates as well. 

Which is healthier quinoa or farro?

Farro has more carbs but also is more nutrient rich compared to quinoa. So it is up to you if you want to reduce your carb intake or not. But both of these items are healthy compared to, say, rice.

  • 1 cup farro cooked according to package directions
  • 1 can chickpeas rinsed and drained
  • 1 medium sweet potato peeled and cut into small pieces
  • 1 bell pepper diced

If there's one thing I always crave as soon as the weather starts cooling down, it's a big pot of chili. There's just something about a piping hot one-bowl dinner that makes me want to cozy up in front of the fireplace.

And this Sweet Potato Black Bean Chili is one of my all time favorites. It's so easy to throw together, packed with delicious flavors, and it's great for meal prep too!

Helpful Tips

Dice your sweet potatoes evenly. This ensures they cook at the same rate and don't turn to mush. Aim for bite-sized pieces - not too chunky, not too small.

Don't skip the sauté. Cooking the onions, garlic, celery, and spices at the start builds a flavorful base. Give the spices a minute or two to bloom in the oil before adding liquids - it makes a difference.

Add broth gradually. Depending on how thick or soupy you like your chili, you can start with less broth and add more as it simmers. It's easier to thin it out than to fix a watery chili.

Let it simmer. Even though the chili comes together quickly, giving it at least 20-30 minutes to simmer helps the flavors meld together and the sweet potatoes fully soften.

Taste and adjust. Chili is one of those recipes that begs for a final taste test. Add more salt, a splash of lime juice, or a dash of hot sauce to finish - whatever makes it pop for you.

This chili holds up like a champ, which makes it perfect for meal prep or cooking once and eating all week.

In the fridge: Store cooled chili in an airtight container for up to 5 days. The flavors actually get better over time, so leftovers are a win. Reheat on the stovetop over medium heat or in the microwave until warmed through.

In the freezer: Let the chili cool completely before transferring it to freezer-safe containers or resealable bags (lay them flat for easy stacking). It'll keep for up to 3 months. Thaw overnight in the fridge, then reheat as usual.

Pro tip: If you're freezing the chili in portions, label with the date and serving size so you're not guessing later. And leave a little space at the top of the containers - liquids expand as they freeze.

Serving Suggestions

This chili is hearty enough to stand on its own, but a few simple add-ons can take it from a basic bowl to something a little more fun (or dinner party-worthy, if that's your thing).

  • Add Toppings: Classic chili toppings work great here - think avocado slices, a dollop of vegan sour cream or plain dairy-free yogurt, dairy-free cheese shreds, chopped cilantro, green onions, jalapeño slices, or a squeeze of lime juice for brightness.
  • Cornbread on the side: You can't go wrong with a warm piece of vegan cornbread (or corn chips if you're keeping it casual). It's the perfect contrast to the smoky-sweet chili.
  • Over rice or quinoa: Stretch your servings by spooning the chili over cooked grains. It makes for a super satisfying, protein-packed meal.
  • Stuffed in a baked potato: For a comfort food twist, load it into a baked russet or sweet potato and pile on your favorite toppings.
  • Taco night twist: For a light summery alternative, also try our fresh tomato and corn soup. Use the chili as a filling for tacos or burritos - or try swapping in this vegan walnut taco meat for a heartier, protein-packed version. Especially good with shredded lettuce, diced tomatoes, and a little hot sauce.

Fun Variations to Try

Add greens: Stir in a few handfuls of chopped kale, spinach, or Swiss chard during the last 5 minutes of cooking. It's an easy way to add color and a boost of healthy greens.

Make it spicier: If you like heat, add a chopped chipotle pepper in adobo sauce, a pinch of cayenne, or extra jalapeño. You can also finish each bowl with your favorite hot sauce.

Use different beans: No black beans? No problem. Pinto beans, kidney beans, or even chickpeas all work well here - or mix a few together for a little variety.

Bulk it up with grains: Stir in cooked quinoa, brown rice, or bulgur for an even heartier chili. Lentils would also be a great addition. It's especially great if you're serving a crowd or stretching leftovers.

Tips & Tricks for Copycat Vegan Big Mac Sauce

Vinegar 

For this recipe, you can use apple cider vinegar or a white distilled vinegar. Apple cider vinegar will add more of a tang to the sauce. White vinegar will still add tang but not be as powerful. 

Make Ahead

Feel free to make this sauce a day in advance of when you want to use it. I find that allowing the sauce to sit for at least 30 minutes actually helps to infuse all the flavors together. 

Variations To Copycat Vegan Big Mac Sauce 

Pickle Relish 

Big Mac sauce tastes great with some pickle relish mixed in. I recommend using a dill relish, but you can also use a sweet relish. Just know that adding relish will change up the flavor of the sauce a bit. 

Mustard 

I used a plain yellow mustard for this recipe. But if you want a bit more of a tang, feel free to use a spicy brown mustard instead. It won't be as true to the original Big Mac sauce, but it will be tasty.

If you don't have nutritional yeast on hand, you can use debittered brewer's yeast instead. Just use the same amount of brewer's yeast for the recipe as you would nutritional yeast.

I hope you can sense my excitement through this post, because today we're making cake. And not just any cake - a cinnamon apple chickpea cake.

It's three amazing things in one: cinnamon, apples, and cake. Actually, four amazing things, because chickpeas are pretty incredible too.

A fun fact is that I always struggle with naming my recipes. I didn't know whether to call this a cake or a pie, and went with the former because it doesn't have a crust.

But I don't know, apples are typically used in pies and you don't hear "apple cake" all too often. And I don't think I've ever heard of a "chickpea cake". But let's go with it.

Anyway, regardless of the name, the result is absolutely phenomenal. Fudgy, moist, the sort of thing you can eat all by yourself as a meal. I won't tell. 😉

It has just the right level of sweetness and a wonderful soft texture thanks to the chickpeas and the peanut butter.

Plus, there's just something so cozy about baking with apples in Fall. Apples and pumpkin - the two things that make me less sad about short days, colder weather and the end of summer fruit that doesn't cost the equivalent of my weekly grocery budget per pound.

Oh, and this cake just happens to be completely vegan too!

Baking with Chickpeas

If you've never baked with beans of any kind before, fear not. I swear this vegan apple cake doesn't taste like hummus. And as much as we all love hummus, we don't want our sweet treats tasting like it either.

Chickpeas by themselves are pretty neutral in taste. The key is using the right ratio of other ingredients to sweeten them up and create a fudgy, cake-like texture.

Baking with beans (that sounds so catchy it should be a TV show) is cool for many reasons. They're great for adding softness to treats like chocolate cookies, brownies, or blondies.

Plus, they naturally make the treat higher in healthy protein - without your kids ever knowing. I'm a huge believer in creating recipes that are good for both the body and the soul, and this is certainly one of them.

How to Make a Chickpea Cake

As I mentioned, you definitely don't have to be a gifted baker to make this chickpea cake. I'm certainly not - savory recipes are much further into my comfort zone.

Here is a quick summary of the instructions. Scroll down for the detailed, printable recipe card.

Simply start by adding the all of the ingredients to a food processor. Don't worry too much about the order, but I'd recommend starting with the chickpeas and dry ingredients followed by the wet. Blend for 1-2 minutes, until a soft mixture forms (almost like a dense hummus lol).

Then, pour the batter into a lightly greased shallow cake pan. Add a chopped apple on top, and a handful of cashew nuts, if you want. Then, bake in a preheated oven at 400 degrees F for 45-50 minutes. The cake should be golden and crispy around the edges, with still a bit of softness in the center.

Allow the chickpea cake to cool for 15-20 minutes. Then, it's ready to serve with fresh fruit or berries and a drizzle of nut butter.

Keep it in the fridge (covered) for 3-4 days and enjoy the chickpea cake either as a dessert or snack.

Add More Protein to the Cake

To take the protein content of this cake even further (and also add extra flavor), I added a scoop of protein powder.

The one I used in this recipe is Vega Protein Powder in Caramel Toffee. It's my favorite from the ones I've tried, and doesn't have a weird aftertaste.

You can use your own favorite brand and flavor. I recommend using a protein powder that's either a neutral or vanilla flavored so that it doesn't interfere too much with the other ingredients.

Tips & Tricks

If you want to leave out the protein powder, use 2 extra tablespoons of coconut flour.

Add any nuts, seeds or berries of your choice into the batter - chocolate chips would work brilliantly too! I love sprinkling in some goji berries for an extra superfood boost.

For a chocolate chickpea cake, use either chocolate protein powder or 2 tablespoons of extra cacao powder.

If you're leaving out the protein powder or using a neutral-tasting one, use ½ a banana in place of the flax egg for extra sweetness.

Use any nut or seed butter of your choice (either crunchy or smooth).

  • ½ cup peanut butter or any other nut or seed butter of your choice
  • ¼ cup maple syrup
  • 1 cup almond milk
  • 1 large chopped apple for topping
  • ¼ cup chopped cashews for topping

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Add the cooked chickpeas, protein powder, coconut flour, cacao powder, cinnamon, baking powder, peanut butter, maple syrup and almond milk to a food processor. Blend until smooth.

This vegan baked mac and cheese is perfect for a comforting weeknight dinner! Made with a dairy-free 'cheese' sauce, topped with gluten-free breadcrumbs, flavorful and creamy, this meal requires just simple ingredients and a few easy steps.

Oh, mac and cheese. The stuff that my dreams are made of. I'm not joking - I often fall asleep by switching off my existential worries and thinking about creamy pasta deliciousness instead. 10/10 would recommend.

Seriously though, I can't believe it's taken me this long to share a baked mac and cheese recipe. I have variations of this dish on an almost weekly basis, so finally - here we are. In general, a pasta dinner as good as this is my go-to dish for any Friday night comfort dinner. But it's perfect for pretty much any day or any occasion, and if you give it a go you will see why I say that!

So if you're searching for last-minute dinner inspiration, this vegan baked mac and cheese is a perfect option. You need hardly any time, simple ingredients, and the result is phenomenal.

Vegan baked mac and cheese

So, a little bit about this recipe. If you're wondering what it tastes like, think chewy, tender noodles enveloped in a thick and rich sauce that melts in your mouth, plus just a light coat of optional vegan cheese (or gluten-free breadcrumbs )on top for a little bit of extra texture. The sauce has a savoury flavour that's also very cheesy. Trust me, it tastes even better than it sounds/looks.

The main ingredient for the dairy-free cheese sauce is cashews, which are a staple in vegan cooking in general. Cashews are neutral in flavour and can be blended to make amazing sauces, dressings and dips. This is a great example! Beyond that, you need just simple ingredients to make amazing flavor and a great texture, too.

Right before baking, I added breadcrumbs and grated vegan cheese. These are optional, but 100% recommended! The end result is amazingly comforting and with an amazing texture. Pasta dreams come true!

Ingredients you'll need

Ingredients for baked vegan mac and cheese
  • Olive oil to cook the vegetables.
  • Carrots, onion and garlic. These are cooked in olive oil and added to the sauce.
  • Cashews. Soak these for 3-4 hours, or simmer for 15 minutes to soften.
  • Plant based milk. Use any unsweetened plant based milk variety of your choice.
  • Mustard. Ensure vegan.
  • Paprika.
  • Nutritional yeast. This is an amazing ingredient for adding a cheesy flavor to the sauce!
  • Tomato paste.
  • Apple cider vinegar.
  • Cumin.
  • Breadcrumbs. You can either make your own breadcrumbs, or use store-brought.
  • Vegan cheese. This is optional, but very much recommended! Choose a variety that melts well.

How to make the best dairy-free baked mac and cheese

Preheat the oven to 180 degrees C/350 F.

Cook the pasta. Follow instructions on packaging, but make sure it is slightly al dente/prevent overcooking.

Cook the vegetables. Heat the olive oil in a frying pan over a medium-high heat, then add the carrots, onion and garlic and cook for 5 minutes, until softened.

Make the sauce. Add the vegetables to a blender or food processor, together with the cashews, plant based milk, mustard, paprika, salt, nutritional yeast, tomato paste, apple cider vinegar, and cumin. Blend until smooth.

Combine with the pasta. Drain the pasta (but don't rinse) and mix together in a large mixing bowl together with the sauce.

Let's talk about cheese for a second. It's one of those fears they'll miss intensely if they go vegan. Granted, I've never been a huge cheese fanatic so gave it up with little struggle. But the good news for everyone who is? There are countless ways to replace cheese in your diet.

Cashews is one option. They are amazing for using in sauces and here, they create the amazing creamy texture. If you can't eat cashews, however, you can replace them with a can of coconut milk - don't worry, it won't taste like coconut.

How do I store baked vegan mac and cheese?

You can store leftovers in an airtight container for up to 3-4 days in the fridge. To freeze, store either in freezer-friendly containers or in freezer bags for up to 2 months. Allow to thaw fully in the fridge, then reheat in the microwave or on the stove, adding a splash of plant based milk.

If you want to make this dish ahead of time, I would recommend making the sauce, cooking the macaroni and storing them in separate containers. When ready to make, simply mix together, transfer to a baking dish, add the toppings, and bake as instructed.

  • 3 cups pasta use any pasta of your choice
  • 2 tablespoon olive oil
  • 1 large carrot diced
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 ½ cups cashews soaked
  • 1 ½ cups plant based milk
  • ½ tablespoon mustard ensure vegan
  • 1 teaspoon paprika
  • ¼ cup nutritional yeast
  • 2 tablespoon tomato paste
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon cumin
  • ½ cup breadcrumbs
  • ½ cup vegan cheese grated
US Customary - Metric

Instructions

  • Preheat the oven to 180 degrees C/350 F.
  • Cook the pasta according to packaging instructions on packaging, but make sure it is slightly al dente/prevent overcooking.
  • Heat the olive oil in a frying pan over a medium-high heat, then add the carrots, onion and garlic and cook for 5 minutes, until softened.
  • Add the vegetables to a blender or food processor, together with the cashews, plant based milk, mustard, paprika, salt, nutritional yeast, tomato paste, apple cider vinegar, and cumin. Blend until smooth.
  • Drain the pasta (but don't rinse) and mix together with the sauce in a large mixing bowl.
  • Transfer the mac and cheese to a rectangular baking dish. Sprinkle with breadcrumbs and vegan cheese, then bake in the preheated oven for 25 minutes.

Making Vegan Minestrone Soup

  1. Start by heating up some oil in a pot. Add in your vegetables and sauté until softened. 
  2. Now add in the kidney beans, spices, and fire-roasted tomatoes. Break down the tomatoes with a wooden spoon. 
  3. Then add the potatoes, pasta, and stock. Cover and cook on low for 10 minutes. 
  4. Once the pasta is fully cooked, stir and serve up the minestrone soup.

Tips and Tricks

Heavy-Bottom Pot 

One thing I recommend is having a heavy-bottom pot. This will help your soup to cook evenly. 

A Dutch oven, or even a nice stockpot, would also be great for cooking soups and stews. You will find that lighter-bottomed pans can burn in spots or create uneven cooking. 

Vegetables 

It's very important to make sure your vegetables are evenly diced. That way they all cook evenly. Otherwise, some veggies will be underdone and some overcooked.

Beans 

Go ahead and swap out the kidney beans with pinto beans or white cannellini beans if you want. Or try a mix of two types of beans for more variety.

Seasonal Produce 

Take advantage of any seasonal produce you might have around the house. Just about any veggies will work here. Zucchini and summer squash are both great additions to this plant based soup.

Creamy Base 

Try stirring in some coconut milk. Cream is often added to soups to get a creamy texture, and coconut milk is a wonderful vegan-friendly alternative.

Instructions

    This vegan spinach artichoke dip is made with simple ingredients for an appetizer, snack or side dish that is incredibly cheesy and savoury. You only need 30 minutes to make this from scratch. It is also gluten-free, dairy-free and a great time-saving recipe.

    No, your eyes are not fooling you. This cheesy deliciousness is 100% vegan and dairy-free. Whenever I make spinach artichoke dip, I love spreading it on some bread, relaxing with a good book, and enjoying every bite. It really is that amazing, so I would recommend you grab the ingredients and make it ASAP.

    Whatever time of year it happens to be, this is an ideal snack or appetizer. You can serve it hot or cold, depending on whether you want cosiness or something a bit more fresh-tasting. Anyway, I won't ramble on for much longer because I'm just too excited to share this recipe!

    This is pretty much anything you'd want in a dairy-free dip. It's extremely cheesy, despite using just wholesome plant based ingredients. The optional sprinkle of melty vegan cheese on top really takes it to the next level.

    This is a great option for feeding vegans and non-vegans alike. It's incredibly savoury and flavourful, with the spinach adding a hint of earthiness without being at all overwhelming. Cashews make a great neutral base. The other 'secret' ingredient used here is silken tofu, which is great for making the texture even smoother.

    This will make your kitchen smell so good, you will want to dive into it immediately. And I recommend that you do, because this is one of those recipes that's phenomenal straight out of the oven. Serve it as a side dish/appetizer, or a snack to enjoy in front of the TV. Either way, it may just become your new family favourite!

    Ingredients you'll need

    Vegan spinach artichoke dip in a cast iron skillet
    • Olive oil. This is for cooking the onions and artichokes. You can also use coconut oil or any other oil with a neutral flavour.
    • Onion. This is cooked in the olive oil to make it even more fragrant, which will add an amazing wholesome undertone to the dip.
    • Tinned artichoke hearts. Either in water or brine, these are a great time-saving option. They are also easy to find online and in most major supermarkets.
    • Cashews. Make sure to either soak these for at least 2 hours before making the recipe, or simmer them in a saucepan for 10 minutes. Use raw, unflavoured cashews rather than the roasted variety.
    • Silken tofu. This is a secret ingredient that will make the texture even smoother and creamier. However, you can also use coconut milk or vegan cream cheese.
    • Mustard. This helps to add a distinctively cheesy flavour.
    • Miso paste. Once again, this is great for helping create a umami flavour. It's such a great versatile ingredient that I would totally recommend having in your cupboard!
    • Salt. When you transfer it to the cast iron skillet/baking dish, you can taste and add more if you wish, so I would recommend starting with a smaller amount.
    • Tamari. Much like the miso paste, this will give the artichoke dip a umami flavour.
    • Lemon juice. Essential for a hint of tanginess, which works together with the other ingredients without being overpowering!
    • Spinach. Another essential ingredient - I would say that this recipe is a fantastic way to eat more greens! You can chop the spinach leaves finely before adding them in so that you don't encounter huge chunks of spinach.
    • Vegan cheese. This is optional, but highly recommended! Choose a brand that melts well.

    Firstly, preheat the oven to 180 degrees C (350 F).

    Next, add the soaked cashews, sautéd onions and artichokes, tofu, mustard, miso paste, salt, tamari and lemon juice to a blender or food processor. Blend until as smooth as possible.

    Ingredients

    • 1 tablespoon olive oil
    • 1 large onion diced
    • 1 tin artichoke hearts (14oz/400g)
    • 1 ⅓ cups cashews soaked
    • 10 oz silken tofu (or 1 cup coconut milk)
    • ½ tablespoon mustard ensure vegan
    • ½ tablespoon miso paste
    • ½ teaspoon salt
    • 1 tablespoon tamari
    • 1 lemon juice of
    • 3 cups spinach loosely packed
    • ½ cup grated vegan cheese optional

    Instructions

    • Preheat the oven to 180 degrees C (350 F).
    • Heat the olive oil in a pan or skillet over a medium-high heat. Add the onion and artichokes, cooking for 5 minutes, until softened.
    • Add the soaked cashews, sautéd onions and artichokes, tofu, mustard, miso paste, salt, tamari and lemon juice to a blender or food processor. Blend until as smooth as possible.
    • Transfer the dip back into the pan or skillet over a medium heat and add the spinach. Stir continuously over a medium heat for a few minutes, until the spinach wilts. At this stage, taste and add more salt if needed.
    • If using a cast iron skillet, sprinkle the dip with grated vegan cheese and add straight to the oven. Or, you can transfer to a round baking dish, sprinkle with the cheese, and add to the oven after that. Bake for 20 minutes, until crispy and lightly browned on top.
    • Allow to cool for 5 minutes and enjoy!

    Soak the cashews for at least 2 hours in warm water, or simmer them in a saucepan for 10 minutes to soften.

    How to Make Vegan Nutella

    1. Start by preheating the oven to 350°F. 
    2. You want to spread out all your hazelnuts onto a pan and roast as directed on a baking sheet. 
    3. Toss roasted hazelnuts into a food processor and pulse until you have a thick nut butter. 
    4. Once the nut butter is ready, pour in the coconut oil and melted chocolate. Then add in the vegetable milk, vanilla, maple syrup, and sea salt. Process a bit longer until well mixed. 
    5. Transfer to an airtight container and store.

    Thickness

    When making homemade chocolate hazelnut spread, you will find that storing the Nutella in the refrigerator will leave it thicker. If you store it at room temperature, it will be a bit thinner in texture. 

    Remove Skins From Hazelnuts

    One easy way to remove the roasted hazelnuts' skins is to place them on a dishtowel. Then fold the towel over and rub vigorously to remove the shells. This will give your chocolate nut spread a creamier texture.

    Swapping Nuts

    Consider swapping out the hazelnuts for another nut like cashews or almonds. Granted, it will no longer be a hazelnut spread. But you can essentially roast, blend, and mix any kind of nut just like hazelnuts to make a chocolate nut spread. 

    High Powered Blender 

    It would be best to use either a high-speed blender or food processor to get the right consistency for your nut spread. Otherwise, you will find your nuts don't break down enough to make it as creamy as you would hope. 

    Frosting 

    When making a homemade frosting, consider adding some of the spread to give it a Nutella flavoring! This chocolate nut spread is so easy to incorporate into baking and other sweet desserts.

    Can I Use Artificial Sweeteners In Vegan Nutella? 

    You will find that using artificial sweeteners will stiffen up the spread. That is why I recommend using maple syrup or date puree to add enough sweetness to the spread. 

    How Can I Use Nutella Spread? 

    This chocolate Nutella spread can be used to spread on waffles, toast, stir in batters for cookies, cakes, and more. For a delicious waffle pairing, try these vegan pumpkin waffles, or spread it over vegan lemon ginger scones for a delicious twist. Or you can eat a little off a spoon.     Can You Double This Nutella Spread Recipe?

    This one skillet meal is ready in less than 20 minutes and requires minimal clean up! Just throw everything in the skillet to cook and serve it along with some warm bread.

    If you're craving an Italian-style recipe without leaving the house, this is the perfect recipe for you! Feel free to add extra spices, such as fresh parsley, basil, rosemary, oregano, and thyme. You may even add a couple bay leaves to the mix once you've added in the liquid.

    How to Make White Beans and Kale

    1. Heat up the olive (or avocado) oil in a large skillet on the stove. 
    2. Add onions to the skilled and cook until they are softened.
    3. Add the garlic and sun-dried tomatoes to the skillet and cook. 
    4. Deglaze the skillet with either white wine or vegetable broth.
    5. Throw the beans, fire-roasted tomatoes, artichoke hearts, and Italian spices to the skillet. 
    6. Stir to combine and cover the pan to cook.
    7. While the beans are cooking, turn on the oven and warm the bread. 
    8. Uncover the skillet and add the kale. Stir until it wilts.
    9. Season the beans with salt and pepper. 
    10. Serve the white beans and kale with the warm bread and vegan butter.

    Avocado Oil & Olive Oil

    Both avocado oil and olive oil are pretty similar in their nutritional content, except that olive oil has less fat than avocado oil. But they are both rich with antioxidants and unsaturated fats.

    They also have a slightly different flavor. Avocado oil, for instance tastes a lot like avocados and has a slightly grassy (though mild) flavor. Olive oil, and the other hand can be herby, nutty, or have a vegetable flavor depending on the brand you buy. 

    When heating up the oil, it's important to keep in mind that avocado oil has a higher smoke point than olive oil does. So, if you're using olive oil, keep the temperature of the stove lower.

    White Wine

    If you use white wine instead of vegetable broth, or a mix of both, you'll get a nice extra hint of flavor. Try different types of white wine to get a flavor you'll love! A dry chardonnay would go perfectly with this dish.

    Make it a Southwest Skillet

    If you'd rather take a trip southwest than to Italy, switch up the vegetables and spices you add to these white beans and kale. 

    Instead of using a yellow onion, switch it out for a purple onion for a sharper flavor. Then, trade the artichoke hearts for corn and red bell peppers. And finally, instead of Italian seasoning, add some fresh-squeezed lime, chili powder, and fresh cilantro.

    What are Italian white beans called?

    Italian white beans are called cannellini beans. They are heartier than navy or great northern beans and have a nutty, earthy flavor. 

    Cannellini beans are tender but retain their shape and texture well. These beans are great for chili, soups, and stews.

    If you don't have cannellini beans, you have a couple options that are similar. You can use butter beans, great northern, or navy beans.

    The roasted beets are the star of the show in the mixed green salad. But if roasting beets from scratch is too time consuming, there are a few simple shortcuts.

    You can opt for pickled beets instead of freshly roasted ones. Use a 12-ounce jar of pickled beets. Drain off about ½ cup of the liquid to combine with the olive oil for the dressing.

    Alternatively, you can use pre-packed steamed beets if those are available in your grocery store. You can usually find them refrigerated in the produce section.

    Ingredients

    • 4 medium beets or see shortcut
    • 2 tablespoon apple cider vinegar
    • 2 tablespoon lemon juice
    • 2 tablespoon maple syrup or agave nectar
    • 4 oz mixed baby greens or ½ head red-leaf lettuce, torn into bite sized pieces
    • 2 carrots peeled and sliced, or shaved with a vegetable peeler
    • ½ cup walnuts chopped
    • several sprigs fresh dill leaves finely chopped
    • 3 tablespoon olive oil
    • salt and black pepper to taste

    Instructions

    Cook the Beets

    • To roast the beets, preheat oven to 400 degrees F. Cut the top green tops off of the beets, if still attached. Scrub the beets clean. Wrap each beetroot in a piece of aluminum foil.
    • Arrange the beets on a baking sheet. Roast for 45-60 minutes, until fork tender. The cook time will vary a bit based on the size of the beets.
    • Remove from oven, and allow the beets to cool. Use a paper towel or clean dishcloth to rub the skins off of the beets. If the beets are fully cooked, the skin should peel away easily. Chop the beets into bite sized pieces for your salad.
    • Alternatively, you can use pickled beets. See the notes section for this trick.
    • Combine the vinegar, lemon juice, and maple syrup in a medium bowl. Whisk together. Add salt and pepper, to taste.
    • Add the beets to the bowl with the dressing, and stir to coat them well. Let stand for at least 30 minutes, stirring occasionally.

    Prepare the Salad

    • Assemble the salads by tossing together the mixed greens, marinated beets, and walnuts.
    • Drizzle with remaining marinade for additional dressing, if desired.

    Notes

    Shortcut: Use a 12-ounce jar pickled beets - make sure it's not too high in added sugars, and NOT high-fructose corn syrup! Drain off a scant ½ cup of the liquid to combine with the olive oil to use as the dressing.

    This simple soy and maple glazed butternut squash is positively addictive! It's one of my all time favorite vegan side dishes for fall and winter. And it's even filling enough to eat as a main dish too.

    Tips & Tricks

    I like to cut and clean my squash prior to baking. But if you find it too difficult to cut the squash open while it's raw, you can do the initial baking with a whole squash.

    Just wrap the squash tightly in foil and bake until it's just slightly tender. Then let it cool, and proceed to cut and clean the squash before returning it to the oven.

    While I used a butternut squash for this recipe, it works equally well with any type of winter squash. Acorn and delicata squash are great choices! You will simply adjust the cooking times based on the size of the squash.

    • 2.5 lbs butternut squash or other winter squash such as carnival, golden acorn, or delicata.
    • 3 tablespoon maple syrup or agave nectar
    • 1 tablespoon soy sauce or to taste
    • 2 teaspoon dark sesame oil
    • 2 tablespoon olive oil
    • 1 ½ teaspoon salt
    • ¼ cup fresh herbs such as parsley, cilantro, and or basil (optional)
    US Customary - Metric

    Instructions

    • Preheat it to 375°F. Cut the squashes in half lengthwise. Scoop out the seeds and pulp and discard.
    • Place the cut squash halves cut side up in a baking dish with about ½ inch of water, and cover each half tightly with foil. Bake until easily pierced with a knife but still firm, about 30 to 40 minutes, depending on the type and size of squash used.
      Tip: If you don't have a knife sharp enough to cut the squashes in half, simply wrap in foil, place them in a casserole dish, and bake until they can be just pierced through, but are still firm. You can then cut them and remove the seeds.
    • Allow the squash to cool until it is safe to handle. Peel the squashes (the skins should remove easily after baking) and cut into 1-inch chunks. Once you're ready to roast the squash, heat the oven to 425°F.
    • Combine the squash chunks in a mixing bowl with all the remaining ingredients, except the fresh herbs, and stir together well. Transfer to a parchment-lined roasting pan.

    Hummus has always been one of my all-time favorite snacks. It's creamy and flavorful and perfect for dipping my favorite chips or veggies. What's not to love?

    The only that could make classic hummus even better - roasted red peppers!

    So I've added them as a flavorful twist in this simple hummus recipe. It's so simple to make that you could have it ready in just 10 minutes.

    Tips & Tricks

    Tahini is the key ingredient in all traditional hummus recipes. You can find it at most grocery stores these days, or you can order it here.

    Using dried chickpeas. It's easiest to use canned chickpeas for hummus, but you can also choose dried. To make hummus with dried chickpeas, soak them for 8 hours or overnight, and then proceed with the recipe.

    Roasted red peppers. You want the jarred roasted red peppers that are packed in water. Alternatively, you can sometimes find freshly roasted red peppers in the deli section of your supermarket.

    Food Processor. Hummus is easiest to make in a food processor. But if all you have is a blender, that will work too. You may need to add additional oil or pause to scrape the sides periodically, in order to get the mixture to puree.

    Variations

    You can use this roasted red pepper hummus recipe as a base for all kinds of delicious hummus creations! Try replacing the roasted red peppers with other flavorful ingredients like kalamata olives, artichoke hearts, or roasted garlic cloves.

    How to Use Hummus

    • 19 oz chickpeas canned, drained and rinsed
    • 2 tablespoon lemon juice fresh
    • 2 tablespoon tahini
    • 1 clove garlic minced

    Sweet potato and chickpeas blend into a smoky, hearty patty that bakes up firm and satisfying - no frying required. These Chickpea and Sweet Potato Burgers are easy to make ahead and reheat beautifully.

    Key Ingredients & Substitutions

    • Sweet potato. Roasted sweet potato gives the patties their natural sweetness, moisture, and binding power. One medium sweet potato yields about 1 cup of flesh once cooked and peeled. You can also use leftover baked sweet potato to save time. Butternut squash works as a substitute with a slightly more neutral flavor.
    • Chickpeas. A 540 ml (about 19 oz) can of chickpeas provides the bulk and protein that makes these patties substantial. Make sure they're well-drained and rinsed before going into the food processor - excess moisture leads to soggy patties. Love chickpeas? Try these Vegan Chickpea Patties too.
    • Barbecue sauce. This is where most of the flavor comes from. Use your favorite vegan BBQ sauce - smoky, sweet, or spicy all work well. Homemade or store-bought, just make sure it's vegan (most are, but worth checking the label).
    • Chili seasoning. Adds warmth and depth to complement the BBQ sauce. Use a mild blend for a family-friendly burger, or go with a spicier mix if you like heat. You can also swap in a combination of cumin, smoked paprika, and garlic powder.
    • Breadcrumbs. The binder that helps the patties hold their shape. Regular or panko both work. For gluten-free, use certified gluten-free breadcrumbs or finely crushed gluten-free crackers.

    Helpful Tips

    Don't over-process the mixture. The food processor is key for getting a uniform, pliable mixture - but stop before it becomes completely smooth. A little texture from the chickpeas helps the patties hold together and gives them a more satisfying bite.

    Chill before baking. After forming your patties, freeze them for at least 15 minutes before they go in the oven. This firms them up so they don't fall apart when you transfer them to the baking sheet, and helps them hold their round shape during baking.

    Watch your sweet potato moisture. Once you've cooked and peeled the sweet potato, let it cool fully before using. If it seems particularly moist, blot it gently with a paper towel. Too much moisture is the main reason patties come out soft instead of firm.

    Use wet hands to shape the patties. The mixture can be a little sticky. Lightly wetting your hands before forming each patty makes it much easier and gives you cleaner edges.

    Make them ahead. These patties are great for meal prep - form them, wrap individually, and refrigerate for up to 2 days before baking. Or bake a full batch and refrigerate the cooked patties for quick weeknight dinners.

    Variations

    • Spicy version. Add ½ teaspoon of cayenne pepper or a tablespoon of sriracha to the food processor for a burger with real heat.
    • Smoky BBQ. Use smoked BBQ sauce and add a teaspoon of smoked paprika for an extra layer of smoky flavor throughout.
    • Black bean swap. Replace the chickpeas with a well-drained can of black beans for a slightly different texture and earthier flavor profile - similar to these Vegan Chipotle Black Bean Burgers.
    • Add roasted corn. Fold in ¼ cup of roasted corn kernels after processing for a sweet, smoky burst in every bite.
    • Gluten-free. Swap the breadcrumbs for certified gluten-free breadcrumbs and serve on a gluten-free bun or in a lettuce wrap.
    • Herb boost. Stir in 2 tablespoons of finely chopped fresh cilantro or parsley after processing for brightness.

    Serving Ideas

    Stack these on toasted hamburger buns with the classic lineup - vegan mayo, lettuce, sliced tomato, and pickles. The smoky-sweet flavor of the patty pairs especially well with a tangy sauce, so don't skip it. A creamy Easy Vegan Coleslaw on the side adds the perfect crunch.

    They're also wonderful served without bread - break a patty over a grain bowl or hearty green salad with a drizzle of BBQ sauce or tahini dressing. If you're feeding a crowd, put out a spread of toppings and let everyone customize their own burger.

    Storing & Freezing

    Cooked patties keep well in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for about 10 minutes, or in a skillet over medium heat for a few minutes per side. Avoid the microwave - it softens the texture.

    These patties freeze well. Let them cool completely after baking, then freeze in a single layer before transferring to a freezer bag with parchment between each patty. They'll keep for up to 2 months. Reheat from frozen in a 350°F oven for about 15-18 minutes until heated through.

    • 1 cup sweet potato meat about a medium sweet potato, cooked and peeled
    • 1 can 540 ml chickpeas, drained and well rinsed
    • ¼ cup barbecue sauce homemade or commercial

    • Preheat the oven to 400°F. Pierce the sweet potato a few times with a fork and bake for 45–50 minutes until completely tender. (Alternatively, microwave on high for 8–10 minutes.) Once cool enough to handle, peel and measure out 1 cup of flesh.
    • Reduce the oven temperature to 350°F and line a baking sheet with parchment paper.
    • Add the sweet potato flesh, chickpeas, barbecue sauce, salt, chili seasoning, and breadcrumbs to a food processor. Pulse until the mixture is uniform and holds together — stop before it becomes completely smooth. Scrape down the sides as needed.
    • With lightly wet hands, divide the mixture into 5 equal portions and shape into round patties about ½ inch thick. Place on the prepared baking sheet and freeze for 15 minutes to firm up.
    • Bake for 30 minutes, flipping carefully at the 15-minute mark, until the patties are firm and lightly golden on both sides. Let cool for 5 minutes before serving.
    • Toast the hamburger buns. Spread vegan mayo on the inside of each bun, then stack with a patty, lettuce, tomato, and pickles. Serve immediately.

    Ingredients

    • 2 tablespoons olive oil
    • 1 cup chopped onions
    • 3 large carrots sliced
    • 3 large sweet potatoes cooked, baked, or microwaved in their skins, then peeled and sliced
    • 1 large apple or pear cored and sliced
    • ½ cup chopped prunes
    • ¼ cup chopped dried apricots
    • ½ cup orange juice preferably freshly squeezed
    • 1 ½ teaspoons cinnamon
    • ½ teaspoon each: ground ginger and salt
    • ⅓ to ½ cup chopped walnuts optional

    Instructions

    • Preheat the oven to 350 degrees F.
    • Heat the oil in a large skillet. Sauté the onions over medium heat until translucent. Add the carrots and continue to sauté until onions and carrots are golden.
    • In a mixing bowl, combine the onion-carrot mixture with all the remaining ingredients except walnuts. Mix thoroughly; don't worry if the potato slices break apart.
    • Transfer the mixture to a large, oiled, shallow baking dish (a round or oval shape is attractive). Sprinkle the optional walnuts over the top.
    • Bake for 45 to 50 minutes, or until the top begins to turn slightly crusty. Serve hot or warm from the baking dish.

    Low caloric, but very energetic, the chickpea deserves a good place on your menus. Chickpeas are the perfect protein element for vegetarian meals. Just make sure to remember to soak your chickpeas the day before!

    How to Make Sweet Potatoes Stuffed with Spicy Chickpeas and Tahini

    1. Preheat the oven.
    2. Clean the sweet potatoes, and prick them with a fork.
    3. Bake for 30-40 min.
    4. In a bowl, mix together chickpeas, tomatoes, green onions, and spices.
    5. Prepare the sauce.
    6. Let sweet potatoes cool, then cut them in half and mash the flesh a little bit.
    7. Stuff the sweet potatoes with chickpea mixture and drizzle with tahini sauce.

    Tips & Tricks for Sweet Potatoes Stuffed with Spicy Chickpeas and Tahini

    Soaking Chickpeas

    If you want to use dried chickpeas for this recipe, you will need to soak and cook your chickpeas ahead of time. The day before you want to make these stuffed sweet potatoes, place your dried chickpeas in a bowl and cover them with water. Let them soak for at least 12 hours or overnight.

    Once your chickpeas have soaked for long enough, you will need to cook them on the stove in water for 30-90 minutes. Don't use the same water the chickpeas have been soaking in. Drain the soaked chickpeas first and wash them off, then add them to a pot on the stove full of fresh water.

    Or, if you want to save some time, you can simply use a can of pre-cooked chickpeas for this recipe!
